Amazing broth composed predominantly of oyster with mix of chicken and pork. It was sweet with lengthy aftertaste🤤 The flavour was complicated that you felt the presence of other meats but the oyster’s umami and sweetness would outshine at the end.

It came with a chunk of slow-cooked charsiu and a oyster. The fatty oyster was amazing while the charsiu was okay.

The onion deserved a mention too since it was perfectly diced and only the inner layers were used to ensure its sweetness. I have tried another oyster ramen speciality in HK and I could tell you this was just next level. The bowl of ramen is expensive but definitely worth your every penny💸

This tsukemen used a very special ramen noodle, almost like paradelle🤩 Its flat and thick body was the best carrier for the strong dipping soup. It was very smooth like lianpi 涼皮 but a bit less chewy.

The broth was immensely flavoured with oyster. Imagine oyster sauce in a thick and hot broth state😋 There were oyster and charsiu inside the broth too. I also love the shiso flower that lent a refreshing kick to the soup.

Just one minor thing was the air con❕It was way too strong and direct that the broth turned really cold towards the end. But they do offer reheating service despite only telling after we asked for湯割 yuwari which was unfortunately not available🤨

上環歌賦街早幾日又一間座銀集團旗下拉麵店@nextshikaku.hk 試業,主打牡蠣拉麵,拉麵分白湯或同清湯兩款選擇,另外仲有牡蠣沾麵。作為拉麵同蠔愛好者加上座銀品牌有保證,今日夜晚六點半到店,店舖裝修跟品牌其他拉麵店一樣用開放式廚房同Bar枱設計,座位空間算闊落坐得舒服,今晚我點牡蠣白湯(蠔,豚,雞),座銀本身嘅豚雞湯喺香港已經差不多可以講話無得輸,將湯頭再加入蠔肉打成牡蠣白湯,但今朝我試蠔味又唔算好特出,比預期有落差,豚骨嘅濃厚同雞嘅鮮甜就好鮮明,不過聽店員講個湯仲係調較階段,每碗拉麵都有一隻蠔,今日蠔嘅產地係岩手縣,蠔肉唔算好大隻,但都飽滿有蠔味,來貨產地會因應日本當地供應而有所不同,麵條係太麵,麵質爽滑有咬口,吸湯效果不錯,而呢碗拉麵售價係$154加一服務費$174,合唔合理就見仁見智。

前前後後嘅食客基本上都係叫呢款主打白湯版本。同雞白、鯛白湯一樣,牡蠣加上豚肉同雞肉一齊熬煮,所以湯嘅質感同樣非常濃稠,幾近乎沾麵湯既口感。湯帶牡蠣微微鮮味,本身唔算特別喜歡海鮮湯頭覺得不多不少剛剛好。濃稠湯底內加左不少洋蔥粒調味,我自己好喜歡呢個配搭,因為洋蔥鮮甜可以中和濃膩感。湯配料有慢煮叉燒一片同埋一隻小牡蠣,份量不多質素正常。

我食拉麵不習慣飲湯,只係喜歡以拉麵掛湯吃,因此一向都比較偏心沾麵,反正都係純用拉麵掛湯,湯越濃當然越惹味。變調版本既沾麵湯,除左比牡白款鹹同牡蠣味少少被豚香掩蓋外;兩款麵湯底,無論口感同味道都意外地接近。沾麵用咗日本一間知名製麵屋獨家研發出長方形嘅「平打麵」,號稱更加掛湯。唔知係咪錯覺,呢種平麵份量比我之前食過嘅沾麵都要多。麵條似用清水呈上,麵質滑溜,極似港式河粉質感。沾麵冇跟完整叉燒,豚肉全部已經變成肉碎混喺啲湯入邊,另外唔少得仲有牡蠣一隻。

糖芯蛋係座銀集團做得比較出色嘅項目。蛋黃呈深橙色,有微微鹹香同煙熏味,必點。

總結:牡蠣白湯同牡蠣沾麵今次平手。不考慮價錢,只係可以二選一嘅話我會叫返白湯,因為湯比沾麵鮮甜少少。唯一要吐糟部份就一定係價錢,連加一接近💲200一碗拉麵計,定價算係相當進取,幾近天價。不過睇見佢哋集團三間拉麵店既排隊人龍,貌似呢個問題影響不大。
