The following will be a condensed review of Ramen Jo.I've walked by this restaurant many times before for the other great restaurants nearby. Turns out I was wrong because the ramen was all in all fantastic.
Preparing my Ramen
I came in quite late ~2pm which may have explained why there was no line at all. I walked in and the small shop looked quite cosy with the kitchen/noodle bar in the middle while all the customers sit around the noodle bar.
Below, you will see a picture of the chef working hard on my ramen. I filled out the usual paper by checking the boxes (Type of Ramen, Toughness or the Ramen, Spring onions option, other options, drinks etc.)
Presentation
Surprised at the redness of my soup, I thought it would be spicy even though I was expecting something garlicy. The ramen came with the standard side ingredients as you can see, nothing more to mention.
Noodles & Soup
Again, I wasn't expecting much here. But wow, did these ramen surprise me! The texture was perfectly 'al dente' , and you could taste the natrualness of the wheat flour. I want to highlight the natrual flavour because I really enjoyed that aspect of it. Within the noodles itself, the soup was soaked in to the noodles and I could taste the soup from within the noodle.
Very politely, I slurped the noodles as loud as I could making sure that the chef heard me. I had to complement them because I find these better than the ridiculous ramen shops with the long lines!
As for the soup which was garlic based, it acted as a complement to the noodles and the pork which is what it's supposed to do. It would be easily over done with if the garlic taste was too strong, or if the soup was too thick. In essense, the garlic flavor was present as a complementary flavour, and flowed through the ramen with the texture being between a soup and a chowder. There was also a quite a strong sense of miso/soy sauce flavor mixed in to the garlic as well. In this light, you could think of the soup as a miso soup base with garlic oil complements.
Pork
That being said, there isn't anything particularly good or bad about it and I would like to say that they should include one more slice of meat in there or have a thicker cut. In someways, I felt a little sad that I finished the pork so fast and still had so much noodles left.
Verdict
If lining up 2 hours for decent ramen (I don't think there are any amazing ones in HK) makes you lose your apetitie, you should definitely come here to try some of their noodles. Personally, I don't think lining up is worth it and its a waste of a day.
If I want ramen again, and want it immediately, I would think about this place again. At $78 I think it was well worth it despite the pork/noodle ratio.
