my bowl has 3 pieces of tendons it was shocking! though they are delicious (however, don't beef tendons taste good already itself?) the raw beef were almost completely cooked and I'd much prefer them raw! noodles were nice in terms of texture, very smooth and thin. to me, it's a regular bowl of pho, nothing compared to what you get in Vietnam! highly recommend the plum lime soda because it's perfect for a hot summer day!

conclusion: i usually have high tolerance especially to new fnb biz but the lack of follow up to this extent is not acceptable. imagine dining in an environment with wrong orders everywhere and with everyone sitting around you complaining simultaneously... it's complete chaos 👎🏾

We came here for dinner with relatively high expectations due to the hype but also at the same time aware of the likelihood of mediocracy which are common when restaurants are recommended by 蔡瀾.Overall, the restaurant is poorly operated with uncommitted staff. We ordered three bowls of 生肉粉 and they were served one by one at 8 min intervals... we spoke with the staff 2 times and they just told us it was on its way without really checking (good job Sherlock...). I find this relatively unacceptable

Overall, the restaurant is poorly operated with uncommitted staff. We ordered three bowls of 生肉粉 and they were served one by one at 8 min intervals... we spoke with the staff 2 times and they just told us it was on its way without really checking (good job Sherlock...). I find this relatively unacceptable as these were not dishes with huge variations and doesn’t warrant such long wait times when it’s the same order from same table

Food wise, the portions were fair in my opinion but the noodles and meat served were average at best. Broth was a little too salty on the day of my visit and the beef and beef balls were nothing out of the ordinary. On the plus side, noodles can be refilled but be prepared to wait another 8-10min or so.

All in all, the only unforgettable parts about the meal were the poor restaurant management, rude staff, mediocre food and a reminder to self to go elsewhere on satisfy the pho cravings

名牌效應,就算排隊都要試下,點了最穩陣 嘅生牛肉河及春卷,看到相片我的生牛肉河跟蔡瀾的相差很遠吧! 那碗簡直是超熟牛肉河,牛肉不是一片片,而係一“pat” 過! 服務員説因湯太熱的原故,難道蔡瀾那碗會是凍湯! 這種質素一生難忘越南牛肉河要$88,附近越南食肆不少,都唔駛幫襯你啦

除左食物味道平平,環境都麻麻!d射燈太勁,張櫈又唔高唔矮,坐得唔舒服!

但最差最差都係d員工既服務態度,尤其係個紫色冬菇頭、全場唯一一個冇着制服既疑似經理!態度惡劣又寸嘴!話說佢係負責帶位,但係佢只會企係門口,開度玻璃門比係外面既你入黎,然後用命令式既語氣:「你!坐呢度!你地兩個!坐個度」

其實我想講,我地係你既「客人」,唔係你既「下人」!😡😡

跟著食食下,突然記起杯話梅青檸梳打未黎,就叫左個待應幫手check下,點知冇feedback而杯野飲就繼續失蹤,隔左一陣再搵翻頭先個個待應再催催,而佢今次先至攞我地張單黎睇,先至發現原來因爲個款飲品已經賣曬,所以冇落單!!!🤷🏻‍♀️

有冇人同我一樣 一見到蔡瀾開既呢間越南pho就好興奮好想試?不過唔洗喇 因為我已經為大家身先士卒喇🙄好彩我醒目5點幾去到 條隊仲好短 等5分鐘就入左去 但無論係招牌生牛肉河($88)定生牛肉牛筋雙拼河($68)都係非常普通 湯底油得黎又一啲都唔濃味 得個甜字. 生牛肉切得又薄又冇咩肉味 完全唔好食個春卷真係唔識欣賞 成舊乾爭爭...公道講句 佢啲pho唔係難食 不過絕對唔係啲咩特別野 更加絕對唔值得排長龍去食 求其搵間連鎖越南餐廳都有咁既質素 又一香港新屎坑事例

其實呢篇食評同之前幾篇的食後感大同小異...呢間真心名過於實.見到蔡瀾話開咗間越南粉喺中環, 都有諗住試吓,  當然, 亦一早做好心理準備呢D靠名人效應的, 多數名過於實...不過無諗過係差咁遠! 見啲人話排成半個鐘, 食又要等半個鐘, 咁啱呢兩日落大雨, 差不多9點 (關門前一個鐘)到, 見無人就入去試吓啦, 如果要排隊就唔會咁ON居喇! 首先入到去大部份都係暑期工模樣的後生仔, 態度十分輕佻, 一副愛理不理的樣子...然後問佢哋關於菜式或飲品的問題, 都好似一般intern的迷惘, 然後又話要再去問吓先...其實如果未準備好開舖, 應該train多一陣先. d位亦真心坐得幾唔舒服...張椅係高椅但張枱又高, 食得有d辛苦 (當然, 我唔排除因為我唔過)...但真心坐得幾辛苦 (但收的價錢又唔係便宜). 至於食物...一碗"特別牛河"要128...喺中環唔算話超級貴o既(如果好食的話)...但其實食落又同 "越棧"嗰d質素不大分別...唔明點解阿蔡san可以話覺得一生難忘, 唔知佢食"越棧"有無同樣感受? 十分普通...如果話要排半個鐘直頭唔值...同埋佢哋煮一碗粉都要搞好耐好耐..

美食家蔡瀾先生新店開張賣越南粉十分吸引我來到排了四十五分鐘隊才能試食一碗豬頸肉春卷撈檬味道不俗價錢合理但同行友人投訴牛肉粉平庸不值推介作為蔡瀾粉絲的我當然不會盡信只能拋下一句你們根本不識食馬拉盞通菜很惹味但飲品質素確係水準之下多色冰啜兩啖就無了越南咖啡亦不甚特別試業階段送餐速度挺快能夠配合中環急速的商業步伐可惜漏了一次單提醒後馬上送到只是忘記了蔥花全走但我相信是店家用心良苦迫我同事硬著頭皮吞下去。

奉勸想去中環試下,蔡瀾果間越南河既朋友(平日好天要排勁耐隊),可以慳番D錢,我試左四樣野,主角牛河,牛肉好普通,唔叫靚或嫩,牛筋係香口膠嚟嫁,應該可以𡁻一粒鐘,春卷一般脆口,但入面既肉味,有一浸d肉唔鮮既霉味,蝦餅唔彈牙,好散。而報導主打sell既,即製河粉,em.........同樣好唔爽口,好粉,似浸左好耐水果d河粉!Poor service. This pho restaurant opened by the infamous food expert Mr Chua Lam has got to be one of the most heated new eateries in town. You can tell by the numerous news reports as well as the super long line outside the restaurant every day! I obviously couldn’t miss this place out, especially when it’s located 5minutes from where I work.I went for the pho with raw beef and beef tendon instead of their classic-raw beef pho, because 2 is better than 1!😂 Well, the broth was pretty nice and rich in flavour,

I went for the pho with raw beef and beef tendon instead of their classic-raw beef pho, because 2 is better than 1!😂 Well, the broth was pretty nice and rich in flavour, but not as ‘clean’ or ‘greaseless’ as they claimed it to be. The pho noodles tho, was quite disappointing, as they were served saggy and the portion was little. The raw beef wasn’t impressive either, as it was cut super thin that we couldn’t really give it a bite to tell the flavour...

hkfoodtour’s official verdict: just an ordinary bowl of pho, definitely not worth the hype.

We have got a few errands to do in Central on Sunday, therefore we thought it would be a good opportunity for us to try out the new Chua Lam's Pho place on Wellington Street. We thought the line would be shorter on a rainy weekend but we got it wrong. The line is long (~15 people in front) and we waited for almost 1 hour. Raw beef + Beef brisket pho
Broth is the essence of pho - we all know that. I started with tasting the broth and found it is a bit sweet which i like, compared to the regular broth. I added some herbs and bean sprouts to my pho to add more flavour to it. The quality of raw beef and beef brisket are good, the portion is okay for its price ($68 - especially in Central). Would be better if they have options to have a bigger portion of beef. Also, they have a
free noodle refill option, which is ideal for those with a bigger appetite.

Crispy and quite flavourful.

Very good
The slices are quite thin and not too oily. Slightly crispy/grilled on the sides which gives it a little bit of a smoky flavour. The texture was very tender.


Overall
The pho is good
especially for the price in the area. The staff need to work harder on the service to keep up. Will come back for the pho but may be after the lines and service is taken care of.
