This is one of the few places in HK i've been to eat ramen where it feels like an authentic Japanese ramen shop.... it's location has an authentic feel about it too, like a suburban ramen shop in a lane in Tokyo, i liked that idea, it took me back to my days when i lived in Japan.... bench seats that overlook the chefs work are essential (Yokozuna has a similar feel in Yau Ma Tei)... ramen came quickly but not with the gyoza which was a bit irritating, i must have the gyoza with the ramen at t
menu - no english so i went with pics, they really need to do a translation.
ramen - noodles were el dente, a little too el dente, but still good.
soup - i ordered the strong soup - nice thick texture like tonkotsu but it lacked some punchy flavour, the soup at other places is better.... soup is so important for ramen, it's the centrepiece of any shop's reputation so this needs some serious work
chashuu - excellent pork - just fatty enough and thinly sliced
egg - oh yeah the soy egg was awesome, really delicious
toppings - the negi was not enough and not flavourful enough, maybe another strain of negi could be used
no menma which was disappointing, i do like the menma...
gyoza came too late so i sent back - HK ramen shops must realise that Japanese gyoza is not deep fried, it is cooked in a pan with only one side crispy, the other sides must remain soft - this is real gyoza....
Definitely will return to try other flavours but note the above ramen was $77 - not cheap
Overall ambience and service was good, the bench seats a bit tight for a big guy like me but hey it's a small place so that is cool...
