This was a memorable meal as we came on an unusually sunny Saturday before Mangkhut hit Hong Kong in one of the most powerful typhoons in decades. Since Grand Hyatt raised their annual fees a few years back, we've given up on our membership and it's been quite a while. Hotels in Admiralty have been caught in a refurbishment wave and Grand Café at the Grand Hyatt now looks entirely different (save for the location of its restrooms). It was interesting contrasting the place now versus a couple years back. We will return for their dinner buffet on Mid-Autumn's; meanwhile, I shall share our lunch experience.

The Grand Café is well-located and with floor-to-ceiling windows that draws ample sunshine in and offers a panoramic view of the Wan Chai seafront (after construction work right outside the hotel ends, that is). Around the entire restaurant one can see busy chefs at work at the grill/pasta corner, the salad counter, the Chinese food kitchen, and the pastry station. I thoroughly enjoyed watching food being prepared. There was also a large wooden table somewhere near the middle of the restaurant if a more communal style of dining is your thing. 

Many restaurants at the hotel have extended their offers previously exclusive to members to credit card holders of various banks (with certain restrictions). The place was reasonably busy on this occasion. Three-fifths full. Perhaps a little less. Many Chinese guests were not local. The ambience is pretty much your typical five-star hotel lobby restaurant. 

Menu looks global and well informed of the latest trends; the make-up of the waiting staff team is remarkably different now--more ethnically diverse, younger and, unfortunately, noticeably less professional and hospitable. It was not as if any of the servers were rude or careless, but it was clear none were genuinely interested in welcoming guests and ensuring they were happy. This is a big departure from the 90s and 00s. Service quality is a deal breaker for us. We'll give the team another shot on the 24th.

There are so many regional variations to the dish that it would be difficult to comment based on "authenticity". I'd skip the snobbery and comment based on how much we liked it. The soup, I feel, is too "chickeny" and rough compared with Café Causette's (which is very, very mild with a deep herbal aroma and zero grease). The chicken itself (we had thigh) is better than Causette's. More tender, more flavorful. The rice, on the hand, is less gingery and scented here (this is the default, but you could ask your server to tailor the rice). Condiments were pretty standard. Overall, probably a tie. Unless you have serious preferences, this should do.
