除了室外漂亮的風景外,再加上室內優美的環境、昏暗的燈光,而且一直播放著輕柔的音樂,非常有情調。

用餐區座位後面是水吧位置,另外餐廳還設有VIP房,可容納10多人,預訂來開個宴會派對亦不錯。

首先,來的是餐前麵包,麵包外脆內軟,最為特別的是配上餐廳自家製的三層牛油:上層淡橙色是車厘茄味,中間淡黃色是蒜蓉味,下層淡綠色是香草味道,讓每口麵包都散發著的不同的味道。

Water melon, mango and passion fruit juice, ice crush sorbet
隨後飲品亦相繼來了,這杯Wild Watermelon就是西瓜沙冰,加入芒果及熱情果汁,味道應該不錯。

我點的這杯Strawberry infusion是以士多啤梨汁為主調,加入檸檬汁及小紅莓汁,士多啤梨味道頗重,亦帶點微酸,清新香甜。

刺身薄切三重奏——和牛、悉尼生蠔及澳洲鱒魚
Trio of Carpaccio with fillet of Wagyu beef, Sydney rock oyster and Australian ocean trout
以三款來自澳洲的食材做出來的頭盤,賣相十分精緻,顏色亦很鮮豔,引人唾涎。

體積細小的悉尼生蠔,蠔身肥美飽滿,剛好一口一隻,蠔味不算濃重,但勝在鮮甜美味。一共數片的和牛薄切,質地香軟,下面放了點沙律菜,再配上parmesan cheese同吃,味道很配合。至於澳洲鱒魚,入口肉質柔軟,魚香味濃郁。

昆士蘭加菲蟹肉意式雲吞配香蒜羅勒車厘茄汁
Homemade Crab Ravioli with Queensland spanner crab and a cherry tomato, garlic & basil sauce
頭盤之後是意式雲吞,三大件加菲蟹肉意式雲吞對我來說,份量好像太多了,加上意式雲吞非常飽滿,餡料挺多的,把意式雲吞塞得滿滿,入口啖啖都是加菲蟹肉,而香蒜羅勒車厘茄汁味道亦不錯,若醬汁再多一點的話應該更好。

主菜三選一,分別是:香蒜迷迭香燒羊架配米蘭式意大利飯、巴馬臣芝士焗意式波菜雞卷或意大利火腿及燒南瓜裹香煎三文魚。喜愛羊架的我當然不作他選,一上檯羊架香氣撲鼻,面層香蒜迷迭香香脆可口,裡面肉質軟嫩,味道調配得宜,配上有咬口的意大利飯,美味而又非常飽肚。

巴馬臣芝士焗意式波菜雞卷
Chicken Rollatini stuffed with spinach, topped with melted parmesan
這份意式波菜雞卷一共三件,最特別是以煙肉包裹著釀入菠菜的雞肉,上面放上parmesan cheese,味道豐富之餘,廚師控制焗的時間亦剛好,吃起來肉質香嫩,又有芝士、煙肉的鹹味,中間夾雜點菠菜,減低油膩感的同時,亦令口感多變。

終於來到最期待的時間,廚師推著盛着材料和用具的餐檯車出現 (圖左),就在席前為客人一邊講解,一邊製作雪糕,加入液態氮後,在-195度的低溫下,就造成一片煙霧瀰漫的感覺,令做出來的甜品陪覺浪漫。

晚餐甜品廚師席前炮製的液態氮意式沙巴翁雪糕,以特製的批底盛著加入液態氮攪拌而凝固成的雪糕,這個是一人份的,雪糕甜味不重,同時帶有點點酒味,上面灑上意式曲奇碎,不失美味。

這份甜品的賣相絕佳,相信女生都會喜歡,把牛奶、紅桑莓果肉粒及紅桑汁混勻,加入液態氮,把奶漿攪拌凝固成雪糕,然後在客人面前掐碎被液化氮凍結的食用玫瑰花花瓣,讓花瓣碎散落在雪糕及碟子上,浪漫而漂亮。

雲呢拿味道雪糕不太甜,加上略帶微酸的紅桑莓醬,以及散發著淡淡的玫瑰花香的花瓣碎,邊吃邊令人陶醉。

這一份既浪漫、又漂亮的玫瑰花液態氮雪糕甜品,絕對是來AVA Restaurant Slash Bar必定要嚐的甜品,因為每吃一口,都讓我開心得從心裡面笑出來,真的,絕對值得強烈推介。

總括來說,AVA Restaurant Slash Bar不但位置方便,食物質素亦很不錯,尤以玫瑰花液態氮雪糕最為特別,加上餐廳環境優美,維港景觀漂亮,同時晚市時段有多間銀行的信用咭85折優惠,可說是一個不錯的晚餐好地方。

最後,再次感謝餐廳方面的熱情招待,讓我渡過了一個愉快的晚上。

這個在一月新推出的 Jazz Brunch 逢星期六、日中午12:00 至下午 3:00 供應。採半自助餐形式,前菜方面,沙律、火腿、湯、甜品等等,在自助餐區任君選擇。

沙律款式多多。個人最愛烤吞拿魚配牛油果,是一口一個的鮮甜。牛筋沙律意大利芝士蕃茄也不錯。其他還有意粉沙律、野菌沙律、沙拿美腸、芝士拚盤等等。

但最特別,就非珍珠雞莫屬。包得四四方方,像三文治般,中間是豐富而惹味的肉碎,兩層米飯則軟糯入味,推介。另外,烤牛肉亦不容錯過。

甜品方面,最驚喜的是杏仁布甸,初時覺得賣相不佳,但入口香軟清甜。藍莓芝士餅雲呢拿麵包布甸,是另外兩款比較喜歡的甜品。可惜沒試有朱古力噴泉和馬卡龍等。

介紹完自助沙律和甜品,接下來是點餐部分。可以在「歐陸海鮮拚盤」與「刺身」之中,兩者選一。

前者賣相有氣勢,肉質飽滿的雪蟹、鮮甜的生蠔、爽口的鮮蝦,富有鮮味。

三文魚、吞拿魚、油甘魚等刺身,新鮮但未達高質,如三文魚不算肥美,不過在自助餐已經比下有餘。個人比較喜歡海鮮拚盤。

前者的流心蛋漿永遠誘人,但我較喜歡有粒粒海鮮的奄列,尤其蝦肉、青口,鮮味而帶點彈牙,不俗。

羊架肉質軟嫩,味道鮮濃,外層帶焦香的羊排,羶味不明顯。跟牛排比較,我更喜歡羊架多一些,值得一試。

這道菜設計特別。三文魚夾在三文治之中,面層除了一隻煎蛋,其實還有半融的忌廉芝士。又咸又酸再帶點 creamy,味道和口感有小驚喜。

整體食物水準中上,環境則無可挑剔,可以舒舒服服地享受。

這一餐 Jazz Brunch 的價格為 $368 一位。而用了 Openrice 的優惠券後,兩位只收 $468,相當超值。另外,Jazz Brunch 已包了咖啡或茶,如想兩小時無限飲紅、白酒、啤酒、汽水,可考慮另加 $98。

First our expecations were not overly high to start the evening, acknowledging that Western Food was generally better in North America. First our expecations were not overly high to start the evening, acknowledging that Western Food was generally better in North America. (home for us)

We wanted a nice view for dinner where it was just me and my partner. A chance to catch up and relax. We had missed some of the busy points in New Years along the harbour so I wanted to have dinner at a nice place with a great view to watch the light show at 8pm.

We had a good table as we were the first to arrive the restaurant. It was 630, also the opening time of the restaurant. We were greeted quickly and ushered to our table which was said to be saved for us that evening. Yes, it had a view of the wan chai area of Hong Kong. 

After being seated, our server was very well mannered and asked if we wanted sparkling or still water. Despite us having yet any time to consider drinks, I choose sparkling. It was 78 dollars a bottle but was served with lime. Fair enough for an upscale restaurant with a view in TST.

With a fairly simple menu and items marked as "recommended", we opted for the $588/per person combination for two. There was another selection for 1588 for two persons, but we were not so keen on having double of everything. 

Off we go with the $588 selection, we were able to choose off the menu. It was a five course meal so heres what we got.

Soup: Blue Crab & Garlic Soup
Appetizer: Duo of Crab & Lobster Salad
Pasta: Italian Red Prawns Risotto & Tagliolini from the Sea
Mains: Boston Lobster & Tenderloin
Dessert: Raspberry & Rose Ice Cream

Our analysis is as such:

Both Soup was poor. The quality of the soup was not too tasteful. It was too runny and yet did not have the proper condiments to go with it. (ie. The Blue Crab soup was much like a lobster bisque and yet without sour cream. Btw, very little blue crab or lobster) While the blue crab wasnt great, the garlic soup was further less tasteful. It was bland with a taste of toasted garlic taste with light creme. My gf was less than impressed. I was trying to state that it might be her taste to keep the mood good but that plan didnt hold up as the dishes started to roll out.

Appetizers: Duo of crab was a presented in a great way, with a ice dome. WOW, that must of took a lot of work. Only if it tasted as good as it looked, it would of scored some big points but the crab was layered underneath avocado and mango, which took away from the taste of the crab. As a matter of fact, you could taste no crab. 

Lobster salad was not much more than one lobster claw cut up, served on some greens. The mango was a tad sour, while the lobster tasted like it had been bathing in salt water all day. It had no salad dressing or sauce what-so-ever, so the greens were dry. 

Pasta: Risotto was undercooked slightly with ONE prawn on top. It didnt taste all that great. I'll leave it at that. 

The tangolini was nothing to write about either. Our thoughts was "ITS JUST PASTA" but it was their "Chef's recommended" so that was rather anticlimatic. 

Mains: Boston Lobster was anther chefs recommendation. Nothing special, there was bits of lobster in it but basically it tasted like tomato sauce. We dont think it should be a recommended dish. Afterall, it was just two small claws with two clams with pasta. I suppose their ingredients were of rather good quality, but the execution did not impress, the taste was mediocre and was not piping hot considering there was 3 other occupied tables in the restaurant at the time.

Tenderloin served again with Salad as a side was not special either. It was maybe a 4 oz steak, cooked medium rare (it was what I had asked for) and was bland. There were no condiments served nor sauce. So having asked for horseradish, which they didnt have. They provided an alternative, which happened to be a very strong English Mustard. A small bite of that nearly killed my taste buds. Of course, I didnt use the mustard and instead asked for ground pepper. This they did have and helped a little with my meal. But again, nothing special here. The salad side, was not good either, the dressing was not very well made so I had left that alone.

Dessert: With our meal, was their signiture dessert, which was the rose with ice cream. We had heard great things. The fact that a chef came to prepare this at our team with a small demonstration helped. Although he was fairly timid, he made it interesting. The Dessert stole the show, it was well presented and the taste was great. It was served on a boring cone bowl but we thought a waffle cone made at the tableside would really make this dish shine.

Overall, the restaurant was probably fine for the price and the location with a view. But many of these things could really be avoided and trained.

1. We had to ask for everything. We had to flag somebody for cheese for the pasta. We had to ask to have pepper for the steak and pasta.

Overall, the restaurant was probably fine for the price and the location with a view. But many of these things could really be avoided and trained.
A few things we noticed here for a rather upscale restaurant:
1. We had to ask for everything. We had to flag somebody for cheese for the pasta. We had to ask to have pepper for the steak. This should be automatic. 
2. Service was great but the training was lacking. Staff was taking used untensils on our finished plates and putting them back on the tables. We later were told when giving this feedback that they were fairly new and was still learning. (We were okay with that)
3. Afterall this is a restaurant in a hotel. These are basic dining ettiques and should of been standard. 

Our server was great, we had given this feedback to her. Later the manager came to thank us for suggestions. Service was not perfect but was good enough and we told the manager that the service was rather good.

Its hard to come back to this restaurant, nothing really stands out besides the dessert and the view.

Bread basket 
Bread basket is very unique . Soft warm bun with Tri - colored butter is quite interesting . The layered Butter is made from Sun-dried Tomato, Pesto and Garlic Butter. This unique combination turn a piece of bread into surprise . 
I seldom finish the whole piece of bread before the meal .

For welcome snack, is somekind of crab meat with cucumber tubes . Nothing special but at least refreshing . Good start .

The starter come to The Duo Crab. The presentation was magnificent. Crab cake was placed in a glossy and tear-shaped ice cube .Very eyecatching and colorful too . The crab cake was in three layers ,the Alsaka Crab at the top, avocado and fruit salad in the middle and Maryland blue crab at the bottom. The Alsaka crab was meaty and fresh while the Maryland blue crab was sweet and creamy. The avocado and fruits paired well with the crabs, bringing extra taste to the dish too . The combination successfully create a fruity temptation . It was a good appetiser to whet your  appetite.

The other one is sliced baguette served with goat cheese and foie gras cream . Very creative and really appreciate such hard work , the chef placed the cream into a small mandarin orange .The presentation is very delicate and special that placed on the chopping board .  Foie gras cream is in dense flavor and rich in texture , match very well with the crispy thin crust .
Seafood lobster broth

 The soup is a seafood broth  .Waitress will pour in front of you to keep its hot temperature . The favor is dense in lobster paste but seems over artificial .I can feel something fresh among the spoonfuls . The texture is quite dilute and watery too . I think it should be more creamy and rich since their favor is that strong  .

For the main course , we take the sea bass , handmade fettuccine with truffles and assorted mushroom and the king prawn risotto .The seabass is a bit salty that cover the nature and somehow it can't bring out the freshness . However ,the texture is still very succulent and smooth . The side dish like asparagus and potatoes are flown in from Euro . Nice accompany . Overall is above average , it's just sightly salty .

For the fettuccine , assorted mushrooms and truffles seasonings bring out its aromatic hint to the overall tastes , definitely gain scores . The fettuccine cooked in a creamy paste , very rich and create a likable flavors . However , the Fettuccine should be in a stronger egg paste founfation and over cook that lost its own elasticity , it is just too soft and can't create al dente mouthfuls .

The risotto is average . Fusion favor with perfect cooking time that urge  the texture to be perfect too , not too soft or hard with a moderate sauce measure . Risotto it own quality is up to standard , you can still chew the rice for a while , glutinous enough . However , the main character -"tiger prawn " is a big disappointment , it is small and not fresh at all , even a bite stale and mushy ,the main ingredient ruin the overall dish performance .

Here come the desserts ,"handmade ice-cream with in rose petal favor " This was simply beyond words amazing. Some people might think this is too molecular science kind of food but I digress.  The chef will produce such unique dessert in front of you . For garnishing purpose, the chef pour liquid nitrogen over a rose. The rose then became brittle, so he could snap and crushed the brittle petals onto the ice-cream for final garnishment. Amazing presentation and what's most important is that the ice-cream was creamy to the max!The taste of the rose and raspberry fruit was definitely apparent and likable.Really enjoy this tremendously which is apparently to die for , certainly hit the spot !

 The overall ambience is quite romatic with its dim lightening . If u take the window seat in an early reservation , you can even enjoy the view from Kowloon side towards Hong Kong island, never ceases to amaze! The inner decor generally is nice and sharp , but the air  conditioner is " damn cold " ! Not to be exaggerated , it is exactly like you step into a freezer or cinema for 2 hours. The service is average , most of the waitress seems like taking part time job as I think they are not alerted and didn't pay attention on what the customer ordered or request . I need to keep on repeat and repeat in order to get them understand .Overall , the dishes'taste are a commonplace , but not a bad choice for semi casual fine dining .

Halloween 的中午,和隊長去了位於隆堡麗景酒店38樓的  AVA Restaurant Slash Bar,點解揀呢間餐廳? 因為偶而見到 openrice 上有 coupon,288+10% 二人行價錢,semi-buffet 來說,都算抵吧,又見有食家表示早一天訂位可以 book 到向海窗邊位,所以就試試。semi-buffet 12點開始,準時 12點到達,的確被安排了向海的窗邊位置,可惜大部份的窗邊位都是三尖八角,不太舒適,不過,相信早些訂位時應該可以早點 request 的。 semi-buffet 包括 all-u-can-eat 的湯、頭盆及甜品,另外每兩位一份 seafood platter,可以選歐式,即生蠔、蟹腳及蝦,或東南亞式,即生蠔、三文魚及吞拿魚 sashimi。我們就選擇了歐式。seafood platter 的生蠔很新鮮,細細隻的脆口品種,有海水味,蟹腳及蝦份量不多,都很鮮甜,以這個價錢來說,不賴了。自助頭盆方面,湯類得一款選擇,忌廉蘑菇湯,可惜不夠香濃。 沙律菜都很新鮮,芝士款式也多,parma ham 及 salami 雖然咸香不夠,但水準還是

甜品呢,款式少,不好味,六個字就總括了,dessert monster 就不必去這間餐廳了。

main course 分別選了牛仔肉及 slow cook 鴨腿,牛仔肉... 無味... 鴨腿呢,由於 slow cook 食物一向是我的 favorite,所以仍然覺得不錯。

service 方面,不過不失,算不上殷勤,服務員沒有笑容,但還是會很快回應客人的需要。

coupon 是可以用到 10月31日,如果無 coupon,就真係應該唔會再去,即使有 coupon,則可以一試......

一向鍾意去有海景的餐廳食飯,所以今日預祝生日都特登揀咗呢間有無敵海景的餐廳。最開心係可以坐到窗邊位,一邊用餐一邊欣賞海景。這次試了SEMI-BUFFET LUNCH,包括一個2人份量的SEAFOOD PLATTER,有2款選擇,我選了生蠔,三文魚同吞拿魚嗰款,另一款是生蠔,蝦同雪蟹。生蠔都OK,三文魚同吞拿魚就不過不失啦。另外仲有兩個MAIN COURSES,我地揀咗CHEESE BURGER 同SPAGHETTI CARBONARA,都唔錯GE,不過可能MAIN COURSE 來之前已經食左BUFFET 區GE食物,所以已經飽飽地,就唔覺得特別好味,不過好彩MAIN COURSES份量唔多,都食得哂。至於BUFFET 食物,我試左煙三文魚,沙律同埋啲甜品同生果,BUFFET區食物選擇唔算多,但以呢個價錢($388/兩位+10%)算是不錯了。同埋呢度啲服務人員服務都唔錯,值得加分。下次會再想來呢度試下晚餐同埋欣賞夜景。

開邊法式芝士焗龍蝦,龍蝦肉已先起肉,吃時更方便!
加拿大龍蝦肉質相當爽口彈牙,面層的芝士醬混進了干邑、芥末,不會令人過於飽膩;
大家也可輕沾旁邊的檸檬,檸檬汁能令鮮味更為提升呢!



烤30安士風乾肉眼牛扒很有霸氣!
全因美國有骨肉眼扒已絕跡本港十年,再見的感覺確是很好!

風乾牛扒先慢煮三小時再煎,色澤呈嫩紅,
肉汁不如傳統煎牛扒般豐盈,但肉味更濃,肉質更為細緻爽彈,近骨位肉味特濃;
還可輕曬少量海鹽稍作添味,
附爽口的蘑菇和微甜的蕃薯蓉,同吃也不錯!

AVA 的 signature dish ,蟹肉雙重奏,用一個水滴型冰球盛著, 一層層既芒果肉, 阿拉斯加蟹肉, 藍蟹肉, 木瓜和牛油果令人回味無窮
。呢幾樣食物簡直係perfect match ! 原來蟹肉同牛油果&芒果肉係咁夾ga ! 除左雪糕之外, 呢個係今日最好食既一道菜 !!!

終於到main course la...等左好耐....影左一千張相都未上main course

so stupid...冇睇清潔...原來Boston Lobster 係spegatti 既...又食多個pasta...=.=
冇可能食得唒...=.=
好在...另一個叫左Lamp Rack !!   
老實說...呢到既main course 都可以話係全晚最差既一個course ! 
先講lobster spegatti la ... 真係一般....味道唔重...就連之前Red Prawn Risotto陣味重香過呢個lobster...又小汁...真係一般般...仲要唔係好熱 !!!
至於個lamp rack....都係一d特別都冇, 正常lamp rack lor...又唔係好juicy...又唔係差咁la ...
anyway, 呢到既主菜真係變左唔係重點咁

chef講既野好好笑....講到個雪糕係magic咁...好似去左disney, hahaha !

今時今日好多人都會經常Book場搞大小不同類型嘅活動,所以環境、食物質素和價錢對於選擇一間餐廳黎來講都非常重要。我地於八月時選擇左Ava呢間餐廳搞左兩個中型Party。參加朋友固然對景觀讚不絕口, 亦都十分驚喜個豐富嘅high tea set 。全場最大亮點係o係景觀方面,我地同埋Party參加嘅人都非常滿意.尤其係個海景View,當日我地搞活動果陣,有彩虹出現,真係好驚喜,為整個活動加添左小小的點綴。其實佢地喺包場方面都做得好唔錯! 如果有朋友想要一個小型、高貴而價錢合理嘅場地,絕對係首選。活動之前,同事好專業咁同我地go through 成個活動個Rundown 同座位編排, 更加俾左好全面同中肯嘅意見同經驗,令到我地成個活動都好順利咁完成。um…話說回頭, 呢度大部份價錢都係俾左個景觀, 食物質素真係有待改善, 尤其是下午茶Tea Set 可能是「量產」嘅關係,質素有一D參差,三文治啲面包好硬,甜餅有少少藥水味,好彩個cheese cake 都算幾香滑...不過,我好肯定呢度嘅價錢除左食野之外,再加埋食「環境」,的確幾抵。

通常 amuse bouche 都是廚師花心思作的一些餐前悅口小吃,炸蝦真係好行囉... 而更我心情下沉的是這只炸蝦不熱 ....囧!見人氣博客試食晚餐,amuse bouche 是龍蝦汁蟹肉哈密瓜!

湯選了慢烤藍蟹濃湯,餐單上的介紹說: Slow roasted & braised in a vegetable infused bisque, paired with a prosciutto cane。幸好湯夠熱,也算有鮮味,但係看回餐單才發覺沒有說好的 prosciutto cane 喎。

因為很遲才訂座,店方說窗邊的位置已經全被訂了。我們的位子是在大廳中,燈光非常昏暗,連看餐單也有點問題,而且和鄰檯也坐的蠻近。因為有人沒看清 楚地址去錯地方(當然不是我)遲到,點菜後已經八時半,見窗旁有一檯沒有人坐,我們便問服務生生可否轉過去坐,對方回答說幫我們 check ,但之後沒回覆。過了十分鐘我們再問,他答那檯人客預約是 9:30 喎。點解我特別要提這一件事?聰明的大家一定猜到,無錯,猜對了,直至我們買單走人那檯也沒有人坐 ....囧!

大概因為是酒店西餐廳,要燈光昏暗有浪漫氣氛,而且出菜要慢慢的讓大家享受食物、環境和服務。喝完湯又等啊等,九時二十分見另一檯窗旁的人客買單離 去,我們便要求轉過去,服務生也滿足了我們的要求。可是... 雖然幫我們轉了檯,但沒有換檯布,大家可清楚看到檯布上的兩塊污漬罷。以為過一會他們會動手,但沒有人注意這事!....囧!

這是 duo of crab: blue swimmer crab salad, citrus and creme fraiche; layers of tropical fruits and avocado, topped with Alaska king crab leg, served in an ice crystal. 阿拉斯加蟹腳配藍蟹肉沙拉及熱帶水果,牛油果, 以冰水晶球呈上。這味道不錯,賣相也很漂亮。

Duck A l’Orange: Creamy Foie gras mousse, mandarin skin, hot buttered toast。香橙鴨,柑橘皮內是鵝肝慕絲,伴大蒜牛油吐司。鵝肝慕絲幼滑香濃,敗筆是那幾塊不熱不脆又有油溢味的大蒜牛油吐司。

那兩塊檯布上的污漬實在礙眼又感覺不衛生,我們忍無可忍出聲要求服務生把檯布換掉。以為換檯布不會出什麼問題,錯了,服務生來拿走了有污漬的檯布 後,把我們的刀叉就放在檯面上,然後一直沒有行動來鋪一塊新的檯布。我們又忍不住招一位服務生來表達我們受到特別對待,全場只有我們一檯沒檯布喎 ....囧! 終於,有人來鋪回一塊檯布給我們。嘆為觀止,這好好歹歹也是一家酒店中的西餐廳啊。

囧完可以再囧,因為有人慶生,點了一瓶氣酒,我們轉檯後就忘了要拿酒杯給我們,我們提醒服務生我們還有一瓶氣酒未喝完,他就拿來兩個酒杯,酒杯很多水漬,像剛從洗碗槽拿出來未抹乾!這晚簡直是人在囧店,太太太囧!

Black truffle pappardelle: creamy black truffle sauce, green asparagus, local baby bay scallops. 黑松露闊條麵,配露筍,帶子,奶油黑松露汁。這闊條麵味道很寡,沒什麼黑松露香。

整頓飯除了服務,最差勁是兩款主菜。

Bresse chicken: French chicken, brined for 12 hours and oven roasted, juicy; served with a medley of roasted root vegetables, new potatoes. 法國嫩雞,配時令蔬菜、新薯。Mr. Q 說雞胸肉粗糙,我吃了一點雞腿,即使是雞腿也不算很嫩滑。雞肉味道也很寡,也吃不出是 Bresse chicken。據聞 Bresse chicken 是有 AOC 認證,雞肉又嫩又香又有雞味,但我完全不覺得這半隻雞就是傳說中的 Bresse chicken,而那醬汁很港式快餐。

另一道極之失敗的主菜,U.S. short rib: slow cooked tender, earthy flavours of red wine, shallots & porcini mushroom, black truffle mash & glazed baby garden vegetables. 美國去骨牛肋肉,配黑松露薯蓉,田園蔬菜。這一塊肉質非常粗糙,好像煲完湯後的湯渣。

多多少少為這個玫瑰色冰淇淋點這個 6 Signature Sense of AVA。是席前製作的甜點,先把雪糕漿放在碗內,再倒入 liquid nitrogen 急凍。

雖然我們一邊食一邊滴汗,不住搖頭失笑,想不到買單時又有意外驚喜。服務生小哥拿帳單來時說因為這晚服務上有點不週,所以餐酒方面只算我們一杯的價 錢,在囧囧不絕的一晚真是令我們大跌眼鏡 O 咀無言。

另一個意外是 Mr. Q 以花旗銀行信用卡付賬,小哥拿回信用卡和簽賬單給我們說,信用卡有八折(太好了,可以減低損失),原來幾乎所有信用卡都有八折,除了 DBS,幸好,我們沒有 DBS 信用卡!

未上菜先來飲品,在下選來以 Sparkling Wine 及桃製作的「Harry’s Bellini」($148),朋友就點了加了荔枝的馬丁尼「Lychee Martini」($118),在維港景色下碰杯展開這晚的序幕。
麵包的重點在牛油,紅白綠三色部分包括車厘茄、蒜蓉、香草,在下不喜歡一般牛油的淡而無味,平常加了黑椒的已經覺得不錯,這裡更是三味齊來,各有不同香味而不濃,搞得麵包變成配角,為了吃這牛油麵包被迅速KO,但想到之後的6道菜也只好忍手不再多點麵包。

湯方面我們都點了藍蟹濃湯 (Blue Crab Soup),先上有蟹肉配料的碟,再由侍應把濃湯從小壼倒下。在下不清楚在現場倒湯除了視覺享受之外還有什麼功用,你知道嗎?
說回湯本身,很濃郁芳香,配合蟹肉的鮮甜,愛較重口味的朋友如常喝龍蝦湯的,這個湯會很適合。

前菜有蟹肉雙重奏 (Duo of Crab),賣相可謂無敵,菜盛在水滴型的冰球內,冰球本身能為前菜保持冰涼,可說是有姿勢有實際。作為這餐廳的 Signature Dish 的確不同凡響。
這個前菜有很多層,包括蟹腳、芒果、木瓜、牛油果及蟹蓉,以水果的酸甜配合蟹肉的鮮味,味道帶點複雜而口感豐富,最重要是感覺清新,正好中和之前藍蟹濃湯的濃烈。稍為可改進的是這菜可以再壓實一點,在下吃的時候塔兩下子就倒塌了。

朋友點的香橙鴨 (Duck a l’Orange),原本以為是類似鴨胸的東西,結果卻是圖中的模樣,大概是在橙中釀入鴨肝醬再塗在法包上吃。除非對這東西有愛,否則很難打敗蟹肉雙重奏的地位,也許餐廳要改為另一道較有競爭力的前菜?

到了 Pasta 部分,先有意大利紅蝦燴飯 (Red Prawn Risotto),面頭的蝦擺得有型但燒焦了部分影響了賣相要扣分,不過蝦肉算結實彈牙有水準,至於意大利飯看樣子也覺得較濕,吃入口的確較軟身,缺乏 Risotto 應有的嚼勁口感,可以做得更好。

另一款是黑松露闊條麵 (Black Truffle Pappardelle),雖然賣相比較平凡,用料方面黑松露很內歛不及大蝦那樣搶眼,但意粉卻能做到 Al Dente 的水準,配合黑松露帶來的香味,意外地在 Pasta 之戰中勝出。

到了主菜,波士頓龍蝦 (Boston Lobster)開始時還以為是開邊上,但侍應一早已講明不是,所以上桌時已有心理準備。已去殼的龍蝦啖啖肉很鮮美可配合意粉一起吃。意粉和上述的闊條麵一樣煮得剛剛好,配合在下喜歡的茄醬,是簡單而出色的一道。

朋友點的是法國嫩雞 (Bresse Chicken),帶骨上吃起來相當困難,在下試吃了一點,覺得味道和肉質都可以,但和波士頓龍蝦比較,無論是賣相還是吸引力都似乎稍有欠缺,是完全能分高下的兩道菜。

我們吃的時候不時看到附近煙霧彌漫,到最後輪到我們時就開估,是甜品玫瑰花雪糕 (Raspberry & Rose Ice Cream)。因為現場環境黑暗,我們還在擔心拍照時是否要開閃,不料經理已早一步為我們開手機打燈,是超驚喜醒目的服務。

雪糕的製作過程和早前大熱在下也寫過的「Lab Made」相近,師傅把液態氮逐少加入盤中的奶再快速攪拌,過程中產生大量的白煙,感覺非常浪漫。

之後把真的玫瑰花插進液態氮之中,因為急凍的關係,玫瑰花瓣瞬間變成脆片,師傅再用手「摧花」把花瓣碎舖在雪糕之上,就成為了這一道玫瑰花雪糕。

因為這是在下的生日飯,所以有這個「特別版」,大家是否覺得很漂亮有型?只要你訂位時講明慶祝生日,你也可以做到!
論味道比一般雪糕軟滑,但伴隨的是很快溶掉,情況和「Lab Made」一模一樣。至於玫瑰花瓣的確會為雪糕帶來淡淡花香,是很少機會遇上的味道,再考慮製作過程和這甜品的獨特性,可說是這店的真正皇牌。
整體而言,這裡的食物方面還有一點改進空間,服務方面全晚只自動添了一次水,到最後在下的杯完全乾掉也沒有侍應留意到,是需要扣分的地方,此外套餐的菜式選擇太少加上太高下立見亦是問題。但考慮到這裡環境不俗,有無敵維港海景,加上菜式精緻的賣相和令人目不暇給的玫瑰花雪糕製作過程,能做到功大於過。
因為恆生信用卡有八折的關係,這一餐埋單二人$1300左右,個人認為絕對物有所值,喜歡特色的朋友值得一試。不過有趣在網上所見另一現象。
話說在下吃後上網看此店的資料,發現寫食評的全部都熟口熟面,原來此店早前請了大量食家去試吃,稍為數過,頭兩版20個食評,橫跨四個月的時間當中有13個都是試食,真正付錢然後寫評的只有35%。
在下有去過類似活動,也認同這是餐廳有效的宣傳方式,但佔的比例這麼高,個人覺得可能有反效果,會讓人覺得這餐廳除了請人試食就沒什麼人會光顧和寫,也間接讓被邀請試食的人受到質疑。
