雪蟹乌冬面是Fukuro 的名菜,到了Censu演绎出了不一样的版本,只想说太过瘾了,简直是猝不及防地接受了一场碳水和酱汁交织的猛烈暴击!

乌冬面被酱汁染出馋人的焦糖色,柔嫩的蟹肉纷纷扬扬洒上,蟹肉味增的量十分凶残(我喜欢),随意拌开都能极大程度吊出鲜美。还有相当足量的芦笋,增添一缕清新脆爽。
·
轻轻撩开蛋黄,金灿灿的蛋液快狠准地润进面条,原本质地松散如羽毛的蟹肉,这下与面条紧紧黏在了一起,每一口都陶醉在蟹肉的咸鲜与乌冬的弹牙劲道,堪称终极融合讲究!

说句题外话,吃完这份雪蟹乌冬,忽然馋蟹粉拌面了。

🍡Mont Blanc Dango

借鉴了蒙布朗的灵感来呈现日式Mochi,不过甜度依然是和风的克制,正好作为血糖飙升的大餐收尾,非常之令人回味。

一串四颗圆鼓鼓的团子,嚼起来糯唧唧的韧性极好,咬断时在齿间摩擦出清润的米香,直接吃都很棒。
·
覆盖的栗子Mascarpone绵滑细腻,在黄油薄脆、抹茶酥粒、巧克力碎里贪婪地裹上一圈,几种口感对立分明又和谐交融,真是拿捏准了!
·
不过服务有失水准,先是下单漏了一道菜(幸好忘了不然吃不完),然后快要吃完了才想起来告诉我们饭要完全混合汤汁一起吃。

開業一陣子的店一直想來吃,主廚是Fukuro 前主廚,氛圍很好、員工友善的居酒屋Squid 料理 - 魷魚 搭配了清脆的豆芽海膽onigiri - 新鮮海膽搭配鮑魚高湯, 每一口都好吃,只可惜份量太小 😂😂Zucchini flower - zucchini 搭配著濃郁的黑松露 sauce 🤤🤤🤤House Dango - 甜點選了糯米團子,搭配了抹茶脆片跟黑糖, 吃起來稍微有點普通, 下次想試試ice cream 🤔$800-1000 per head 期待下次再回來試其他菜

Starters - sashimi platter (toro, hamachi, tilapia) and zucchini flower tempura. The dressing was surprising that comes with scallop prawn mousse and truffle purée.Main dishes - signature Unigiri (abalone dashi, uni), udon (crab miso, snowy crab) and paella (unagi, kinshi tamago). Tastes and creatives of three dishes are satisfied expectedly.Desserts - miso ice-cream (green tea yuzu meringue) and house dango (mascarpone, kuromitsu).

全晚最期待就是這個烏冬!!! 烏冬彈牙帶點煙韌,蟹膏配上味噌醬,超濃的蟹鮮味!!! 表面更佈滿蟹肉絲,幾乎每條烏冬都掛滿蟹肉+醬汁,再加上流心蛋一起吃,醬汁超creamy很濃厚的口感!不過還蠻膩的,基本上吃完份烏冬已飽了一半😂

We visited on the night of Mid Autumn Festival, a party of four. Been looking forward to this meal considering how hard it is to book a table on their website, let alone to find out when we arrived at our chosen dining time, the restaurant wasn’t even half packed, throughout our dinner it was the same. So unsure if it’s a tactic to boost their fame or what.

My friend chosen their tasting menu for all of us and we also ordered rounds of alcohol. They asked if anyone has any dietary restrictions so I’ve told them that I don’t eat beef.

The flow of the dishes being served were a little inconsistent. At times we would have our table full of food, sometimes it took a bit longer in between dishes making us question whether we still had food coming as the server didn’t really inform us much throughout the meal.

What bothered me the most is that yes the dishes on the tasting menu are mostly to share, including their Wagyu steak. Kind of pointless to ask guests’s dietary restrictions if you weren’t going to replace or serve a little something for the guest who doesn’t eat beef. In my case when that dish was served, unfortunately I was just sitting there watching my friends eat.

Overall that night we spent over HKD4,500 for the whole bill. The food wasn’t exactly amazing or surprising, ingredients seemed fresh but no dish was so remarkable that made any of us feeling the need to come back. The staffs weren’t exactly attentive neither as they were chatting away on their own. Last reminder, be careful when drinking out their glassware as it’s super thin, my friend nearly drank Highball out from a cracked glass.

i loved all their dishes. Especially the potato salad, so guys please don't skip this dish, it sounds simple but it's underrated!!! Crispy thin Karaage skin, dip with their tsukme sauce Mmmmmmmm Unexpectedly delicious! Squid a bit tasteless, but white kimchi tasted interesting.Unigiri was the highlight of the meal, you won't know how creamy of this combo until you had it. One bite with uni, rice, and abalone dashi. 💯 Definitely miss the snow crab udon.. also, I didn’t think Dango could surprise

New contemporary Japanese restaurant created by the Ex-Chef Shun Sato of Ho Lee Fook, Belon and Armani / Aqua fame. It is a popular spot in the Central dining scene and you can barely get a seat through walk-in. CENSU is not an izakaya, the menu focused on the quality of food and the dish presentation. The section are sashimi, savory, fried, grill, grain, dessert. Overall, the food are above average and the Oyster and Wagyu Steak are worth for a try!!
