I liked this bowl of noodles. First the noodles were thick which I like. They give more texture, and they don't get too sloppy soft being in the hot soup too quickly. I chose the texture to be hard, again, I hate sloppy soft noodles, it just gets like watery dough. I liked the noodles here, the hardness was exactly how I wanted. The soup was not as good as I expected, it wasn't bad as it tasted with 木魚, it gives off that authentic Japanese taste to it. Obviously stronger taste and bit saltier. But the soup was not thick like other Ramen shops these days, where it is so thick, the soup leaves a plastic collagen texture in your mouth. This soup is less dense but still packed with flavors.

The boiled egg was really disappointing. Especially to find it cooked. I was expecting it to be just a little raw. But it was all cooked. And BOTH of them was, whole point was to taste the raw egg yolk. The egg was some what egg tasteless, and boring. They did not come with the ramen so we had to pay extra for the egg, which not many ramen does no include the egg. A bit of a rip off I think.
'It is a small little place with only bar seats which I like. It seems more 'Japanese Authentic' ramen shop. There is about 10-12 seats on either side bar. Everything was clean and neat. I think to improve the atmosphere, should have more Japanese decorations or play some Japanese music like other Japanese places do.
All the cooks had to wear their uniform, which was just a blue T-shirt with 'Ramen Jo' written on it. I like the simplicity but it has lack of design and doesn't remind people of being Japanese. Maybe that was the whole point? Compared to the other Ramen place in Tai Hang, their decorations and smal details were much more Japanese theme.
We were greeted as soon as we were walking into the shop. I like the nice gesture of being acknowledge and was shown to our seats onto the other side.
A girl waitress came over with the 'usual' menu and the 'special menu with two special seasonal ramen. And briefly introduced the ramen. The girl was polite but like always lack of friendliness and smile factor. Which i think if she did have that, it would be better service. We did order one egg each, but turned out she had forgotten one. But when we mentioned she apologized and quickly put the order in. When we left, they pleasantly said 'Thank you'
Verdict
Service here, is above average I must say in Hong Kong standard but it could be better if they want to become a top notch in the Ramen industry in Hong Kong. Firstly, more interaction with costumers to make them feel more homey and relax. Secondly, smile more and be more helpful espcially to people who comes here for the first time. This way they enjoy the experiement more and will want to come back.
