開放式廚房, 在裡頭工作的廚師有用心打扮整齊.

前菜Tuna Tartare, 雜錦魚生、手握壽司及招牌菜炙燒安格斯牛肉配柚子醋汁. 我最喜歡的, 當然是牛肉! 夾住酸蘿蔔, 味道清新.

熱盤蟹腳、鱈魚柳及炭燒牛柳.
蟹腳用牛油汁煮不特別, 卻加上醃過的薑絲突出鮮味, 有心思. 鱈魚柳用芭葉包住焗, 肉汁全留下來, 很juicy. 牛柳沒有拍, 味道令我失望, 雖然是用貴價的澳洲和牛, 卻欠神戶牛脂肪獨有那種騷及靱.

雖然人家請我吃飯, 我是不應該說三彈四的當自己在寫食評. 可是Zuma 作為一家話題餐廳, 我相信我有責任說實話, 不要白讓其他人繼續對它充滿遐想.

Zuma 食物味道總的來說是粗中沒有細, 論味道層次及菜式處理精細程度, 與我在日本吃過的幾頓懷石料理相比, 是3和8的分別(10是滿分). 英國人要做日菜, 相信要由武士道開始學. 不過Zuma 願意買懷石料理店愛用的信樂燒陶器作餐具, 總好過洲際Spoon 選用不倫不類的「信樂Print」瓷碟.

而且, 在午飯時間, 客人看來全是中環區尖子或才俊, 去看「才子」也可算是去吃飯的credit 之一.

唯一精緻的是甜品. 分量也夠嚇人! 這隻「航空母艦」, 是Cherry 刻意訂製的! 伴碟的水果, 如紫色火龍果, 是來自以色列的特產.

我幸運地選中招牌甜品「茉莉糖漿烚白桃配野草莓」, 是用3公斤泰國茉莉花加糖水煮成濃郁的糖漿,淋在煨煮過的法國白肉桃子上,綴以法國野草莓Fraise De Bois(迷你士多啤梨)及一小片焦糖餅乾. 想不到茉莉花粒和白桃的味道很配!

除非再有人請我吃飯, 否則都不會來了!

Well the main are ok.. the sashimi/sushi actually taste better than the Zuma in London (i was so disappointed last time in London that the salmon wasnt fresh at all). The black cod was nice..But i must say that the Desserts are excellent! I love the green tea icecream, almon tofu icecream, the banana cake and the choc pud... I love every bit of it...The atmosphere was great.. it wasnt too noisy and wasnt too quiet either. Its a nice place to hang out with friends.Next time, I will come back for

We went there last week and had experienced exceptionally bad experience. First, a lady came back and pushed real hard for sake which we didn't want. Second, we ordered the HKD790 tasting menu (which was HKD690 a month ago) but they brought the HKD1280 menu without notifying us. We ended the night with HKD1900 per person and for the same price I would pick Four x. The management of this restaurant and service had out priced what they are offering. I will certainly not recommend this restaurant a

今日一早起身上網想找餐廳慶祝結婚5年,上到來見到又冇idea,決定看一看啲comment先,見到中環zuma的comment,原來大家都是過來人,但小弟從來都對事不對人。八月有一日八號風球有半日off,小弟和老婆到zuma食dinner,自己都怕餐廳closed,決定上網找電話check下有無開,有開就made個reservation先,問題就開始,先講帶位在電話上经己無禮,問下啲information都不想回覆,一心都唔想去,但老婆又話好想try,又好決定試下大約7時半去到門口,見到個帶位真是無名火起,明明打個電話made個reservation又話無我資料,好似我'屈'佢比張table我,好彩有table都無今憤怒,不過個人覺得zume要好好教下啲 帶位啲 禮貌和skill先,到我坐下時又有一個server 好有禮貌地問我"先生要唔要幫你keep 起啲袋和jacket先",個心先安樂啲,這才是叫service. 言談之間先知道個名但記得唔清楚叫boris定bornis,同他大吐苦水,不過佢都好耐心聽我啲complaint 我叫他介紹啲好嘢比我食,他第一時間介紹我食個tasting

今天和三位朋友一行四人到這過江龍試一試,四人都點了$780的tasting menu,看看厨房的quali。 先來的頭盆基本不錯,tuna tartar 很好味,生牛肉都幾好,只是另外一種魚生(伴魚子吃的)沒甚味道,但有魚子搭夠,都ok。跟著上的Sashimi和Sushi都好好味,魚肉新鮮味道好。但跟住落嚟開始出事... 煎銀鳕魚味道一般,好彩有個汁頂住,都算可以啦。食完上麵豉湯,得個鹹字,不飲也罷。然後的spicy beef就真係spicy,spicy得一點牛肉味都吃不出,唔知係牛肉質量差定其他原因,但調味成咁,我只知正在吃肉,你給我甚麼肉我都不會知道,最差是spicy其實可以有其他好味的辣和香,但Zuma給的辣就一些層次都沒有,只有為辣而辣,個人覺得既然叫做高級食府但這樣調味,可算是低手。不過,最有趣的是最後的甜品。 餐牌上列明甜品有五味,心諗樣樣有些,樣樣試試啦。點知waitress拿了一盆嘢出嚟,上面有兩個唔同味道的雪糕球,一件banana cake,一杯水果做的嘢同兩件心太軟chocolate cake。她說是四個人份量,叫我地自己share,但我們一人只有一支羹和

我的建議是如果要去,記住只食生嘢。食tasting menu的不要人多,只限二人。其實Zuma可考慮改tasting menu做lovers' menu,點品就改做Chef's daily recommendation咪得

I am quite surprised to read all the negative comments about this restaurant. I went there with my friend last night, despite the negative feedbacks and we had an enjoyable evening there. Ambience, service and quality of food, everything was perfect. The sashimi was so fresh, I still remember how delicious the toro and hamachi tasted like. The rib eye was cut into little pieces, good for sharing and convenient to eat with chopstick.....very juicy and tender, better than a lot of steak house. Zum

Ambience, service and quality of food, everything was perfect. The sashimi was so fresh, I still remember how delicious the toro and hamachi tasted like. Zuma's own sake was also worth trying, for those of you enjoyed a bit of alcohol with Jap food.

I really liked the food serving pace. We chatted and ate very slowly and the dishes were not served all at once, but one after another. We didn't feel like being rushed, we could take it easy.

The only thing I didn't like was, there were too many people in the open kitchen. I was sitting at the bar table, seeing them running around made me really tense. Especially after a long day's work, I was trying to relax, but it's kinda hard when u see the tense atmosphere. So I would suggest sitting at the table next time.

Two of us dined in Zuma tonight with a friend from Paris who has tried this restaurant once before. I must say everything was very very good with the exception of a couple of fatal mistakes regarding the service. The waitresses need a lot of further training indeed. As our guest was a westerner from Paris, one of the waitresses replied to my inquiries in Cantonese repeatedly when I spoke to her in English. The worst thing has yet to come . . . They put bottles of wine of different table

They put bottles of wine of different tables in the same ice bucket; and I have to stop one waitress from serving my vintage Mersault [Burgundy White] to the next table; and she didn't even bother to say sorry. My French guest complained to the lady manager [from Germany], and apart from a very superficial apology in words, she did nothing to remedy for what they had done fatally wrong. What a pity! I would definitely not go back for another six months!

燒的恰到好處外脆內軟帶汁....除去味的一環這是好的.

餐後要了咖啡...用的糖來自法蘭西..又係好型有包裝紙有隻鸚鵡.但我已不敢

留下一粒給自己了.點解請看下去.

全數一人,一支水50,咖啡50,餐290...加一後430.

但這次食歷我見到幾個不值430的點:

1.次序混亂---我比我左手邊的客人遲來,但我的生牛肉比她來早10分鐘.

我右手邊的鱈魚在再三叮嚀下,和我同時間出台.當然人家比我來早很多.

2.傳菜錯誤---想不到這樣的大餐廳,會出現菜餚降落錯誤的情況,要chef在內叫出來..話搞錯了.

3.生魚片的處理---午市1.45時開始把一些食材收回來,明白午時的關係生魚片要準備而先切.

但切多少心中也有數吧.都留下不少啊....魚生片貴在料理人肯捨得,但午市的生魚片他們留下來,

用一金融箱子把不同種類的魚生片放在一起,留下來的會是晚間用的還是明天午市用的呢

我也有錯---在未經許可下盜攝.'亞生,呢度唔比影相喎!' 廣東話喎.

ZUMA--分了三個分區做料理,chef們好似gordon在F kitchen 中的緊張.這是一場秀...但不是我杯茶

試過也就是了...

I totally agree with CCTam - the receptionist\'s attitude is awful. she reminds me of the bouncer in a club who tries to stop people from getting in and enjoys making your life like hell. She answered the phone in disgust as if I interrupted her peaceful morning ritual. I said I wish to make reservation on this firday she sighed and said please hold (in a yet-another-stupid-customer tone). She came back and told me that I could only get the table at 6pm on the coming friday nite. Then I asked a

Then I asked about saturday and she said on sat I can only get the table at 7pm but even if I do i HAVE TO (she emphasized it by saying it loud ans slow) return the table by 9pm. I mean who eats at 6pm on a friday nite at an upscale restaurant, and what kinda upscale restaurant will ask you to return the table by certain time - not to mention she did not say it nicely, she said it in a way like she doesnt care: either i \'obey\' or just don\'t eat at their restaurant. This is a sick phenomenom in HK where all the new restaurants have a waiting list of at least 1 week to 2 months (like Aqua when it first opens). If a restaurant insists of giving customer shit like this - give it a 3 months time people will forget about Zuma and move on to another new hot spot in town.

This restaurant which purports to offer fine dining works hard (or maybe not that hard) to turn would be customers away. The reception lady was probably trained in a state run enterprise in China in the 80s. I have never been informed that a restaurant is full in so frosty and rude a manner anywhere in the world in the last decade.
