A friend of mine is writing a Hong Kong guidebook, so I got to tag along for some classic goose taste-testing. I work in Tuen Mun and once lived in Tsuen Wan for a year, but this is an area of town I have never set foot in. There was no wait for a table on a Monday at 6:30pm.The mascot of the restaurant is on the sign and the menu and all the plates. It's a psychopathic goose who seems to be in the process of roasting his brothers and sisters. And he's really chipper about it. Tuen Mun is known
The sauce it's cooked in tasted to me like chu hou sauce: soy, sweet, and anise. The skin is really crispy and to me hard to chew and eat. High-calorie and low reward, I thought. The flesh is nice and meaty, a little less tender than I'd've thought, and like all Chinese poultry, suffused with bone shards. It comes swimming in its own fat... make of that what you will. I liked it and thought it was flavorful. Really good: B+
Anyway, the flavor of the kidneys wasn't much, this is really a texture dish. It comes with tons of fried garlic. Rating: W for whaa???
I thought this place was good. I'm not a goose connoisseur, but I prefer this to many of the Peking ducks I've had (though there's something to be said for the taco eating style). I'd go back, but I doubt I'll ever crave it. I'm willing to say it's goosetacular because that's not a word. In English I'd say good: B
题外话/补充资料:
What is with the loudspeaker announcements? Are they horoscopes? Horse race results? Play-by-plays from the kitchen?
