For French fine-dining, the amuse bouche is very important as it gives you a glance of the meal and defines the chef’s style. The amuse bouche is commonly in bite size but in ÉPURE, they chose a more dish-like style to showcase the chef’s style. A contemporary and uncomplicated style to showcase the finest seasonal ingredient. This mackerel is fresh and the carrot puree and English pea give some sweetness to wake your stomach.

What I wish to highlight more is the bread and butter. I love the cheese croissant so much that I ate 4 of them. Their home-made chilli butter is a perfect match as well. I wish they could do retail for their pastry so I could have it as my daily breakfast.


Beef Tartare

My favourite dish from ÉPURE😍 This beef tartare used two kinds of beef🐂🐃: Japanese Wagyu and French Polmard. They both give distinctive flavours and textures to elevate the tartare. The little mustard with slight sourness and aroma really works well with the raw beef.

In terms of texture, this tartare is amazing. Chef added onion🧅to give some crunchiness to the fabulous beef. And instead of toast, they use chicken skin chip which is my first time trying this combo. I usually don’t eat chicken skin but I can’t stop eating this one.

I love the presentation of ÉPURE a lot that they feed you not only the stomach, but also your visual👀 From the pictures, you could tell when they decide which ingredients to be used, they take colour into consideration. The red vibrance of the stewed pork and the shades of beige from the dover sole. The stewed pork tenderloin is so soft and juicy like a beef.

The dishes are equally good on palate. I especially enjoy the octopus🐙puree with the fish that it gives extra umami to the dish.


Pistachio Soufflé

The pistachio flavour is totally a pleasant surprise to me. Being a big fan of pistachio dessert, I have never imagined pistachio in soufflé but they totally nailed it. The flavour is so good that I forget the ice-cream on side😂

The soufflé is so fluffy which you can see from the rise. The centre is super airy and moist which are all you need for a soufflé. Btw, please do take your time for photo or the soufflé will collapse when cool down❗️

Last but not least is their signature petite four. It is so lavish a like mini afternoon tea. Even though I am already sooo full but I still manage to finish all. The almond macaron is just the best😍
