I'm a fan of fish maw chicken soup - full of collagen, thick texture, rich chicken oil. Googled fish maw chicken soup in Hong Kong and this restaurant was recommended by several editors.The soup was rich, but they put too much MSG inside probably because many customers are not used to having hotpot with a non "flavorful" soup. I prefer having hotpot without dipping any sauce because I don't want the original flavors of the ingredients (if they are good quality) to be overwhelmed. The chicken was
The soup was rich, but they put too much MSG inside probably because many customers are not used to having hotpot with a non "flavorful" soup. I prefer having hotpot without dipping any sauce because I don't want the original flavors of the ingredients (if they are good quality) to be overwhelmed. The chicken was divided into pieces before serving. The texture was very tender since it was pre-cooked as part of the soup ingredients. The fish maw was big, soft and had absorbed a lot of the chicken flavor.
Chinese chive dumplings were tiny with mainly chives and very little meat inside.
Wouldn't say it had really good hygiene because there were still stains on the induction cooker. The restaurant had simple design with white lights, and plastic wrap on tables for easy cleaning like a dai pai dong. Kudos to the service team - attentive, patient and detail-minded. If they could make a customized soup with no MSG then I would definitely visit again.
