如果没记错是36hkd一碗,份量真的有点差强人意,但云吞还是很惊艳,虾仁完全是爆开的感觉!位置很好找,中环站D1出口下来走几步就到,服务生阿伯感觉还是有店对大陆游客不友善阿><Anyway 这是一家不错的小食店。

我係好鐘意食雲吞,可對於一般雲吞中那微量豬肉深感鬱悶,蝦仁餡——極度鐘意,那點豬肉——極度討厭,於是雲吞就係一種令我又鐘意又恨美食.而麥奀記,真係好鐘意你,因為你雲吞,裡面,是,不含,豬肉!!!碗淨雲吞真係好細,就係我家食飯嗰種碗,碗裡面細細八隻雲吞,熟透雲吞皮透亮,裡面透出蝦肉粉粉顏色,太撩人.咬上一啖,好細,都唔捨得咬大口,怕囫圇吞棗食唔出味道.哇,蝦真係超大,超級新鮮,而且彈牙!冇那點豬肉,心定著食,覺得呢個天下最美雲吞——之於我.而且那雲吞皮絲毫唔遜色,帶著微微鹼水味道,色澤偏黃,就係我鐘意嗰種面皮味道.個湯亦是冇話說地鮮甜,鮮味十足.一碗還未食完,趕緊再點上一碗吧!其實我還可以再食好幾碗,因為真係好細,但礙於夜晚還想宵夜就作罷.七十幾蚊一個牛腩,是紅燒,都好好食.那碗雲吞麵是給個friend叫的.

迎來我的第四百篇食評, 真沒有想過這麽的快, 多謝openrice比賽, 令我速打了這麽多篇。今次的齊頭文選上了這家曾是香港第一, 無人不識的雲吞麵店。麥氏家族的經典, 亦與忠記一脈相承, 源自廣州池記。之前說過了香港池記, 麥兆記, 麥文大哥, 還有忠記, 怎樣也輪到了麥奀吧!!麥奀近年發展迅速, 其雲吞麵世家已打入了西方企業營運模式之中。老實說, 我是一家分店都不會踏進去的, 要食, 就要到老店食。是心理作用?! 非也! 雲吞麵條可預先做好, 煮麵的師傅卻只有一個。雲吞麵不是日式拉麵, 不是教上3分鐘鬧鐘就人人可做, 煮麵要看情況, 要知輕重快慢。今次要上的是個淨雲吞, 大地魚, 鮮蝦頭殼, 點點蝦籽, 長時間的火候, 全部都呈現湯中。鮮味, 涼熱適中, 加些胡椒更有鮮味。韮黃爽口, 雲吞皮滑可口, 內餡蝦隻不大, 夾雜肉膠, 味道有肉甜香。咬下, 解開滑溜的皮是活力彈性的蝦肉。做這裡又豈止一個淨雲吞。看見隔鄰有一碗湯便知有個撈麵吧。要嚐麥氏經典, 雲吞之外, 炸醬也一流。這個炸醬與忠記的同出一轍, 肉絲用上肥瘦肉排, 有1肉香也有炸香, 不油膩。甜酸辣調味平衡, 香口而不乾。撈上

今次要上的是個淨雲吞, 大地魚, 鮮蝦頭殼, 點點蝦籽, 長時間的火候, 全部都呈現湯中。鮮味, 涼熱適中, 加些胡椒更有鮮味。韮黃爽口, 雲吞皮滑可口, 內餡蝦隻不大, 夾雜肉膠, 味道有肉甜香。咬下, 解開滑溜的皮是活力彈性的蝦肉。

要嚐麥氏經典, 雲吞之外, 炸醬也一流。這個炸醬與忠記的同出一轍, 肉絲用上肥瘦肉排, 有1肉香也有炸香, 不油膩。甜酸辣調味平衡, 香口而不乾。撈上全蛋銀絲麵, 麵條要爽, 一口生動的彈性沾上甜酸辣汁醬, 惹味一絕。雖說麥奀與忠記是同出一轍, 但是調味平衡上也有出入, 不過各有風格。個人來說, 我較喜愛忠記的!!

雲吞皮薄, 蝦肉爽脆味鮮, 保持一貫包法, 別俱特色的金魚散尾,
麵質蛋味香爽口, 最重要沒鹼水味. 大地魚湯底咸鮮味適中. 感覺找回童年回憶!
很多食評投訴麥奀記的雲吞麵細碗, 價錢又不平宜, 但一碗用心炮製的雲吞麵和一碗$10大大碗的雲吞麵比較, 實在有點對它很不公平.很欣賞Openrice一位殿堂級食評家給它的評語 "就是愛它小" "吃米要知價" 說得真好!
這裡服務也不差, 相比一些名食肆老伙計的服務態度好多了! 我和伙計閒聊間, 証實了佐敦分店不是A貨,
一直以來老店也收到不少投訴, 原因.....?  我只知道日後要食一碗有那些年....味道的雲吞麵, 只好移船就磡了!

星期六跟太太行經中環食午飯,原本打算食沾仔記,但人太多了,見對面麥奀記有位,就決定試一試。其實入去之前都有心理準備麥奀記d野細同貴,但見未試過,而又好似幾出名,亦都是入去試的原因。坐下之後看看餐牌,三十三元一碗雲吞麵。價錢上是偏貴的,但仍可接受。便點了一碗雲吞麵再加一碗牛筋河。另外點了一碟油菜,油菜收二十四大元。麵上桌,便了解到什麼是細同貴。碗雲吞麵的份量是只是一般酒樓用的小湯碗大一點點,簡單地形容,一碗沾仔記起碼分到兩碗麥奀記!單是麵的份量,我兩、三啖就吃完!如果平時能吃得完一個正常份量飯盒的話,在麥奀記我相信要吃至少三、四碗麵才會夠飽。如果這樣算的話,這裡的麵就是超貴了!如用比較容易去比較的汽水,同樣是有名的麵家,例如好到底或安利等,他們都是賣七元一枝,而麥奀記就賣十三元一枝,差不多貴足成倍!之後加了一碟蠔油撈麵,收三十三元,佢地夠膽死真係淨麵加’peg”蠔油就算,莫講菜,連蔥都冇條。粗制濫做!論味道,麵本身係爽的,而湯底亦算不錯,湯味很濃,而且湯底本身真的有一點蝦子。但如果憑這些就以為有恃無恐。相信以現今食客的質素,想長時間維持並不容易!以差不多五星酒店價錢去一間講不上有裝修的雲

After seeing this on the Travel Channel and reading so many rave reviews, I had to try this place. I decided to go late to avoid lines. And at 4PM, there were no lines, but the tiny place was still half-full.Prawn Wonton Soup with Noodles: The noodles are thin, around 22-24 gauge, and very springy. Being used to ramen, it seems awkward to have noodles like this in a soup. These would be great wok fried, where that texture is an asset. The wontons are fantastic with soft but firm skin that breaks

These would be great wok fried, where that texture is an asset. The wontons are fantastic with soft but firm skin that breaks to reveal a juicy prawn. The broth is medium bodied with a pork/chicken base. The onions (which I'm told are essential to prove authenticity) add a touch of pungency.

香港有幾間出名的雲吞麵店,麥奀記、何洪記、羅富記、麥兆記、正斗等等。各間名店,不同人各有所好,而我則認為其實在競爭極大的香港食肆來說,能維持五年以上經營時間的店,一定有它的過人之處。麥奀記雖然很多男士起碼要吃兩碗才稍覺飽肚,但以女士來說,則份量適中。我親眼見過伙記把一大盆的麵,人手一小撮捲為一個個麵餅,只是這份量好一碗份量的標準,已令人感動。今天只惠顧一碗雲呑麵,麵夠爽、雲吞蝦夠爽、湯夠鮮,到老店就是可靠、窩心。

This is a very famous wonton noodle shop with branches all over Hong Kong. It must have been around for ages. This used to be my parent's favorite noodle shop.

It's bright and clean. The waiters were professional and polite. It's smaller than Tsim Jai Kei right across the street but the place on the whole was much more spacious here.

They only do egg noodles, essentially wonton noodles or dumplings - focused.

I ordered a wonton noodle and some veggies (Kai Lan - aka Chinese kale).

It came after a short wait. Note the presentation - apparently, the traditionally way of serving a wonton noodle is to keep the wonton at the bottom part of the bowl on the spoon, elevating the egg noodles above the broth so as to maintain it's springy texture as long as possible.

The noodles and wonton were very good. The noodles had no alkaline taste at all, but the fresh (duck) egg taste was pronounced. Even more noticeable than Wong Chi Kei and Wing Wah; much better than Chi Kei (not as chewy as Chi Kei but the springy texture was still decent.)


The 3-4 wontons basically had prawns only. The prawns were fresh and the wonton skin were smooth, thin and without any alkaline taste.

The wonton broth had a pretty saline flounder taste, fortunately balanced out by the fresh chives. Pretty aromatic.

Even though the size of the bowl of wonton noodles was small (in accordance with tradition), the quality of the noodles were very good. I think it's worth HK$33.

The Kai Lans were very fresh. Nice and crunchy without any bitterness. Very good either with or without oyster sauce.




Prawn roe lo mien:

I initially intended to order another bowl of wonton noodles, but finally decided to order lo mien instead. I ordered this for two reasons, one for the sake of my little quest of comparing wonton noodles and second (in fact the real reason), I was still very hungry after the wonton noodles:

The prawn roes were quite flavourful, even better than those at Wong Chi Kei's. However, those at Wing Wah's were better.

The broth for the lo mien was similar to the one used in the wonton soup but with a layer of oil on the surface. I wonder whether this might improve the texture if the noodles were dipped into the broth?

The noodles for the lo mien, unfortunately, had some alkaline taste, which was bad.

I think the prawn lo mien at Wong Chi Kei's and Wing Wah's were better.

The bill came down to $104.
I enjoyed the wonton noodles and the veggies but not the lo mien.
Perhaps ordering two bowls of wonton noodles?

這店很出名了,但第一次來,一個人來!碗真的細碗,份量不多,麵很有咬感彈牙,爽口的!!雲吞不大隻但足料!真的有一隻原整的蝦!!湯很好,很香,我飲晒了!服務就不能要求太多了,一個人要搭枱,感覺很街邊風味但當場不是正面啦!中性啦!太細碗了,超好吃!!!!食完一碗必定不夠飽,要找其他東西吃!!

The one at Central is ok. But The one at Casueway Bay is ill.I ordered a dry noodle with shrimp roe with sauce (蠔油)on the side but they put the sauce on the same plate. So I asked for another plate but I was given my a small plate which was used under a cup but not to dine. Then I asked again I was given a plate with oil on it. Then I said I just want a plain plate! Then your staff rebuked that the noodle is supposed to mix with the sauce. She then talk it loud to her colleagues about this and

I'm no expert on wonton noodle soup, and I can't say how this place compares to others in the area. I can say that, in absolute terms, it’s pretty yummy. We came here on Sunday around 12:30 for lunch and there were plenty of seats. I'm no expert on wonton noodle soup, and I can't say how this place compares to others in the area. I can say that, in absolute terms, it’s pretty yummy. We came here on Sunday around 12:30 for lunch and there were plenty of seats. We got a two-person set (set C, I think) for $160 that came with:

Two bowls of beef brisket noodle soup: The beef is tender, nicely marinated, and very fatty. The noodles are plentiful and firm; I think they were much better texture-wise than similar wonton noodles I’d had in the past. The broth was rich and very meaty, deep brown in color, a little bit greasy, and salty as well. On the table was a thick sauce/ paste that was very spicy, and really livened up the soup. A

One bowl shrimp wonton soup: The wonton soup didn’t contain any noodles, just shrimp wontons, green onions, and broth. The shrimp wontons were not particularly remarkable, but definitely serviceable. The broth in this soup was, in my opinion, the most flavorful of the broths we were served, though I can’t recall what made it so. A-

One bowl pork & shrimp wonton soup. These wontons were exciting—they had big pieces of marinated pork and shrimp in them, and were pretty tender and yummy. The broth of this soup was disappointing though. B

The set also came with a crunchy, bitter Chinese green (Chinese broccoli? choi of some sort) and some oyster sauce for dipping. I focused on the soup more because it was more exciting. B

Overall, I’d give the place an A. The people seemed real friendly, and the guy filling up the tea was very attentive.

這雲吞麵店標榜自己是雲吞麵的始祖,是傳統的雲吞麵世家。叫來一碗雲吞水餃麵($42)雲吞有3粒,每粒的SIZE 都一樣細細粒,應該有一隻蝦,之於水餃,有兩粒,分別是多了點木耳,有點咬口,整體不過不失,唔明點解要賣$42咁貴?

牛根麵:牛根熬得軟腍,膠質很重,微微“漿”著雙唇,很滿足。麵條與剛才細蓉的一樣,也是較爲腍身,但是這個吸收了湯底中牛根和牛腩汁的精華,香濃極了,當然爽口麵條會比較好。

這日想在午餐前吃點輕食,這時腦海中浮現的就是麥奀美味又袖珍的雲吞麵,作為小食剛好。早上十一時多,只有數枱看來應該是遊客的顧客。我就點了一碗雲吞麵,$32碗,只需等數分鐘就有得吃。麵條幼身,煮得時間剛好不會過軟。雲吞一碗有4小粒,雲吞的蝦爽甜新鮮,雲吞皮很滑,好吃。一碗雲吞麵不消3、4啖就食完了。小食多滋味,吃得滿足。
