我知道這處出名的是填鴨,但今回來的不是為鴨而來,其實想吃下這處點心如何,假日最好訂位,否則直接走過去等位,不知等到何時.點了蝦餃,春卷,腸粉,叉燒包以及腐皮卷,吃過數款點心中以春卷以及腐皮卷.春卷的好味程度是用手拿起食才夠滋味因它夠熱燙脆口,而蝦肉爽口又甜美而腐皮卷則吃外面非常脆口,沒有多剩的油份曬露在表面,有水準的點心,最便宜的點心差不多四十元,相對我吃慣平價的,的確有點貴,但做得有水準,服務也夠專業,吃了數款點心連加一服務費約二百八十元,找一天再來吃過晚餐.當然是為那填鴨來.更多詳細及相片:http://cky20080.blogspot.com/2010/05/18.html

服務也夠專業,吃了數款點心連加一服務費約二百八十元,找一天再來吃過晚餐.當然是為那填鴨來.

沙田18的北京填鴨果然做得很好,跟北京的有九成相似,是我們在本地吃過最好的一次!如果燒焦一點,會更香更吸引~以 $498 這價位,在酒店的中菜廳吃到一鴨三味,實在抵食!難怪經常滿座~這裡的甜品也做得不錯,看得出廚師所花的心思!其餘的菜色(前菜,包點,鍋貼,水餃,炒飯)則一般,略嫌有點貴。服務很好,侍應非常貼心~用恆生白金VISA埋單,有九折優惠~是日午餐折實$15XX (10位),免了兩架車各三小時停車費。大家不是吃得很飽,但感到十分滿足!短期內會再來幫襯~

My friends and I work by the area and we decided to give Sha Tin 18 a try after reading recommendations from a magazine. Upon entering the restaurant, we were utterly amazed by the décor especially with the design of the open concept kitchen. One of our friends was a visitor from another country and it was a great way to introduce some of our Chinese dishes, especially when you can actually see the different chefs performing their own different techniques.

We ordered their famous Peking duck and it was one of the better ones I have had, the duck’s skin was very crispy yet it was not too fatty unlike some other restaurants. We also tried the crispy smoked duck wrapped with rice paper, it mildly fried and the duck was nicely seasoned. The Houjie pan fried fish cake which was also very tasty.

Lastly, we wanted to save room for their famous desserts that we heard were highly recommended. We were not disappointed when the desserts came. Their pastry chef combined fusion desserts made from Western and Chinese ingredients. We ordered the hawthorn panna cotta, kumquat creme brulee and two scoops of ice cream - Chinese wine chocolate and Jasmine milk tea (by far one of the best ice cream flavours I have tried). The ingredients complemented each other and each one was different in their own delicious way.

上年沙田凱悅酒店開張之後,旗下的餐廳"沙田18",旋即被香港英文傳媒報導,南華早報與Timeout也不約而同,對此間餐廳作出正面評價.當一入到去沙田18內,始終是新酒店,環境頗有格調,但感覺真的好像來吃自助餐,因為餐廳內有不同地段,有甜品,有燒味部等等,內裏廚師做些什麼也一覽無遺.我們一行十人,坐在一張長檯上,如果要圓檯,竟說要最低消費.除了填鴨之外,聽聞此店的麵食亦不錯,而且更有一些東莞菜式供應.看了餐牌後,是夜不如來個南北一家親.首先上的是東莞代表鄉下仔田魚蝦毛,如果放在香港,這一味菜一定叫XX小炒王,用蝦毛,韭菜,花生等同炒,乾身爽脆,最大敗筆是入口有沙,與經理投訴之後,再炒過一碟,結果還是一樣地多沙,一錯再錯.在酒店餐廳是不能夠接受的低級錯誤.此店的麵條是手拉出來,是夜便試了三款,有哨子麵,炸醬麵,牛肉麵.哨子麵看似大堆頭,味道應該香濃,面頭的蘿蔔粒,豆腐粒,菇粒等等做出來的茨汁.外強中乾,吃落味道有層次地先濃後淡,真是摸不著頭腦,炸醬麵更是沒有理由地咸,完全欠缺一點濃甜.牛肉麵算是不錯,湯底濃甜而牛肉稔熟.老實說,麵條是做得不錯,入口煙齦實在,但是在坊間的北方麵店,一樣可吃到

有時候上餐廳,也會想叫一些餐廳未必擅長,而自己又想吃的味道,好像是夜的咕嚕肉便是一例,朋友們想吃便叫.此個咕嚕肉做得未必比得龍,陸羽等地方好,但也做到甜酸度平衡,香脆外層包著鬆化的內餡,也是不錯的水準.泮塘五秀是全夜最清淡的味道,用上紅蘿蔔,蜜豆,蓮藕等等炒埋一碟,不爽才怪.厚街臘味魚餅是將臘味混入在魚餅內,本來彈牙的魚餅,被臘味加多一份甘香味道.

全夜之重點 - 北京填鴨便在差不多尾聲上場,這味是來此的主要目的.大家上北京菜館,吃填鴨只吃皮,如果想食肉,便要另外再加工,炒個鴨鬆,或者用個鴨殼來滾湯,沙田18的北京填鴨,是分三部份去吃.第一是先吃鴨皮,點些砂糖吃,鴨皮香脆得薄如紙,連同砂糖入口即化.砂糖同鴨皮之配搭,果然絕妙.第二部份是吃鴨胸肉,再沾些醬,用餅皮包著來吃.其實等同走皮之吃法,目的是全面性感受鴨肉的香,不過甜醬的味道太濃,吃不出鴨肉香,而鴨肉的質感亦不見得出眾.第三部份是皮連肉一起,加些京荵,甜醬,再用餅包埋一起吃.連皮的肉比淨肉更嫩,香脆鴨皮與嫩香鴨肉一口過,這次北京填鴨三重天,令大家眼界大開,原來吃填鴨,可以這樣地吃.當然,三重奏之中,先皮後肉,再皮肉,感覺好像凌遲,那些自問清高,說吃企鵝雞是濁流的偽君子,我諗你都不要再吃填鴨,甚至片皮雞了.最後填鴨再加工,炒碟鴨鬆,鴨鬆幼細,混合大豆芽炒更加脆口.

最後甜品是桂花糕同蜜餞柑桔燉蛋,兩道甜品做得不錯,前者帶有桂花的幽香,後者不是在甜品店常吃的Creme Brulee味道,滲入了柑桔味,酸度平衡了甜味,吃落去沒有那麼膩,但不失香滑感覺.

為了鴨而來,果然沒有失望,只是當晚其他菜式,有少少失算,如果下次要來,大約會來飲個午茶,吃點心.

女友生日,揀左呢度hea兩日。得間cafe 同 呢度揀,揀呢度食第一餐。「先生飲D咩?」五十蚊一盅茶!?鑲金嘅唔通?揀左兩百二一位嘅午餐B,老實講,不過不失。拍青瓜拌燒腩,青瓜汁唔錯,燒腩俾人叮過,叫熱,但唔好食!點心兩味,大路蝦餃,粉果,一般。蘿蔔糕「瓊」乾油先上吖嘛,幾樣衰吖妳話成碟油。唔脆口之餘亦唔好食,店家好似一早知道咁,你想要嘅調味料已經擺哂響枱度!炒蝦球略油,但大隻,四隻蝦叫做唔係賺足你,炒豆角、牛炒飯想像唔到咁大碟,我叫大食,但都幾飽吓!甜品自選三款,上至果盤、下至五糧液雪糕都有,叫做幾特別,名就大於實,亦正常,如果真係五糧液味,想食死𡃁仔乎?實收四百四,有恆生白金吖嘛!記住帶喎!唔係要五舊水㗎。

The only thing I want to comment is the hygiene of this restaurant.When the waitress came with new chopsticks, i noticed all of them have traces of soya sauce (something in brown) anyway on the chopsticks. Then I noticed the reason why was because she put the chopsticks on a tray which she also use the same to put dirty dishes collected from other tables. In fact, all waiter/waitress in the restaurant did the same.It was most horrific when I saw a waitress taking the same tray which she used

The only thing I want to comment is the hygiene of this restaurant.

When the waitress came with new chopsticks, i noticed all of them have traces of soya sauce (something in brown) anyway on the chopsticks. Then I noticed the reason why was because she put the chopsticks on a tray which she also use the same to put dirty dishes collected from other tables. In fact, all waiter/waitress in the restaurant did the same.

It was most horrific when I saw a waitress taking the same tray which she used to place clean utensils to a dirty table and started to put dirty dishes on top. And afterwards, she didnt clean the tray but use the same to place clean utensils for other customers!

I think although this hotel is not a 5 star hotel, it should at least maintain a service of such standard which any decent hotel should have.

It is most disgusting to see that and have to check my utensils (and found dirt thereon) everytime they gave me "clean" ones. With such low standard, there is no use if the place serves Michelin grade food.

If you are going to this restaurant, please make sure u check the utensils and be aware whenever they use the tray to serve.

今日係假日,好多地方無位飲荼.即日這裡有位, 就和daddy mummy 到這裡飲茶. 裝修ok 尚算達到酒店的水平,waiter 帶我們到預訂的4人檯, 發現的竟然是只得2位set up, 雖然隨即放回另外2位餐具, 但心想雖沒有甚麼大不了但酒店的service應該不至如此吧!開了兩壺茶,驚人發現:水竟然不夠熱,所以沒有茶味,雖跟waiter反映,換過後依然改善不大,還說已經是最熱的了, 那麼他們的感溫度跟常人是有點距離罷我們順應waiter 的誠實建議,只叫了兩碟點心,乳鴿,炸菜肉絲煎麵和這裡最有名的片皮鴨:點心 $42-48 per portion紙米煙鴨卷:幾特別,炸得香脆,熱辣辣蝦餃皇:皮穿了,好 '林', 4粒蝦餃"痴埋一舊",味道達到稻香水平乳鴿 $88夠熱但不夠脆,新強記好味好多!炸菜肉絲煎麵 $98ok, 汁和麵是分開上的片皮鴨半隻(3吃) $298味道不錯,但稍嫌皮不夠脆,配砂糖/蒜蓉都很好吃但最要命的是只有10塊pancake皮,而且不能refill,額外12塊pancake皮盛惠$48 二食的湯普通過普通三食的鴨崧生菜包反而ok,不過生菜太細塊而且不設海鮮醬o

All-u-can-eat dim sum is offered at weekend, $150 each, in the morning. plenty of chocies of dim sum, rice, noodles and fusion dessert. All are quite good. We particularly love the dessert. very delicious. however, the time is rather short. only 2 hours from 9 oclock and the last order is 10:15. Not quite relaxing.

Sha Tin 18 Appetizer Combination $168?This was an excellent way to sample most of their appetizers. Even though we were five altogether I thought it would be wise to order the 2-3 persons portion, just because we wanted to order so many other things! The sampler included: Marinated Duck Giblets sandwiched with preserved root vegetables, Crispy roasted Pork Belly, Roasted BBQ Pork (Cha Siu), Marinated Beef Shank w/ 5 spice, Marinated Jelly fish and Black Fungus, and a Marinated Cucumber in peanut

Sha Tin 18 Appetizer Combination $168?
This was an excellent way to sample most of their appetizers. Even though we were five altogether I thought it would be wise to order the 2-3 persons portion, just because we wanted to order so many other things!
The sampler included:
Marinated Duck Giblets sandwiched with preserved root vegetables, Crispy roasted Pork Belly, Roasted BBQ Pork (Cha Siu), Marinated Beef Shank w/ 5 spice, Marinated Jelly fish and Black Fungus, and a Marinated Cucumber in peanut and spicy chilli sauce --> six different dishes in total =) I tried everything except for the duck giblets (they don't appeal to me, sorry).
The Pork Belly were cut slightly smaller per piece than Lei Garden's I think, and I prefer Hyatt's. It was tasty and well-roasted to give it a crispy top and the layer of fat was balanced with the lean meat - not too much of each in the mouth.
The Marinated Beef Shank was good, but nothing special. I have had better or similar versions in other Chinese restaurants.
The marinated jelly fish with black fungus had a black vinegar marinade, with a little chilli oil. It was tasty but I think it definitely could have used more vinegar because black fungus and jellyfish didn't "soak" the flavour of it well enough.
The Marinated Cucumber was my favourite. Although very spicy it was very tasty without being too spicy or salty. And it was appetizing ('hoi wai') - a good preparation for all the dishes that were to come!
BBQ Pork was chopped so that there was a good balance of lean and fatty parts. It had good flavour, but I think the meat was slightly too chewy - probably could have used more time under the heat? This dish was quite sadly forgettable.

Whole Peking Duck - 3 dishes $498
We had pre-ordered this upon booking, so it would be prepared when we arrived. The restaurant has a particular method of serving it. Firstly, the chef came out with the whole duck and then proceeded to slice it, carefully crafting a plate with paper-thin roasted skin, a plate of plain duck breast (only lean), and finally a plate with the three - fat, skin and meat.
The skin-only dish was recommended to be eaten with a tiny sprinkling of sugar. It was almost addictive, like candy! The duck was so well roasted it was crisp even though it had gone cold. The duck breast is for you to wrap with the hoisin sauce and cucumbers etc. The wraps here are significantly smaller in circumference than most restaurants around town, as well as very thin so you can eat quite a few! The fat/skin one is meant to be eaten with the garlic. I tried a very small piece but it was inedible. I guess pure animal fat is not my thing. And the raw garlic mash was way too strong I had to drink tea right after a tiny bit to rinse out the taste!

The duck also came with a soup - although there is no photo for it, it is certainly worth mentioning because it was so tasty! It had cabbage and tofu in a creamy-white soup base which tasted sweet from the cabbage and also very hearty yet light.

The rest of the meat was used to make a diced duck fried with carrots and beansprouts to be wrapped in lettuce cups. The last time i had this was in Loong Toh Yuen in Heritage 1881, and I must say Hyatt's version wins hands-down. Although a little salty when eaten itself, it is perfect if you use the lettuce cups or even the paper wraps for the Peking duck! The duck meat, carrots, spring onions etc were so finely diced I was actually impressed by the knife skills behind it. This dish is seasoned so well I think it may be my favourite part of ordering Peking duck.

Daily Soup $58
This was a small soup bowl of whatever soup is made each day in the kitchen. Today's was the bakchoy with pork and gizzard - it was not bad, but the price is not justified by the work done or the taste.

Poached Country Pork Dumplings $78
These weren't presented very nicely... quite messily placed on a plate. Anyway, they were served with a sesame chilli oil for dipping or there's always the stand-by black vinegar on the table. The fillings were good - try with and without the sauces so you can really taste the pork inside! Hyatt's pork dumplings were much leaner than i expected, which I liked because they were 'springy' rather than 'mushy' in texture. =P

Garoupa w/ Preserved Root Veg $168
This was quite a disappointing dish. I think it should be more accurately name as Garoupa bones with preserved root veg because that is exactly what it was - half of it was bones and the other half was a combination of fish skin and fish meat. The taste was average and the preserved vegetables which were shredded and steamed with it on top tasted like shredded caramelized onions instead.

Tossed Mustard Greens with Beancurd Sheets$88
This was pretty good. I rarely eat mustard greens so this was a change! It was a very light dish as the vegetable and beancurd sheets were poached before being dressed in a light sauce and sprinkled with gorgeous little deep-fried shallots for a crisp texture and flavour.

Lanzhou Beef Noodle Soup $78
This took forever to arrive - we had to ask twice after we had finished all the other dishes before they decided to serve it! But nevermind, the noodles were so so so so gooodddd! Each noodle is different in size because they were 'hand-pulled' (and chopped I'm guessing) but they all have the same lovely al-dente texture. The beef is like beef brisket, nothing special but still very tasty!

Green Tea Tiramisu $58
This tiramisu was very disappointing. First of all, I can do better than this for almost $60! The tiramisu is served in a small bowl. The lady fingers (or possibly sponge cake) is soaked in very strong alcohol - almost like vodka? and placed at the bottom (only one layer), and then the 'tiramisu' or rather, soft almost-liquid sweetened cream is put on top, then there is a sprinkling of green tea powder on top to finish. I know a good dessert when i taste one, and this is no where near good. Sha Tin 18 seems to have misinterpreted what tiramisu should taste (texture wise) and look like


Hawthorn Pannacotta $58
This was another very disappointing version of (another) italian dessert. It looked the part - they served the pudding with a thin caramel candy on top so it didn't look so plain, but the texture and taste was utterly wrong. Pannacotta is meant to be a pudding made of cream and set by gelatine. Their version was flavoured with supposedly hawthorn, which was not bold enough for me to actually identify the fruit. The pannacotta didn't taste anything like the ones I have tried and made, but was almost liquid - it had no 'body', if you will.

Egg Tarts$52
These were the best sweets from the three by far - again it was mis-labelled as regular egg tarts when really they are Portuguese tarts. I could taste the coconut milk in them, and the custard was perfectly sweetened with the right amount of yolk being used so it wouldn't be to runny and ruin the puff-pastry crispy crust. Although my dining companions thought of it as being slightly too sweet i loved them.

I would like to mention a little bit about the service again, because they were quite clearly understaffed. It was hard to get their attention at many times during the night because they were often occupied, and only a few seemed to be able to take orders well. Although all were polite, they weren't quite friendly enough - esp the one who is meant to for he was I believe, the manager.

Also, the taste rating below applies to the savoury dishes only. The Peking duck and egg tarts are definitely what I would order again when I next visit Sha Tin 18 because they were honestly to die for! As their dessert menu is so long, a bad tiramisu and pannacotta won't turn me off but I simply won't order these again.

The bill came to around $1500 for 5 ppl which is quite reasonable for a classy Chinese restaurant. The dishes were not huge in serving size either like many Chinese restaurants (zau lau), but this is in a way good because we were able to order many dishes amongst the five of us.

厚街臘味魚餅 : 腊肉刴碎混入魚肉內,目的是遮掩魚肉的腥味,再加上煎封後,帶有一朕香氣,能有一碗白飯相伴就好了.

炒泮塘五秀 : 第一次接觸,是鏞記的炒五秀,選取時節的蔬菜類清炒,可以說是沒有一定的配料,任由廚師主張,有時用銀杏,有時用蓮藕不等,今次選上馬蹄, 蓮藕, 紅蘿蔔,蜜豆及菱角等,清爽而又香甜,但油份多了點,畢竟是一道健康菜,就要健康到底.

手工哨子麵 : "哨子"一詞,經理解釋是山西人對麵條的叫法,是耶非耶,有時間真的要查查.麵是一流,但醬汁是用紅蘿蔔粒,冬菇粒及肉粒同炒,鈎玻璃茨夠薄,不過無味,奇怪.

北方飄香炸醬麵 : 同港或滬式有點不同,肉絲是比較少,而醬汁是用面豉醬味道醬料來做,非常油膩而且好咸,仲要係死咸,麵條雖然較粗身,但柔韌軟熟,搓揉功夫一流.

手拉牛肉麵 : 算是正常少少,不過牛肉炆得不夠稔,亦不夠香,大概香港人給台式牛肉麵同化了.口味標準也變得差不多

農家巧手肉餃子 : 汁液不多,包得飽滿有彈性,肉質豐腴,果然有水準.

酥脆香鍋貼 : 即叫即煎,外皮煎得微焦,外脆內熱,鍋貼內汁液充實,咬一下是"辣"得要放口,少見的效果.充滿肉香又皮脆肉嫩,多來一客都不算過份.

填鴨 : 開放式廚房,能親眼目睹燒鴨出爐的情況,由入爐到上檯,一直都在食客的視線之內,真是想偷懶或污穢一點都不可能.廚師將鴨出爐後推到食客旁邊,然後分三階段給食客享用,一般食肆是絕無可能辦到.

鴨胸皮 : 完全沒半點鴨肉,只有經烤焗後的鴨皮,脂肪已經溶化,服務員再三叮囑要蘸點砂糖,起初都有點摸不著頭腦,誰知竟然有一種入口即溶的感覺.

鴨胸肉 : 到了鴨肉, 用上傳統食法, 包著粉皮, 加海鮮醬一起吃. 純肉部份比較粗糙,惟有點醬汁遮蓋.

鴨腿 : 肶位肉是較厚,適宜用粉皮夾上京蔥,青瓜絲澆上醬料一齊食,幾種口感交雜,有香,脆,甜,滑及豐腴.

三種不同部位,三種不同的處理方法,將食烤鴨帶入另一個層次,令人大開眼界,難怪是招牌菜.

杞子桂花糕 : 奇怪地用玻璃杯盛放,有時外表不太重要,桂花味清香,入口清甜.

蜜餞柑桔燉蛋 : 蜜餞與蛋的結合,其實幾膩,但微酸的柑桔,將味蕾的感覺提升,消減了過膩的口感.

服務是跟得足,不過只限於訓練有素,未能即時變通,就如第一碟食到有砂,客人表示不滿,而不是無理取閙,只不過想取消出事菜式,但經理是堅決不肯,直至第二碟依然有同樣情況出現先讓步,未免有點迂腐.

碟頭偏細,收費偏高,但真的有一定水準,希望能進一步改善,特別想提的是,茶壺實在太重,換一個輕少少的好嗎?

這間餐廳玩 Open Kitchen,好新派;環境和燈光都令人好舒服,酒店嘅招呼就唔駛講啦!這晚我們兩個人點了一個冷盤、兩個小菜、 一碗拉麵、一杯紅酒同一個甜品,連加一盛謂七百大元,酒店來講都不算是貴啦!餐酒:朋友是好酒之人,是夜他選了智利出產,用 Pinot Noir 釀製的紅酒,說這種葡萄釀出來的酒味道較 Dry,這隻酒很好飲,很滑和順喉,八十元一杯,不貴。冷盤:木耳拌蜇頭,味道洽到好處,碟頭沒有想像的細,海蜇頭也有十數顆,一不點也不寒酸。主菜:頭菜東星骨腩,東星蒸得剛剛好,滑得嚟還有點彈牙的感覺,沒有過多蒸魚豉油的人做味道,用頭菜的淡淡咸味帶出東星的鮮味,高!彩椒咕嚕肉,一個本來很普通平凡的家庭菜,竟然是最有驚喜的。此菜外貌平凡,都是一般的鮮橙配點點紅、綠、黃。挾一塊肉入口,一咬之下,熱熱的表面有點甜脆,就好像是咬開一片甜品薄薄的焦糖面一樣,跟著的肉很腍軟,一下子就能被咬開,一點筋也沒有。奇就奇在表面跟本看不出有撲粉的跡象,肉的腍軟並不是靠用鬆肉粉的力量。應該是用精選的腍豬肉,醃肉後只意思意思的撲上薄薄的乾粉,用很滾的油鑊,在很短的時間內,快速地把表面炸脆,而豬肉剛剛熟,肉汁還被

麵食:

手拉牛肉麵,侍應哥哥的推介,平時也會在國內吃到手拉麵,因為他們搓粉時都下了拉麵精,令麵糰更易拉,出品亦比較軟滑,但卻很不健康;這裏的真材實料,沒有添加,因此也比較平時吃到的粗硬點,但其實更健康正宗;牛肉倒沒什麼特別,但最精彩的是那湯頭。平時炆牛腩或煮牛骨湯都會落大量的薑和一點花椒八角,一來鮮香些,二來去腥味,我平時也很喜愛這些香料的味道,不過這碗湯卻沒有花椒八角的香料味,起初喝好像少了點什麼,慢慢細味下,平淡之中自有一股濃濃的牛肉味和鮮香的牛膻味,並不比有香料味的遜色,實是平凡之中見不平凡!

甜品

蜜餞柑桔燉蛋,平時不喜歡吃燉蛋,因為感覺很膩,但這個甜味的配撘很好,柑桔的酸味能中和燉蛋的甜膩,很清香,一點也不膩!

我個人應為,這裏的廚師喜歡原汁原味,盡量利用配料的天然味道帶出主菜本身的鮮味,所以食物都比較清淡,但細細品嘗後又覺滋味無窮;碟頭比一般高級餐廳大點點,價錢比一般的酒店要低點點,所以算是很抵吃的了。


如果有四人以上,可以試試他們的招牌菜:北京烤鴨,加一後大約六百元左右一隻,可叫半隻,需要預定,那天我們便見有很多枱客都有點,但我們只得兩個人,所以下次人多一點時再試吧!

因為有$1000 redemption 的 关係,又book 唔到buffet 食,誤打誤撞下黎試試沙田18最出色o既係北京填鴨,一味3食。包括傳統既鴨胸皮+沾砂糖吃 鴨胸肉+包著那粉皮,+蒜汁+醬->很有北京風味鴨湯鴨崧生菜包->很乾身,讚咁既$,有咁既質數真係唔錯另外再讚就是fusion 甜點山楂奶凍 龍眼花生巧克力餅紅棗旦糕->要等,不過超讚茉莉花雪糕, 白芝麻雪糕-> 很可惜冇外賣醬汁: 芥末油, XO醬, 豆豉辣醬油, 豆瓣醬都很不錯

是次為食入新界小局, 選擇了係大學站凱悅酒店既沙田18, 據聞此店請了一名有水準既京菜大師. 而其片皮鴨亦是名物. 酒店中菜廳, 價錢通常到比較貴. 近聖誕了, 飯局多多, 而且價位高又難以吸引到一大班人去開餐. 是日, 只好由食友發版, 主攻其 a la carte, 不給他們準備, 不訂特別菜式. 一於照 menu 點菜.我同朋友Gillian, 因為不能準時放工而遲了一點來, 落單食什麼都沒有給意見. 幸好, 來到時, 剛好是上第一道菜, 名字又奇怪又新界的 鄉下仔田魚蝦毛. 本來是一道非常香口既小炒兼佐酒美物. 不過食友投訴食物有沙, 所以幾好都假, 係有問題就要出聲...之後再做過碟給我們. 之後是幾味小菜, 份量細唔怪佢. 付了咁多錢, 滿足不到味蕾事大. 按圖片順序, 彩椒咕嚕肉, 厚街臘味魚餅, 炒泮塘五秀, 同重做的鄉下仔田魚蝦毛. 咕嚕肉, 在外國生活過的我已經對此物食到冇哂感覺, 雖然正宗做法同外國Modified既做法好不一樣, 但最重要是甜酸並重, 這裡的, 比較乾身少汁, 而且肉沒有沾上一屠厚厚的炸粉. 呢個咕嚕肉, 算是合格.

厚街臘味魚餅, 每人只一塊, 但感覺上, 只是普普通通. 名字是厚街....是東莞菜嗎? 魚塊腥味不重, 混了臘味啊, 但feel唔到佢用了什麼臘味, 只知道咬落去, 口裡有少少的臘腸味硬粒而已, 不是看了單據, 我根本唔知自己食緊乜.

炒泮塘五秀, 只是美其名, 其實只是炒五蔬. 有馬蹄, 蓮藕, 蜜豆等5種蔬菜. 味道非常之清淡, 像我這個能食素之人, 接受到清淡菜式既, 會覺得不錯, 若大魚大肉慣了, 未必接受到這種近乎冇味既菜式. 但慣了清淡口味, 這個菜. 能讓食者, 食得出蔬菜既原有味道, 我覺得是不錯的.

氣憤的一道菜 (見第二段), 鄉下仔田魚蝦毛, 上一碟有沙, 我們發現後, 經理連忙Sorry 前, Sorry 後, 幫我們換一碟新的. 不過, 都係果D料, 都係果個味道, 都係有人食到沙粒......最後都係叫經理拿走. 蝦米, 田魚 洗不干淨的就不要serve出來了.

再來, 也是麵. 京味炸醬麵同陝西哨子麵. 炸醬麵, 醬同麵分開上, 麵身就非常好. 不過, 慣常食的炸醬麵, 是帶有一點辣味的, 然而, 這個炸醬麵, 只有咸, 係好咸, 說誇張一點, 像是麵豉醬撈麵.....陝西哨子麵, 根據經理所說, 這是西安的地道特色, 用了蘿蔔, 肉粒等, 炒了一個醬, 再撈上面, 可能不合胃口吧, 唔覺好食.

食完麵, 是晚主角來了, 是沙田18既填鴨. 熱乎乎的端到我們檯旁, 我們拍完照後, 師父開始對隻鴨進行凌遲酷刑. 師父說有一鴨四食, 先是鴨皮, 鴨皮, 侍應姐姐解釋個食法俾我地聽, 原來食這個鴨皮, 不用包, 在皮上洒少許糖, 入口即溶. 果然是加了糖的皮比較好食, 亦真的是入口即溶, 非常鬆化, 再試多一塊沒有加糖的, 油"益"味好重, 但加了糖又冇事. 果然是妙.

之後是皮下的鴨肉, 是用傳統食法, 包著那粉皮, 加醬一起吃. 純肉部份就冇乜味道啦. 只好加醬包著食.

另一食法, 就是回復平時食慣那一種方法, 皮下帶肉, 加醬, 加瓜, 加蔥絲, 包著一起食. 有皮有肉, 有脆口, 有肉, 不錯. 雖不及祥記, 美利堅, 但呢個鴨, 係香港都算是數一數二的.

仲有鴨鬆, 不過我冇食.

加食時段, 叫了一個揚州炒飯. 我們食得出是用熱飯炒的, 所以帶點濕氣. 而且我食出有點煙味. 不計那不太習慣的煙味, 整體上算是好的, 而且, 用熱飯炒飯, 是幾考功夫的, 這裡的炒飯算是不錯吧. 只是陣煙味唔係幾慣.

有甜魔會成員, 在方圓百里內沒有其他甜品屋, 所以dessert time, 都係要係沙田18搞掂. 點了兩味, 杞子桂花糕 同 蜜餞柑桔燩蛋. 燩蛋感覺有點Fusion, 像西式的燩蛋, 但有中式的味道. 而桂花糕, 味道清香, 淡淡的, 食得出清香的桂花香味. 甜品方面算是不錯.

沙田18, 看來是有水準的餐廳, 但沒有特別定餐, 靠平日的 a la carte, 又總覺得差咁D野. 若一早定好餐, 試一試度身訂做的菜, 可能會有另一個評價.

「十二‧十七‧十八」呢個標題可以話有意思又得,無意思都得,其實我只係將一D有意思既數字擺埋一齊就成為左呢個標題。今晚,我地係十二度既十七號晚上到訪沙田十八,原因是因為慶祝我大學畢業啦。沙田18久聞其名,有人已經向我推介多次,但一拖再拖,終於和家人決定今晚來這裡吃一頓好的。於大概五天前預訂也沒有問題,由於只有三個人,所以只訂了半隻北京填鴨。大概 7:30 來到,也不是很滿,大概只有50%滿吧,店員帶了我們到較內裡的位置,唯一美中不足的是那個位近它的另一邊出口,不時有風吹過,真的很凍呢。等了很久很久,填鴨才來到呢! 店員也有道歉說還未可以,只是我們亦不趕時間,所以就叫他們不用急著上菜。終於望穿秋水,有得吃了! 師傅在我們面前切切切,刀工真的很厲害! 分三部分吃,店員也有詳細解釋,真的很不錯。先講鴨胸皮,店員說是沾砂糖吃的,嘩,這個真的入口即融,我們真的很好奇為何會這樣呢? 帶點點炭燒的味道,真的很不錯! 雖然它底下有一層脂肪,但食的時候是完全不覺的,因為一放進口中它就已經融化了。另外再分鴨胸肉和鴨腿皮連肉,這個一樣沒有問題啦。後者店員建議可和蒜一起吃,但我個人覺得蒜的味道太搶了,蓋過填鴨的

另外再分鴨胸肉和鴨腿皮連肉,這個一樣沒有問題啦。後者店員建議可和蒜一起吃,但我個人覺得蒜的味道太搶了,蓋過填鴨的味道呢! 大家也大讚不錯,媽媽還說比北京全聚德的還要好吃。另外他們把鴨崧和芽菜椒絲等等混在一起再加生菜包,這個是真的很好吃,我們全部人也大讚,因為真的炒得超惹味,爽脆的生菜中和了點點辣的味道,是真的好吃的! 沒有騙你們!

另外我非常超過推薦花雕蒸鮮雞,這個是我覺得整晚最美味的食物,雞肉非常嫩滑,而且吃的時候充滿著花雕的香味,絕對沒有蒸發掉,喜歡花雕的不可錯過。它還有紅棗杞子冬菇等藥材,真的很香的。初吃第一口覺得有點淡,但待雞肉浸久一點的時候,香味就完全進了雞肉裡。店員說是用上三十年的靚花雕,所以味道絕不欺場! 這個真的是我的誠意推介。

另外我們還叫了寮步豆醬燜腩排和炒五秀。寮步豆醬燜腩排我覺得還可以,但不是特別突出,腩排有肥有瘦,有肥肉那些真的很嫩滑和香口。瘦那些也不至於很難咀嚼,也是易入口的,但當然沒有肥腩排吸引了。我覺得豆醬略嫌較淡,我想大概是酒店要將就外國人的口味,所以味道不會太濃。炒五秀是我們想炒個較特別的菜,其實它是挺好吃的,味道很清淡適合我們這些不停吃肉的人。只是它有些材料例如淮山,菱角等等吃下去很粉,並不適合送飯。馬蹄和蜜豆也不錯,很爽口和清甜,算是可以調劑一下。

它的白飯可是很大碗的,我和媽媽每人只吃了半碗也夠了,剩下的全給哥哥吃光光。不過它的碗很重呢,令我吃的時候有點吃力,哈哈。最後來了個鴨湯,其實味道是不錯的,只是不知是否有鴨尾的部分,所以有一點點羶,但是可以接受的。

原本我們還說要吃甜品,但吃畢這些東西我們每個人都非常飽了,所以最後決定留待下次。服務當然是非常好的,所有服務員整晚也是笑咪咪的,而且很詳細解釋和友善,又問我們食物好不好吃等等。吃畢每人二百多元,於酒店來說當然不算貴,我們也說下次再想食填鴨時會再來呢。=)
