Not the kind of intimidating expensive setting you'd expect. Felt comfortable sitting there because the lighting was dim and the atmosphere was terrific at night! last time i came was for lunch and it felt really different. Coz in the afternoon the sunlight slants in from the large glass windows - and it feels more like an exclusive clubhouse with all the greenery and wooden tables and chairs outside.

Service:
Not bad. The staff were friendly and spent considerable effort explaining to us how the chef's selection sashimi worked (hah). Also broke down our desserts for us in detail or else we would've been lost. Sadly I have already forgotten most of it
pity.
Oh yes, one waiter wanted to change our plates after the small dishes. There really was no need to do so. I told him I was fine and that I could continue using that almost-clean plate. He told me it was company policy to...yeah. Right. Why. When the customer says you don't need to change the dish...oh well. Company policy prevails since they're his employee..

This tofu's texture is quite special. It's not silky smooth like the 'Shan Shui' tofu or 'Bai Fu' tofu you get in supermarkets. It's firm, not very smooth, has a rather distinct tofu taste, natural and agreeable. The 5 'toppings' included spring onions, wasabi, sweet potato puree(?), white sesame and miso. Had fun mixing the flavours around. Spring onion and sesame are a lovely combination. Miso, standing alone, is yummy too. And there's plenty of tofu to go around. Generous portions.

I only had the california roll. I had 4 of them. So characteristic of me. Sigh. Those rolls were amazing. I loved my california roll. Avocado, mock crab meat (or real crab meat..?) perfectly seasoned sushi rice. The essentials. I would come back again for them rolls, yeah!

Didn't eat any of this at all. Don't like raw fish
But the others weren't quite pleased with the quality of the tuna. And one should never eat raw salmon. It's full of worms.

From left: vegan fried rice as good as always. Loved the chewiness of the grains, and the combination of picked vegetables selected. They make a delicious fried rice. No meat needed.
Baby chicken marinated in barley miso oven roasted on cedar wood; This was a bit salty, and there was way too much miso paste on the chicken (which is surprising - usually the contrary happens). The miso was tasty, but too much. Too much of a good thing cloys the appetite. Hence I scraped the excess miso off our friend chicken and mixed it in with my fried rice - delish
Chicken be tender, juicy, slightly charred on the sides which me loveee, and flavourful.
grilled teriyaki salmon with sliced pickled cucumber This is as good as i had it last time - very fresh salmon, cooked crisp on the outside but the middle was still pinkish - not fully cooked. Consistency in quality is a virtue. I even ate the skin. usually i don't eat fish skin but this one was grilled crisp and i couldn't help myself.
Picked cucumber is cold and sour; complements the fish well.

This had a nice smoky flavour. Skin was crisp, and like the salmon, i don't think the entire piece of meat was cooked through. It was again, pinkish on the inside which i am skeptical about. I prefer my pork to be completely cooked...So i just had a piece. This is not a must-try. I'd recommend the 3 hot dishes above instead

This one was hot. As in, chili-hot. I don't like hot food but the texture of the udon was special. It is bouncier and chewier than the normal udon you get (fried or in soup). For those of you who don't like soft, mushy udon, this one will impress.

By far the most outstanding Japanese/fusion dessert I've had. A must try. The sugar bomb shell which crackles inside your mouth encapsulates a refreshing mango sorbet(?). They put exploding candy into the shell i think. The pad on which the bomb floats consists of...i don't know, something like aloe/jelly/nata de coco in sake. The sake is not strong, but you can definitely taste alcohol. I say, the syrup would make a pretty nice drink on its own. i just know that it is very tasty. I'd recommend this to anyone who wants a light, refreshing and exciting dessert after a heavy meal. Or just anyone in general. This is one special dessert worth trying.

Another great dessert but not as outstanding as the former. There was only 1 halved grape. -_- the sorbet was nice too but I don't know why it rested on a bed of custard...not saying that it didn't taste good, just that when the sorbet melts and mixes with the custard the whole thing becomes too watery. Perhaps that's why both desserts rested on a box of ice. The biscuit disc had no surprise. Slightly coconutty.

Conclusion:
Will definitely visit again to try out the other grilled items. But i believe i will revisit the salmon, fried rice and sake poached peach.

My experience at Zuma has proven that high-quality Japanese dinners really needn't be too expensive.

Food is fine, buffet style, kind of fusion Japanese with standard dishes such as sushi, oysters, salad; hot dishes of clams in soup, noodle, etc. The main courses we ordered are so so. A lot of Westerners going there, with family and group of friends so it's rather crowded.

Service was really BAD

The reception spent over 15 minutes to check our booking, name and telephone number repeatedly for more than 5 times; and show us a awful face like we were cheating for a table, ridiculous. Only for my friends, I could have left already.

For buffet, I never expect any good service, however, it took us more than 15 minutes to order our first drink and another 20 minutes for a glass of water...not talking about re-fill (We ordered Free Flow of Champagne and Sake) If they are really busy, we don't blame, the waiters saw us and IGNORE, turned their faces around, that's the problem


My friend told me they serve fine dining at night, NO THANK YOU. I don't think they can fulfill my expectation of fine dining.

Be frank, if a not craving for Champagne and Sake together and can really drink, I won't suggest you to go there.

I’m not usually big on buffet, only cause I can never eat ‘that’ much. However, that day, I surprised myself with the amount of food that I consumed! I think my stomach was stretched and is still trying to return to normal.

Plate 1: sashimi, king fish, scallops, salmon and avocado roll, salmon and roe roll, soft shell crab roll, California roll and tamago – all were absolutely incredibly delicious.

Plate 2: octopus salad, fried chicken (crunchy and succulent, one of my favourites on the plate), oysters (fresh!), prawn cocktail (which was so so), salmon and roe salad (delicious!), tuna salad and chicken mayo salad (which was ordinary).

I didn’t take a photo of plate 3 but it did consist of fried chicken (and lots of it) and more sashimi – couldn’t get enough of it!

For main, I ordered the salmon fillet with ginger teriyaki sauce and pickled cucumber and Oh My Gawd it was absolutely scrumptious. The salmon was tender and moist and cooked to perfection – medium rare – just the way I like it. The teriyaki sauce was deliciously rich and satisfying

A ordered the sirloin steak, sautéed mushrooms, wafu sauce and oh my my…. The meat was slightly cooked on the outside and a perfect pink on the inside. It was tender, juicy and scrumptiously good!

Dessert platter – WOW!

Raspberry sponge cake – this was A’s favourite, I thought it was ok but not a fave. The ice cream flavours were black sesame, red bean and almond. The almond ice cream I did not like, but I did enjoy the black sesame and red bean.

The green dessert was of course mint chocolate mousse and it was deliciously chocolately with mint choc on top – it was delish. The other, green tea pudding with banana glace and it was outstanding! This was my favourite! I pretty much ate the whole thing on my own as A didn’t enjoy it, which meant more for me!

It was an epic lunch!!!!

我今日约左新同事去伊道食野,之前有個朋友話伊道D野食唔錯,所以就去試下。天婦羅好新鮮又美味、D蝦 size 岩岩好、又香好彈牙唔油好味。配菜都好甜好味。鹽燒三文魚頭 -炸得剛剛好脆ト卜、 個三文魚頭好新鮮又肥美、好有質感好正又鮮味。軟殼蟹手卷材料份量十足、好大隻軟殼蟹放係中間好鮮味!蒜香牛柳,非常勁既蒜頭味、肉質好鮮嫩唔會硬,有牛肉味又夠濃、肉質非常鬆軟好甘香又多汁。

Zuma had an impressive spread when we walked in at 1.30. Two long tables, one filled with sushi and sashimi selections, the other with assorted Japanese 'starters'. To begin with, the chilled spinach in sesame sauce was not bad. The sesame dressing seemed to be made from purely ground white sesame seeds, rather than mixed with other seasoning which is what you often find at Japanese restaurants. This results in a white sesame dressing which is quite strong, and a little goes a long way.Miso soup

To begin with, the chilled spinach in sesame sauce was not bad. The sesame dressing seemed to be made from purely ground white sesame seeds, rather than mixed with other seasoning which is what you often find at Japanese restaurants. This results in a white sesame dressing which is quite strong, and a little goes a long way.

Miso soup with baby clams was one of two soups available. The clams in this were well-cleaned and not fishy at all. The broth I think had a little sake, but mostly a miso broth which wasn't salty....yumm!

Plate one with the Japanese vegetable soup was, I believe an Ozoni soup, which normally has mochi as it is served as a main during the Japanese New Year. In Zuma's version was some radish, carrots and bak choy to give the dashi and soy broth a lovely sweet taste. It was light and tasty and I loved it.

There were also platters of different salads. One which I tried was a kombu (seaweed) salad which was nothing special in my opinion. Also on plate one was some seared tuna (pretty good), crispy tofu (okay) and grilled zucchini skewer (tasty).

After this I went to over to the other table and picked out my favourite sashimi and sushi. The hotate, ama ebi (quite large) and hamachi were really sweet and fresh. The sushi rolls are small, enabling one to try several without getting too full and the ones I picked were good, my favourite being the cooked salmon with flavoured rice and caviar - this piece is a must-try!

The skewers which I tried included the grilled mushroom, scallop, chicken and leek, mini minced meat patty, flavoured rice and zucchini (mentioned above). Whilst the scallop was way overcooked and chewy to the point of being inedible, the others were in good size, tasty and satisfying.

Also available on the buffet table was soba noodles with onsen (hot spring) egg, which I only managed to try the egg - nicely done with soft whites and a slightly runny molten orange yolk center.

To end my 'starter' course I had some hand-made tofu with assorted condiments which just come out. I must say the first bucket of tofu available when we arrived looked grainy, runny and just...unappetizing. The new bucket looked fairly neat so I scooped a portion and topped it with some miso sauce, grated ginger and scallions and sesame seeds for flavour. The tofu was properly set this time, and it was wonderfully creamy. On its own it tasted very natural and a little of the miso sauce for seasoning made the soya curd taste all the better. Definitely recommend this ONLY if it looks 'set'!

For main course, each diner may select one of several dishes. The menu included items like tempura, grilled mackerel, mentaiko udon, miso chicken fillet etc. We only selected two different items (we probably should have tried the other items rather than doing repeats!), the sirloin and the salmon.

The sirloin was quite disappointing as it was chewy and tough despite being cooked to medium or medium-well. The taste was good, but a chewy steak just doesn't cut it! Portion was generous though.

The salmon on the other hand, was impressive. It was a fairly generous portion of fillet again, and the light salty-sweet marinade made for a tasty fish. The salmon was perfectly cooked and not at all dry like many salmon fillets can turn out. The cucumber on the side also provided for a nice refreshing crunch to balance the salmon.... yummm!

To end our meal we were served a dessert platter. Each table, we noticed, have the same four pots of matcha mousse with banana, mint and chocolate mousse cake, raspberry sponge cake and a blueberry and mascarpone fool. On top of the huge ice cube in the centre was FIVE scoops of ice cream. I would've wanted to have 5 different flavours of ice cream / sorbet, but I'm not complaining! Two were chocolate, two were green tea, and one maple-walnut.

The matcha mousse was good, but the banana topping sort of ruined it for me. It was a mis-match.... I think a chocolate-something would've paired better with the not-so-sweet matcha mousse.
The mint and chocolate mousse cake was alright, but since I'm not a fan of mousses I didn't love it.
The raspberry sponge cake was a nice light cake and wasn't too sweet.
The blueberry fool was good taste-wise but definitely too 'liquid', as if it had been assembled and served right away without being in the refrigerator to 'set'. At the bottom was a whipped cheese layer, and topped with blueberry sauce and fresh blueberries. Sweetness was right, but definitely not appealing once the spoons were put in...too watery!
The ice creams were fantastic - green tea could've been slightly stronger in taste, but good nonetheless. My favourite was the maple-walnut though.... I wonder if it was made in-house? As it resembled Movenpick's a lot!

Service in general was okay from the waiters, despite a few being clueless whom were obviously new. Because of these newer waiters, we were under the impression that the juices were free-flow like the champagne and sake with the brunch, and so when we were billed for the three glasses of juice we ordered we wanted to understand why. We spoke to the manager, and he said that it was not his fault because he instructed the waiters that juices are not together with the brunch deal.... he also dragged out all the waiters who supposedly served us, and asked us to identify who said that! My mother was shocked at his manners and definitely couldn't remember who said they were free-flow with the brunch but someone did and that's all that matters. The manager definitely ruined our celebration of a family birthday for us that day....

So although the food was generally great, the service just seemed....appalling for Zuma.

But our table was on the 5th floor. The waitress led us down a long winding staircase, into this magnificent high-ceiling space which was a combination of the dining area and the open kitchenS. The first thing I noticed is that there are many many seats. And that almost all of them were filled, except the sushi bar seats. There was also a very nice outdoor dining area with large umbrellas.

And so we sat down. Surveyed the menus. Decided to order a couple dishes to share between us, instead of ordering set lunches. The set lunches were bloody expensive. see for yourselves (from my photos). Turned out to be an excellent decision.

Food:

steamed baby spinach w/ sesame sauce 8.5/10

Not quite what I expected at first, but very delicious. The wilted spinach was mixed in a thick sesame sauce (with white sesame sprinkled on top). Those who like sesame (which includes basically everyone, i believe?) will love this dish. A must-try, to me. The portion is not large. perfect size for 2 diners.

spicy fried tofu with avocado and garden herbs 8/10

The flavour was quite interesting. Spices were very strong but not too hot. Sadly a bit too salty for my preference, and the tofu wasn't smooth (滑) enough. It was rather lumpy in fact. I'd have expected a crisp shell with a smooth heart. But the avocado + green salad on the side complimented the spicy bean curd perfectly. Mmm. I can't exactly name the leaves though. Not my favorite. didn't really love the tofu, but it was quite special.

Pan-fried pork and shiso dumplings 8.5/10

Thin skin (good). Juicy filling. (even better) the special thing about this dish is, there was this fresh, citrusy leaf wedged between the meat paste and the skin. The taste was special. something i'd never tasted inside a dumpling. Tasted like lemongrass something...? Not sure. Tasty. Special. Slightly oily but who cares. It's just 5 dumplings. Forget about the calories.

takana pickle fried rice 9/10

Upon recommendation by the waiter. We didn't order any soba/udon/fried rice so the waiter asked us whether we'd want some boiled plain rice. He then recommended this fried rice. Turned out to be quite delicious.
The rice grains were plump and chewy. They weren't sticky. The ingredients were interesting too - the takana (a savory, salty vegetable), seaweed and white sesame. If you go you should try.

hokkaido sweet corn tempura 8.5/10

Who would expect that sweet corn could be tempura-ed?
The corn was sch-weet! so sweeeeet. It was juicy and slightly savoury. lots of corny juices. Delightful sensation in mouth. First crispy, then soft, then mushy. Recommended too.

grilled teriyaki salmon sliced pickled cucumber 9/10

You can see from the photo that the salmon has been cooked in a very special way. There are no lines on the steak. It is much smoother than the usual seared salmon. Also, the edges are charred. I love charred food.
It was fatty (but not unacceptably so), fresh, delicious and flaky. (flaky is good).

Conclusion:

Great. Come here for the ambience, the food, the atmosphere, the exclusivity...everything. (but the price). That is it.

We went as a small group last Friday for farewell lunch and everything was a la carte order.Decor was undisputably great, big chairs large tables, just the right size for most of the expats visiting.They obviously added a lot of heart into the dish arrangements and the details they do with the food. Interesting touches Zuma does to their dishes
Edamame - interestingly, they sprinkled sea salt onto the edamame and lifted the already fresh taste of the beans.
Spinach w/ sesame sauce. - the touch for this is that they tossed the spinach in the sauce completely rather than having it on the side or on the top.
Minced Tuna & Salmon w/ caviar and crackers on the side.
They served it on a bed of crushed ice. It seemed to me they used a sea urchin wooden slab and stuff it with minced tuna and minced salmon, each taking up half of the slab, with spring onions sprinkled on top. They have caviar served on a wooden spoon and very thin sesame rice crackers served on the side.
the way to eat this dish is to take a cracker and take up a good portion of that minced tuna / salmon and put some caviar on top, then gobble it down. Just loved the fact that the sesame crackers were very mild in flavour so the tuna / salmon flavours weren't being overtaken.
Sea bream sashimi - it is served in a fusion style and on a large round metallic black plate. The fish is placed along the edge of the plate with two piece of eggplant on the side. There is a cirtic sauce drizzled on top. Tastes good but I found the sauce too strong and overtook the mild taste of the fish.
Sushi Assortments - tuna toro, salmon, sea bream, 鱆紅魚, 油甘魚, raw shrimp
again its v. good quality but not I thought that the 油甘魚 didn't taste rich enough compared to other places which I had been.
Deep Fried Squid - they added pepper and salt into their batter, which was very light and a drizzle of lime on the side gave the dish another dimension. however, the squid itself was not meaty enough so despite of the light batter the squid still tasted fairly oily.
One thing I like about how they served this dish tho is that they chipped off a corner of the lime to ensure that the juice would fall onto the squid rather than being splattered around.
Sirloin Steak cubes - We were sitting right in front of the Yakitori station so it was interesting to see how it was served. We went for the lower end option of a US steak. They grilled a steak and then another chef took it off and sliced off the edges before cutting them into cubes. However, iin order to complete the stack, the pieces of sirloin is not used completely. There will always be one cube from the previous sirloin which would be used for the next serving. The plate arrangement for this dish is to stack it up, added some gravy and dried garlic pieces on top with also more dried garlic pieces on the side.
The cooking skill was excellent. the beef was medium rare although I wasn;t a great fan of US beef as I thought US beef were more chewy with less flavour compared to Australian ones.
Chicken Yakitori - probably the best dish I had throughout the lunch and was glad it came on the end. The chicken was done just right (i.e. a little brown on the outside but still juicy on the inside) and the leek complimented the chicken really well due the sweetness of it.
I think Zuma fails on the quality of the ingredients but not the skills of the chef.
Pichi drink - The flavour was great and refreshing. Pity though I didn't think it complimented the food well due to its slightly citric flavour. However, it would be an excellent drink for summertime and will be better than having a mojito.

I have always been a fan of this style: ceviche type dishes served in a hip environment with lots of space and nice decor. My friends and I meet here fairly often for drinks but not so often for dinner, but the food is good, I especially like their crispy fried squid starter and their crab hand rolls -- nothing earth shattering but a very nice accompaniment to some sake. Good quality sashimi, too usually just go for the selection.

Two things I didn't like so much: Being seated in what is obviously the worst table in the house, even though the restaurant was half empty -- and having to threaten to leave in order to be seated at a better table. (the restaurant didn't actually even get completely full). Also, the waiter missed a couple of orders and didn't bring out the dishes in any logical sequence, bringing starters out after we had the main dishes delivered.

All in all, a decent place, but a bit overpriced (I think we are paying for the real estate) and the service definitely needs to be upgraded. And...they need to recognize their frequent customers a bit better.

This is my second time to Zuma- the first time was on a date/a la carte- the food was not impressive. this time- i went for their sunday brunch- it was roughly 500 pp- includes all you can eat appetizers (included sushi and a variety of cooked dishes) and one main course, and finally a nice dessert.food- again, i find the food here to be average at best. take into account money paid, and i'd say it's actually bad. the food quality/taste/selection is as good as going to a cheap diner.service-

we wanted to try látelier de joel robuchon but we didn't meet their smart casual dress code (it's our day off), so we rocked up to zuma.they have 2 lunch menus, one 490, the other 290 (or similar numbers). so we had one each.2 recommendations: the beef tartare is quite special because it has some chilli to add flavour to the beef. the black sesame tofu dessert is highly recommended.the down side: it is pricy to eat here...and other food is so so...

行家兼老友約食飯,今次由我發板,當然要搵間好嘢試試,今期就去試位於中環置地出名嘅過江龍,由英國進駐嘅日本料理,仲好似係啱啱攞咗個由 英國飲食權威雜誌《餐廳》選為2009年全球100間最佳餐廳,名氣就熱爆,唔知質素係點。去到置地廣場樓下,有數部 lift 可以直達餐廳,上到餐廳,receptionist 隨即禮貌地帶我入坐,廚房是開放式的,坐椅闊落,有arm-rest,似去咗酒店coffee shop ; 我兩今晚去嘅係餐廳部份,餐廳盡頭有一間玻璃房,可以做私人飯局,佈置特別,設計師似乎好喜歡利用玻璃做嘅裝修,餐廳樓底又高,夠哂氣派,用上落地玻璃,但係枱與枱之間嘅距離反而太近,變得私人空間減少,美中不足 ; 而沿旋轉樓梯拾級而上,樓上仲有一層酒吧區,睇設計上應該係迎合西方人口味似的。我朋友有個背囊,佢地可以代客人保管住,而且係獨立的,有一張卡比你揸手,走之前交比侍應就可以攞返你嘅物品,照顧周到。menu 一打開頭版有一頁序,講解餐廳主旨。一開始佢話自己係當代日本居酒屋,我又唔覺喎,其實一入門口我就唔覺佢係日本料理,似食西餐多過食日本菜 ; 佢話自己唔係供應定食,而係for sharing

menu 一打開頭版有一頁序,講解餐廳主旨。一開始佢話自己係當代日本居酒屋,我又唔覺喎,其實一入門口我就唔覺佢係日本料理,似食西餐多過食日本菜 ; 佢話自己唔係供應定食,而係for sharing咁就係人都知日本居酒屋咪就係咁架啦,駛乜佢講呢又 ; 最後,仲要講明餸菜係會喺席間一路上枱,咁當然啦,唔通學似中國菜擺到成枱都係,又或者法國菜咁未食完一道菜,唔可以上第二道菜咩。寫呢段嘢嘅人真係唔知想寫比邊過睇呢。

仲有一點特別嘅,佢地有春日推介,亦都有set供應嘅。

講返食物方面:(以下係依照當晚上菜次序)

1. Hot Sake Carafe - Tengumai, Yawara Junmai (A fine Jumai which brings out its true flavour when heated, A comfort sake to warm up your soul) 300ml $160 - 相片欠奉因賣相冇乜特別,器皿用暖水坐住,保持溫度,味道入口唔太清香,老友亦覺得唔夠純,可能我揀得太cheap掛,因為好多酒以同等份量都要好幾百,甚至上千蚊,不過放得呢隻酒喺menu比客人揀,我諗佢地都應該慎重選擇貨源。

2. arjun's chu toro roll (prime tuna and finely diced spring onions) 蔥花中級鮪魚卷 $110 - 一上枱,我仍然掛住影相之際,老友已經叫我快啲吃,因為紫菜已經開始淋,但係只不過係上枱兩分鐘,好明顯係處理食材技術出問題,其實我見上枱時候已經淋咗,有可能係佢嘅飯實在有啲偏濕,不過佢嘅toro茸因為非常肥美,魚脂多而甘香,用料上乘但烹調技術尚待改善 ; 子薑鮮嫰,Wasabi新鮮磨製,呢種級數餐廳絶對要用上,此點不足為奇。

3. tai no sashimi salada to umesu (sea bream sashimi salad with mizuna, myoga and umeboshi vinaigrette) 薄切鯛魚沙拉配梅子醋 $120 - 係佢地嘅春日推介之一,鯛魚鮮味,下面舖有生菜絲,灑上梅子醋,但味道過濃,雖然魚夠新鮮,但鮮味被搶。

4. Sashimi moriawase 7 sashimi selection $540 - 每款三片,合共21片,價錢合理,而且真係相當新鮮,用上去一大舊冰塊同碎冰盛載,難怪咁多人都話要試佢地嘅刺身,甘蝦爽甜 ; 三文魚肥瘦適中,油脂分佈均勻 ; 藍鰭鮪(bluefin tuna)雖然油脂唔重,但冇筋,值得一讚 ; 帆立貝就唔夠爽,口感欠奉 ; 總括來說,一個 "鮮" 字。

5. edamame (steamed with sea salt) 海鹽枝豆 $40 - 做佐酒食品或前菜就ok,但係竟然食到一半嘅中途至上枱就未免........枝豆軟熟,灑上粗海鹽,味道ok。

6. yasai no moriawase (assorted vegetables tempura) 野菜天婦羅 $80 - 脆槳夠薄,炸嘅火喉控制恰當,吸油紙上冇咩多餘油份,但係蕃薯、南瓜就略嫌切得太薄,冇咩口感之餘,仲因為薄身關係,炸嘅途中水份好易流失。

7. corn tempura 粟米天婦羅 - 用上粟米做天婦羅都係第一次見,係由侍應介紹,原來係未放上主餐牌的,粟米表面積大,可以上多啲炸槳,炸至金黃香脆,質地有啲似爆谷,但係粟米入面水份充足,而且鮮甜好多,灑上些少胡椒粉,配埋酒嚟食,感覺一流。

8. buta-bara yuzu miso (black pork belly with yuzu and miso) 燒黑豚腩肉配柚子麵豉醬 $165 - 兩串豬腩肉,每串三舊,賣相吸引,第一舊半肥半瘦,可惜肥豬肉部份係肥豬肉一大舊,入口一咬,豬肉即時在口溶化,感覺係缺堤氾濫一樣似的,頓時成個口都係豬油,感覺只係比食東坡肉好少少,呢種感覺本人就唔識欣賞 ; 第二舊就少啲肥多啲瘦,比之前多啲咬口,用上柚子麵豉醬都係啱嘅,柚子帶少少酸可以中和多餘油份 ; 最後一舊就全瘦,竟然係全瘦,唔知佢想點,仲難食過煲老火湯嘅瘦肉,非常硬而且鞋口,唔合格。結論係,雖然第一舊頗肥膩,但亦都係我倆覺得最好味嘅。

9. tokudai wafu asparagasu (asparagus with wafu sauce and sesame) 芝麻燒露荀 $70 - 露荀鮮嫰,輕輕地燒一燒,用芝麻加wafu sauce(豉油中加上醋味沙律醬),清甜露荀配上濃味醬油,味道得到平衡,處理得非常好。

10. 鹽燒三文魚頭 - 三文魚本身夠肥,燒出嚟故然特別香,一碟四舊,見廚師選取都係魚肉偏多部位,冇魚頭骨同膠質比你啜,我爭啲以為佢地上錯餸,可以話係似魚鮫或者係魚身嘅肉多啲,好明顯唔係為本地人而設 ; 外面燒得香脆,裡面亦唔會太乾,只係感覺唔似食魚頭吧。

11. 香蕉蛋糕配綠茶雪糕 - 餐牌入面唔見甜品項目,侍應介紹咗呢樣,香蕉蛋糕香蕉味濃而且鬆軟,不過唔知點解要配上同樣重味嘅黑芝麻嚟搶奪佢嘅味道 ; 綠茶雪糕一上枱就知出事,你睇吓佢嘅顏色,竟然係呈淺綠色,入口淨啲感覺唔到自己係食緊綠茶雪糕,味道淡如水,最嚴重係食食吓有硬物,咪係細小冰粒,一定係溶過,侍應解釋佢地嘅雪糕係自己製造的,so what? I dun care,我最關心嘅係處理食物嘅質素同技巧,如果係自己搞唔掂嘅,倒不如出去訂人地做嘅出品返嚟賣好過。

12. 玄米茶 - 因為食得太飽,老友叫咗茶嚟消滯,又唔知佢地係咪serve慣西人,都係一個order serve 一個人嘅份量,竟然只係拎一隻杯嚟,,又話寫到明係sharing,呢點就不夠細心了。

Comments: 又一間名過於實,話自己做日本料理,入面真係唔多覺有日本人嚟吃,但差不多全場九成客係西人,而且唔知係咪我地張枱離open kitchen太遠,我就見唔到佢地起用日本師傅,唔見得會有幾正宗。但點解佢地都會入圍呢?? 我估好可能係與佢嘅總部地點有關囉。不過服務方面算幾專業嘅,細心,非常有禮貌,每上一道菜都會講解製法同埋醬料點用,但係餸菜上枱次序就好似未經安排咁,呢點就唔專業,應該由淡食到濃,前菜至到主菜,刺身之後到壽司卷物。食完後,我倆都覺得如果自己出錢嘅話,一定唔會嚟呢度食,佢地做嘅日本菜係比西人食嘅。

We have been planning to try out this well-known restaurant. Be honest, it's not my style to pay a lot for a meal and I have been checking if it worths for Zuma. A lot of mixing remarks, some told me the food is not as good before, some told me the dessert is great that not-to-miss and some said fair only not worth the price. Food:
Appetizer: I have no complain - all the food (ingredients) are the best quality. I seldom eat Sashimi but here, the sashimi is so fresh that not only I tried but I loved it! The sushi is simply GREAT! I couldn't stop! And the home-made Tofu, you can hardly find it anywhere else (It is the traditional Japanese Tofu they are serving). The grill is lovely, don't miss the chicken and the mushroom!
Maincourse:
Both of us chose a meat dish, the meat - supreme quality! You can tell not the culinary skills but the meat itself also can make you a great meal!
Dessert:
May be I had great expectation, I was very disappointed. Dessert - remember - it's just a platter - hence you have limited choice and limited portion. I was expecting more may be hence none of us were happy about that.
Service:
They tried to be attentive and smiley but hiccups - my husband was very upset as they kept on asking us when they should serve our main course (seems like they want the table back). And though my husband kept on saying he wanted it later but still he was being served the main course and he had to cut his appetizer.... that was a bit pissing off. And he was very upset about the coffee tea to be charged as he expected it should be included - well, I would say fair to Zuma, as beverage is where you can get the revenue with this super value brunch.
One great thing to mention - bring you kid there, super children friendly. My child was given colouring pencil when she arrived, they have kids menu (she enjoyed it) and they even have a kids' room to keep her happy while we can enjoy our brunch! Let alone that kids eat free! Sounds great for family, right?!

Finding a Japanese buffet in HK is already unusual. Finding one with Zuma's high quality at a great price was outstanding.

My wife and I celebrated our birthday with family and friends in one of Zuma's private rooms. Since my sister-in-law was treating us, we wanted something that wouldn't cost her too much. The $428 brunch (without alcoholic drinks) was an incredible value: the last time I had lunch at Zuma it cost more than $700, just for myself.

The lunch consists of a buffet, one main course from the menu (some examples in the pictures above) and dessert (which comes in a nice platter if you are in a group). Drinkers can enjoy champagne or sake for an extra charge.

Since I tend to eat a lot, the buffet was my favorite part. A variety of maki (rolls) were available, including veg., tuna, soft-shelled crab, and california. There were also square unagi sushi, very tasty. The sashimi selection included hamachi, kanpachi, tuna, tako, and salmon. The portion sizes are quite small, so it is possible to try a little bit of everything without filling up.

That was only on part of the cold selections. There were also seaweed salads, goma-ae, and seared tuna tataki. A cold soba table was set up, including poached eggs and all of the scallion, ginger, etc. to add into the soba sauce. An interesting offering at the cold table was black sesame tofu; I didn't try any but some of the family did and they enjoyed it. Slices of deep-fried tofu with salad leaves were also available, and they were nice.

Hot food included yakitori skewers, grilled chicken wings, and several other robatayaki e.g. mushrooms. There were some very, very tasty fried chicken kara-age with a sauce that looked like tartar sauce but tasted much better! I kept coming back...

We had to save room for the main course, which was a challenge. But the selections included very tasty glazed salmon, grilled sirloin steak, shrimp and vegetable tempura, and grilled lamb chop. I had the salmon and it was very satisfying, with a light miso-based glaze that did not overpower the flavor of the fish. Others at the table reported good things about the grilled steak and the lamb chop disappeared without complaint. I also tried some of the tempura dishes and the vegetables were fresh and flavorful, without too much batter or too long in the deep fry pit.

For ordinary people without fat expense accounts, this is a great way to enjoy Zuma's food. No surprise, then, that the restaurant was completely full. So much for the recession.

十一月初九‧晴 原本都想試試這裡的食物的,但聽身邊的食友談得太多,已打消了念頭。不來吃東西,但如果說要找地方喝一杯的話,這裡確實又很不錯。是晚約了朋友吃飯,早點出來,在這裡來個歡樂時光。 這裡用餐的地方在5樓,而6樓就全層也是酒吧。裝修佈置是這裡的強項,這裡很有格調,坐在出面的高椅子,可以望到外面的景致,很不錯的。 第一轉,先來清酒,顧及友人的口味,選了秋田的福小町,用一個小巧的酒瓶,放在堆滿碎冰的小木盒中盛來,賣相不錯的。味道偏向中辛口,喝起來口感清爽,帶點果香,作為餐前酒,稱職又對題。300毫升賣二百三十多,亦是合理價錢; 第二轉就試試這裡的馬天尼,要了Gooseberry及綠茶的選擇。比較之下,綠茶馬天尼的味道雖然怪怪的,但至少喝起來有伏特加阿苦艾酒的味道,而Gooseberry馬天尼則像一杯果汁,很甜。 喝這個馬天尼的時候還有一個小插曲,就是朋友在湊近杯邊之際,發現在酒杯上有一條長長的裂痕,作為一間都頗高級的酒吧,這樣也察覺不出來,太不小心了。結果,是當然急急給我們換來另一杯。談東說西,不經意又過了預訂吃飯的時間,要急急轉場了。 埋單五百多,以地方及環境計,合理價錢。
