The oyster soup, whether clear or thick, was just one that everyone can make easily. It lacked the umami usually found in Japanese soup.The small oysters coming with the soup, fresh or frozen, did not taste particularly good. Quite bland actually.Noodles were white, machine-made and probably not made in-house.The soup was not hot enough to my taste.The blow-torch toasted chashu was done only on one side lightly. It’s not even warm, let alone melt in the mouth. One piece in every bowl of soup. An extra order of three pieces didn’t change anything. The staff doing it was not really patient.The two overcooked soggy shrimp wantons in the soup were puzzling.Eggs had to be ordered as extra. Unimpressive.Staff were nice. But they did not seem to focus on cooking as much as they needed to, and they did not mind chatting loudly in front of quiet customers.Plain decor that was uninspired.For $160 a bowl, it’s overpriced. Not ok.With the benefit of hindsight, even if it were half the price, I would not try.

蚝一直系其中一种我最钟意食嘅食材,知道做座银团队开咗一间专卖牡蛎汤底嘅姊妹拉面店,一经过中环就把握机会入嚟试吓。第一次光临当然要试佢嘅招牌牡蛎白汤拉面,而且之前食过坐银嘅鸡白汤拉面就相当满意,所以对呢度嘅牡蛎白汤拉面亦相当有期望拉面入面既𩠌就有一只蚝,一块叉烧同埋洋葱粒,配菜有青柠半个。汤底都尚算浓,有少量蚝嘅鲜味,不过整体嚟讲就偏咸,蚝味达不到我心目中嘅期望,而且配料没有做座银招牌嘅炸牛蒡,略为失色咗少少,所以下次都系食返鸡白汤拉面会满足啲

呢间店一直都好想试,不过之前都做足 research,食评都系普遍话如果呢个价格定位唔系好值。但系,一间咁标志性嘅店,点都试一试啦。牡蛎🦪清汤拉面🍜香味 (4/5) - 一闻落去,香味系足。主要系闻到蚝味,烟熏味,同少少鲣鱼味。汤头 (3/5) - 本身系清汤,饮落有蚝味同贝类嘅鲜甜味,鲜度够,不过咸度稍为高左D。个拉面入面有一堆鲣鱼粉,本身个粉我有试过,系不带咸味嘅,所以我觉得佢过咸左D,系因为个调料,相信系盐汤加多左。而且,捞匀左个鲣鱼粉之后,个汤就变得混浊了,以下张图系捞埋堆鲣鱼粉之后影嘅。面条 (3/5) - 以粗度来讲,目测系中细面或中太面之间,而明显系平打面,比较扁身。面条口感味道都算唔错嘅。配料 (3.5/5) - 因为系牡蛎拉面,当然著眼点系个蚝本身。试落,基本上系急冻广岛蚝,系够鲜嘅,不过冇惊喜。此外,葱系有心机嘅,我估系用九条葱,切成条状,刀功值得一赞。另外有加左食用花,增加香味同味道层次。猪叉烧系最好嘅部份,有用火枪烧过,好香之余,就算用嘅系五花肉部份,都唔会太油腻。咁多配料当中,只有呢块(得一块😅)我系珍而重之咁食。虾云吞方面,皮薄馅靓,系几好食,虾颇鲜又爽口。因为响香港食拉面,极少会遇到有配云吞,所以呢吓加左分。溏心蛋方面,佢声称系用樱木烟熏,都勉勉强强食得出,同一般烟熏过嘅蛋系有区别。而且,生熟度系最完美嘅状态。呢只蛋虽然系要另外叫,但都算值得。整体 - 如果唔嫌贵,一试无妨。配料方面点解会比得 3.5分,因为我系冲住蚝去食,而蚝真心冇货交。而且,当鲣鱼粉捞左落去,个汤本身嘅鲜味变左比鲣鱼味主导晒,立刻食唔出个汤本身应有嘅味,少少可惜。

牡蛎鲜香嘅浓厚汤沾上冷冻爽滑粉皮,真是绝配!绝对做到齿颊留香嘅较果;但无论沾面和拉面,牡蛎都是只得3只,如果有5只就更好了;餐厅装修简洁,服务员态度良好,唯独冷气不足,食汤拉面会越食越热,但即使是这样,都定必会再食和介绍朋友去食。
