大中華火鍋由舊舖時已經開始幫襯,係我食蒸氣火鍋嘅第一間,重開之後亦已經幫襯過好幾次。我覺得蒸氣火鍋要食到精髓所在係要逐樣蒸,蒸完即刻食,咁樣至可以控制到剛好熟而又夠熱,而唔係好似蒸籠咁好幾層一次蒸熟再慢慢食!而我最期待嘅就係蒸完各式各樣嘅海鮮同肉類嘅精華全部滴曬落下面個粥度,每次都食幾碗直至食清光為止。今次人數較多,預早訂咗個房,間房唔大,大概可以坐10個人。自備威士忌 & 酒杯,咁至飲得盡情!本來想點隻龍蝦,點知睇中嗰隻係"鎮缸之寶"非賣品,話係由新舖開張養到依家,只食生蝦同鮑魚,既然食唔到心頭好只有放棄啦!上次已經見到呢種加拿大肉蟹,但後來食咗奄仔蟹,今次試咗真係非常好食,加上由佢哋幫忙控制時間,剛剛熟所以鮮甜之餘亦非常嫩滑,唔會蒸過籠而變得"嚡",最後 encore 再叫多一隻,一樣咁好味。花竹蝦又係必食之選近期經常見到有大頭蝦,亦係好食,個頭多膏。既然叫得大頭蝦自然就係頭大身細, 肉比較少但亦爽甜彈牙除咗上面嘅海鮮,我哋仲叫咗其他嘅貝殼類,有鮑魚, 貴妃蚌, 番薯蜆 & 沙白蜆。鮑魚切薄片,蒸熟之後有咬口又唔軔。而我覺得各種嘅蜆係可以令個粥更甜更好食,所以多多少少都要點番啲。為咗令個粥更好食,淨係海鮮係唔夠嘅,點都要有啲肉汁滴落去,基本上都會點牛肉(我本身就鍾意食牛肉)同雞,今次亦唔例外!蒸完曬啲海鮮同肉類,阿姐建議我哋食咗個粥再蒸啲菜嚟食以免蒸菜時出好多水溝淡個粥,咁我哋當然收到啦!打開個蓋時發現有唔少雞油浮面,雞油當然會令個粥更香,但為咗健康著想"忍痛"將佢撇走。其實我覺得蒸氣火鍋更能夠帶出各種材料嘅原汁原味,不受火鍋湯底嘅味道干擾之餘味道亦唔會被沖淡,而精華又可以滴落個粥度食埋,唔似打完邊爐之後個湯底咁燥熱唔適而飲!所以唔明白點解蒸氣火鍋一直冇打邊爐咁普遍,可能就係佢要一批一批咁蒸,每次都要冚蓋比較麻煩,而且一冚蓋就冇嘢食。…Read More

我哋一班波友幾本上每個星期打完波都會喺深水埗/長沙灣搵食,所以開咗間新店差唔多馬上就知道。開咗一個月左右,我哋已經係第二次去食,上星期食完已經訂好今晚, 仲預留咗個湯, 亦係去確認佢哋嘅水準係同第一次一樣咁好,可以列為我哋常去嘅餐廳。因為打完波,所以我哋坐低都會先叫啤酒,啤酒夠凍係必須嘅條件,而值得一贊嘅係佢哋嘅啤酒杯,全部都預先雪凍,細細隻好容易咁一口氣飲曬, 第一杯真係....正!另一樣冇得輸嘅係佢哋嘅燉湯,百幾一鍋夠6-7人飲,上星期飲咗螺頭湯(唔記得有冇花膠),非常甜而且膠質好重,今次係預先訂好嘅川芎魚頭湯,同樣鮮甜美味而且藥材味濃郁,絕對抵飲。因為打完波接近9點至食飯,所以亦唔會點甚麼特別嘅餸,都係餸酒同小菜為主,雖然冇燉湯咁驚喜,但亦甚有水準!最後就來個炒粉麵補充吓澱粉質,上星期係乾炒牛河,今次係豉油皇炒麵(仲要 encore 多一碟),兩者有個共通點,就係鑊氣足用油少,食完冇咁罪疚感!😅咁樣食法連啤酒嘅人均消費只係$140。點菜除咗睇餐牌,更要留意黑板上嘅推介,肯定會有驚喜!另外就係佢哋嘅態度親切,有空就同食客打吓招呼傾吓,問吓對食物嘅意見,仲會同你飲番杯!…Read More

點解話再次重訪?因為近年每次去西貢食海鮮都係幫襯另一間獲推介嘅海解餐廳。以前入西貢食海解,九成係會去全記,同老闆兩兄弟亦食得好熟,但係自從香港旅遊業大力推介西貢海鮮,加咗個牌坊又搵明星賣廣告,去食嘅人多咗好多,試過有次節日訂咗位都要等成個鐘,而食物質素亦有所下滑,似食套餐咁!後來有次去西貢決定試吓新堀起嘅小規模嘅海鮮餐廳,食物質素令人驚喜,結果以後就冇再幫襯全記。然而多年下來,該餐廳嘅銷費拾級而上,所以令次決定重訪全記!去到全記,雖然見到老闆在鋪頭入面,但佢已經唔認得我,完全冇反應!因為係平日,所以客人不多,有個伙記就全程協助我哋揀海鮮。最後揀咗4樣海鮮,包括一條一斤多嘅海杉班,兩隻奄仔蟹,蝴蝶蚌與赤米蝦。揀海鮮時,個伙記極力推薦我哋食九節蝦,但我從來未見過只係似普通海蝦嘅九節蝦,所以我寧願食赤米。果然冇令我失望,剝蝦殼時已經見到蝦殼厚而硬,絕非養蝦可比,食落又甜又爽,啲肉可能冇九節蝦咁實淨。因為係海蝦,所以係有啲大細不一。淨係食海鮮係唔得嘅,所以我哋都叫咗半隻燒鵝,不過就比較失望,我哋係第一輪嘅客,但係碟燒鵝就似係凍咗再翻熱,唔夠"新鮮,比起嗰啲食燒鵝嘅名店係有一定嘅差距。原本我想點花螺,不過朋友想食蝴蝶蚌,所以就點咗蝴蝶蚌,用鹽水煮。清蒸海杉斑,魚靚又新鮮,蒸得剛剛好,魚肉好滑好甜,略嫌啲豉油咸咗啲。因為係平日,個伙記有時間幫我哋細心開魚,仲同我哋分埋,先將個魚頭同尾分俾我,魚要新鮮我先至會食魚頭。上湯豆苗,啲豆苗比較老油鹽焗奄仔蟹,點嘅時候都唔知原來咁大隻,膏香肉甜,冇得彈。經過今餐之後,全記攞番唔少分數,以後去西貢食海鮮就可以多個選擇。…Read More

之前睇過有推介介紹佢係全港最好食嘅米線,最吸引我注意嘅係佢逐鍋煮。今日去開嗰頭,慕名而來去試吓,2pm 去到唔駛等就有位不過亦坐得幾密吓,應該有唔少街坊熟客。叫咗碗小辣腩肉雞絲紫菜米線,都煮得好快,等咗冇幾耐就有得食。做得唔差但係坦白講唔係特別好食,因為對我嚟講個湯底係好重要,而佢個酸辣湯底並非我喜歡嘅味道;我食辣嘢都ok,但係佢個小辣都幾辣,後來聽到佢哋話個米線本身就有啲辣,小辣就係再加小辣;腩肉唔夠腩,即係唔夠肥,入口完全咬唔到出油嘅肥肉,而且比較碎,搵唔到一塊比較完整嘅;米線煮得剛好,夠滑之餘亦唔係煮到淋晒;雞絲幾特別,白雪雪咁鋪喺上面,我覺得佢應該叫佢做雞肉鬆貼切啲,用嚟嗦個湯幾好食;我唔應該叫紫菜,因為佢放埋落去煮,紫菜同米線撈埋一齊,而我自己就喜歡清楚分開等我可以一樣一樣咁食。唔算伏,總體嚟講係好嘅,畢竟係逐碗煮嘅小店,大家去開可以一試,酸辣口味喜好大家唔一樣!…Read More

呢間 cafe 相當隱蔽,我多次幫襯佢旁邊嘅另一間餐廳都居然冇發現佢嘅存在,皆因佢係要推開商場嘅門去到角落頭至搵到。Cafe 主打係輕膳(因為當 lunch 多數食唔飽), 自製 cake 同埋當然係咖啡!飲佢哋嘅 latte,入口係溫熱,同一般 Starbucks 同Pacific Coffee 熱到辣手嘅好唔一樣,咖啡哥哥解釋話通過奶打出嚟嘅溫度,佢哋可以調節咖啡嘅溫度。如果係外賣,佢哋會調熱啲等攞到返去仍然唔會涼,如果坐低飲,杯咖啡會係溫熱,可以即刻開始飲!佢嘅 menu 上面就主要係幾款麵包加沙律,今次揀咗意大利包 (仲有香草蕃茄意大利包, 牛角酥, 三文治 可以揀) 配碎蛋加火腿 (另外有芝士,吞拿魚同蕃茄可以揀),沙律就係幾片菜加上醋嘅 dressing。整個配搭簡單而平平無奇,但係最難得係佢哋嘅心機。細小嘅水吧放咗一個 waffle 機同一個比我屋企嗰個大小小嘅小焗爐,order 係逐個逐個做而唔係流水作業嘅工廠式出品,好似碎蛋,吞拿魚咁嘅配料亦唔係大堆頭咁預先備好一大盤,而係用嘅時候至去切至去開罐頭。只要肯俾心機整,唔須要好大嘅技巧就可以整得好食。幫襯咗多次,從未失望過!麵包表面烘得脆而不燶,裡面又熱又軟,配料均勻咁鋪滿整個麵包!不過對食 lunch 嘅男士嚟講,佢嘅份量就有啲尷尬,食一份又唔夠,食兩份又好似好單調!今次我就加咗件佢哋自制嘅桂花豆腐芝士蛋糕。以前食嘅各款豆腐味嘅蛋糕甜品都係得個名而冇乜豆腐味,而呢件蛋糕入口就食到好香嘅豆腐味,佢哋話對豆腐都好有要求,所以揀過之後,依家嘅豆腐係喺西環咁遠買。豆腐味之後食到嘅芝士味反而唔算濃,如果主題係豆腐,咁又合理。上面層桂花就乏善可陳,冇乜桂花香之外又好似同個芝士蛋糕唔係好夾,如果換上果醬可能會好啲!下次要嚟下午茶,試吓佢嘅 waffle!…Read More

車房堆內的精緻西餐

荃灣廣場附近嘅大壩街一直都係車房林立,但係近年來多咗唔少唔錯嘅西餐廳,大有將這地段改造為 SOHO 餐飲區之勢!Stella’s 係我近幾個月在這地段幫襯嘅第三間類似SOHO式嘅西餐廳,亦係最新嘅一間,開業尚未夠一個月已經第三次幫襯,仍然係新張期間有八折優惠!Dinner 係有 set 同 A La Carte,我都有試過晒,set dinner 當然會抵食啲啦!今次係 A La Carte,點咗兩人份量450gm 嘅澳洲M5和牛 ($468),頭盤就點咗德國白露荀 ($128) 同冷天使麵 ($108)。最後再叫咗杯咖啡,佢哋嘅普通咖啡只須要$15,咖啡好濃,只係比 espresso 淡少少而已,喜歡 espresso 嘅人一定會喜歡!先來的是麵包,都係新鮮熱哄哄,跟隨麵包的是醋,不過我每次都另外要求 olive oil,建議先食長條型的麵包,因為稍為涼之後,這款麵包會變得有點韌。我比較鍾意較細而圓嗰個麵包!白露荀係伴以一個碎蛋醬汁,當中尚有些少芥末同黑椒,不帶辣味而提升香味,蛋香襯托出露荀嘅清甜鮮嫩!佢哋各種麵或者意大利粉都比一般餐廳 Al Dente,不過尚未達到 authentic 嘅 Al Dente。這款冷天使麵相當有咬勁,麵本身已經好好食,加上好鮮甜嘅貝殼類 (應該係細隻嘅青口) 煮得剛好熟,食落好嫩,好似生食咁。而這間餐廳好喜歡為有海鮮嘅食物加入一啲魚子醬同三文魚子,坦白講唔會係特別好嘅 quality,不過用來增加鮮味就綽綽有餘。主菜嘅澳洲和牛就按照餐廳嘅建議 – 四成熟,上枱嘅就真係剛好比 medium 生少少,伴碟有青菜/醋 dressing,薯蓉同蕃茄仔。牛肉本身並非太好,肥瘦分佈唔均勻,肥嘅都側埋一邊,旁邊位嘅肉仍有啲筋比較難切,不過入口唔會有渣,而牛肉就燒得好好,帶有啲炭香味,仍好有牛味。跟隨 set dinner 的三款頭盤由開張到現在都未轉過,之前都試過!個蕃茄芝士沙律冇乜特別,味道亦一般,芝士屬於味道較淡。個溫泉蛋松露汁雜菌好好食,將隻蛋拌勻來食又滑又有好香嘅松露同菇味。不過我最喜歡係三文魚他他,一樣伴有啲魚子醬同三文魚子,啖啖嫩滑嘅三文魚,加上粒粒嘅藜麥,食起來嘅 texture 就更有層次感。…Read More

大中華本身已經相當出名,亦有電視台嘅飲食節目報導過佢哋,我都係因為咁先識得去幫襯,仲曾經遇見過電視台演員喺度聚餐。最近差唔多每星期都打羽毛球,然後至同波友一齊出去食晚飯,大中華就係其中我哋經常幫襯嘅一間。因為都係8點鍾之後,所以都唔駛點等位,亦唔駛怱怱食完俾人趕要交番張枱出嚟!幫襯咗咁多次,今次終於寫番個食評。餐廳嘅環境同裝修都係大排檔格局,由多個鋪位串連而成,但係好多都要由後巷入去。大中華本身唔賣酒,要飲酒就要自己去巷口嘅士多買,其實間士多應該都係佢哋嘅。佢哋另一個”特點”就係落單要自已寫。而佢哋嘅食物都秉持大排檔特色,講求味道而不重賣相,好似以前食過嘅薑蔥魚鳔咁,炒到兜亂曬咁,啲魚鳔又一舊大一舊細咁,但係味道就好好!今次4個人叫咗4餸1飯,包括燒鵝半隻,上湯菜心苗,蔥花黃鱔,煎墨魚餅同臘味煲仔飯。燒鵝係新鮮出爐,賣完就冇,有時太夜去到就冇得食。所以都能夠做到皮脆,加上皮下一層薄薄嘅肥膏,真係甘香無比。以我食過咁多次呢度嘅燒鵝,今次未算係最好嘅一次,但係已經非常好食。要食燒鵝就唔駛一定去深井或者中環間名店!作為一個食肉獸嘅我,差唔多每次都主動點呢個上湯菜心苗,仲食唔少。菜心苗每次都好嫩好爽脆,絕對冇渣,食到尾都冇浸到淋曬。加上浸喺個湯度帶上適中嘅味道,係我好喜歡嘅清菜。菜裡面仲加咗啲竹笙,索埋啲湯嚟食亦好好味。碟蔥花黃鱔其實裡面嘅鱔唔多,加上大量嘅蔥花,食起上嚟基本上好難食得到黃鱔嘅味道,但我覺得黃鱔反而唔係呢個餸嘅重點。我會將佢當成好似沙律咁食,蔥花,花生同黃鱔帶出三層嘅質感,相當好食。啲蔥花基本上係生嘅,就算淋上滾油亦唔會熟得幾多,咁生嘅蔥花食起上嚟就會有啲辣。食咁多生蔥,個口陣味就維持好耐!煎墨魚餅外表平平無奇,但係食落就有啲與眾不同。墨魚餅入面有細細粒嘅而又爽脆墨魚肉,成個墨魚餅結實彈牙之餘完全唔會食到佢係用粉黐,完全係墨魚膠,所以亦充滿墨魚味!嚟大中華,未試過食白飯,每次都食佢哋嘅臘味煲仔飯,大中華嘅特點係個煲特別大同埋攞到埋枱先至加花生同蔥,再幫你搞勻佢。個煲大相信可以保溫同埋煮嘅時侯加熱均勻啲,可以夠控制好飯焦嘅比例。一舨都好有水準,所以先至會每次都點,但今次稍為水多咗,變成濕咗啲同飯焦少啲,不過仍然唔錯!最後唔計另外買嘅啤酒,埋單$560,免加一,免貼士!…Read More

之前經過見到呢間店面其貌不揚嘅車仔麵居然大排長龍,心想佢一定有啲過人之處!今日由大陸搭直通巴士返嚟,喺旺角落車已經差唔多三點又冇乜胃口,醒起呢間車仔麵就喺附近,就過去試吓。雖然已經三點,但仍然有人排隊,鋪頭嘅座位亦坐得好滿。佢哋嘅車仔麵比較特別嘅地方就係有啲牛什類嘅餸可以點,好似牛肚,牛膀同牛肺咁。叫咗個油麵加咗牛腩,牛膀,豬皮同生根都只係27蚊(下次要試吓佢嘅牛肺)!除咗車仔麵,佢哋仲有炒麵,仲見到有個伙記喺度即場炒緊!因為鋪頭入面都坐滿,我俾咗錢之後就出咗鋪頭外面搵個位坐低。以27蚊嚟講嘅車仔麵已經算平,喺荃灣食碗車仔麵都要四十幾蚊啦。佢哋一般嘅麵係5蚊一份,餸就係5蚊或者7蚊一款。麵嘅份量同一般嘅車仔麵份量差唔多,冇特別大份,但係餸嘅份量就明顯比正常嘅大份。呢度雖然係旺角,但係舊區嗰邊,租金唔會貴,所以成本可以用喺食材上面!一如以往,我都先飲啖湯試吓味。湯嘅溫度夠晒熱,就算咁凍,食完麵個湯都唔會凍咗。湯嘅味道唔錯,但係就鹹咗啲,可能係我叫佢加咗啲腩汁(本來想再加啲辣汁,但係見啲辣汁杰杰咁賣相唔好,所以都係下次先試)。牛腩係呢碗麵裡面我最欣賞嘅 item,賣相就唔係好得,顏色啡啡紅紅有啲唔係好自然,又切得大大舊,不過就好入味亦燘得啱啱好,要用啲力去咬去𡁻但絕對唔係韌。牛膀亦唔錯,只係剪得一舊大一舊細咁。豬皮就唔係我喜歡嗰啲滑滑嘅款而係食落爽脆。生根就Ok啦,唔差但亦冇乜特別。…Read More

好少見有拉麵店係現場即拉即煮,可以落咗單睇住佢即拉即煮你碗麵,以前見過北京樓有師傅出嚟做拉麵表現,不過都似係為遊客表現為主。佢哋亦有即削嘅刀削麵。麵拉得好彈好煙韌如果可以再拉多一兩次等啲麵再幼身啲就仲理想。加麻辣要加3蚊但係我每次都加,其實佢個麻辣都唔算係麻,就係俾一小碟辣椒油加蒜蓉等你自已加,我每次都會落曬啲蒜蓉,辣椒油就加大半左右慢慢調較,因為我好鍾意食辣但係又食唔到非常辣。個湯底味道好香好濃但係就鹹咗少少,我會先飲兩啖湯試真啲味至加辣椒油同蒜蓉。我碗麵仲加咗五香牛肉同豬肚,佢哋嘅五香牛肉即係台灣牛肉麵嗰種牛肉,真係做得好好,又香味道又剛好,肉質嫩得嚟又有𡁻口亦唔會起絲黐牙。豬肚切成絲咁,太幼食唔出味道,如果切番厚身啲我覺得會唔錯。總體味道真係唔錯,好啱我口味,如果唔係怕佢鹹,我會連湯都飲曬!…Read More

對火井最深嘅印象就係佢有啲其他火鍋店好少見到嘅食品,好似田雞扣,大禿參,花膠王,駱駝峰咁,有啲仲可能唔係人人都知係乜嘢,好似豬王喉同牛波子咁。不過我哋都係食大路嘢,所以只係叫咗個豬王喉,豬王喉本身冇乜味道,就只係爽脆而已。我以前都叫過駱駝峰同豬天梯,不過亦冇乜特別,駱駝峰主要就係好似一片好肥嘅肉不過食落唔會有好肥膩嘅感覺!食嘢嘅味道好睇心情,心情就受環境影響。火井唔係以環境地方做賣點,但係今晚一坐低就已經覺得悶焗,抬頭見到開咗風扇而冷氣出風微弱,個伙記就話室內外溫差大我哋先覺得悶焗,但其實今晚有成廿度,一啲都唔算冷!我哋10個人被安排坐一個三面都係墻嘅角落,坐喺呢三面嘅都係椅背靠墻,要起身挾嘢都唔易。就呢兩點就令我成晚都食得唔爽!坐低先叫啤酒,伙記話要夠凍就藍妹,仲有冰桶,但係由頭到尾叫咗8,9枝啤酒都係倒出嚟冇幾耐已經唔凍,加上比較悶焗,飲飲吓仲覺得啲唔凍嘅啤酒有啲酸酸哋!叫咗一個招牌鍋(伙記話一定要試)同一個冬瓜瑤柱鍋,鍋裡面已經有好多材料,剩番用嚟打邊爐嘅空間就少咗,但係裡面嘅料好似雞腳,豬皮,粉腸,冬瓜咁都要到半路先至夠入味夠淋!個招牌鍋除咗啲材料組合幾特別之外,味道仲冇個冬瓜鍋咁好味!牛頸脊(我覺得唔似係牛頸脊)切得好光滑,似係雪藏,不過肥瘦分佈同比例都好好,食起嚟就好嫩滑但係牛味就弱咗少少!肥牛粒肉質唔錯,但係肥瘦分佈唔夠均勻,瘦嗰啲就唔夠香滑!牛脷就真係唔掂,食落完全冇牛脷應有嘅甘香同肉質!各式丸類都好細粒,一碟十幾粒連一隻細碟都鋪唔到一半,每粒都只比波子大少少,仲係雪到硬冰冰!調味料只得豉油同紅辣椒,喺我食過咁多打邊爐裡面係最少嘅一間!…Read More

消失咗嘅鮮味

以前每個月總會嚟幫襯一兩次,因為某啲原因有好多個月冇嚟過,今日下午去到荃灣唔知食乜嘢好,就決定再去食!以前每次食都一定會叫魚腩,魚較之類嘅鮮魚食材,今次因為又想食佢哋嘅魚餅又想食佢哋嘅吉烈猪扒,所以就唔再加其他鮮魚配料,只係叫咗個吉烈猪扒米線加魚餅小食 (其實反轉嚟叫魚餅米線加吉烈猪扒小食都一樣)。魚餅同吉烈猪扒都係炸嘅,所以會用碟載住同米線分開上。魚餅同吉烈猪扒嚟到嘅第一個感覺就係份量細件咗,食落仍然保持原來嘅水準,都炸得好好。魚餅表面有啲脆而不燶,魚肉打得好好,有𡁻口有鮮味。食魚餅我都鍾意點佢嘅辣椒油,又香又辣配魚餅一流。吉烈猪扒係我嘅至愛,吉烈皮唔似普通吉烈猪扒咁厚,只係簿簿脆脆咁一層,如果猪扒可以切厚身啲會仲好。佢哋仲有一款古法炸猪扒,我覺食落差唔多,只係冇咁脆。個米線份量同以前差唔多,菜比以前多咗少少。米線冇以前咁滑,咬落仲有啲硬。成個米線嘅重點其實係個魚湯,但今次令我好失望,已經冇咗以前嘅鮮味,我一直都唔加胡椒粉,但係飲咗兩啖湯之後都係要加啲胡椒粉,希望提升吓佢嘅鮮味,但係作用唔大,我唔肯定係唔係同我冇加鮮魚配料有關。以前都會將啲湯飲晒,但係今次冇!本來冇諗過要寫呢個食評,所以相都冇影,但係食完都係要寫一寫。…Read More

呢間小店開咗大概兩個月,已經係第二次幫襯,上次係剛開張嚟食過,覺得唔錯,今次再試,可以確定佢係有水準嘅食店。店面唔大,大概坐到 50 人,聽講日頭就好似茶餐廳咁,夜晚就做小菜海鮮!裝修簡潔乾淨,令我印象最好嘅就係非常光猛,如果稍有唔乾淨就好顯眼,所以清潔要做得好認真!今日係冬至,8點幾嚟到仍然要排隊等位,好彩已經陸續有食完飯嘅人埋單離開,我同外地嚟嘅朋友一家三口共3大1細等咗10分鐘就有位!入到去發現同上次一樣都係有兩三台外國人,估計係店面光猛乾淨同埋隔離有間酒店嘅原因!今晚有兩個唔係著制服嘅應該係老闆同經理,佢哋嘅招呼都好認真!坐低就即刻叫咗兩款上次食過嘅小食,一碟係 wasabi木耳,一碟係脆皮豆腐。跟住就叫咗一條沙巴龍躉仔,咕嚕肉,炒菜心同埋老火湯,再後加半隻沙薑雞。兩款小食我都好欣賞:金磚脆皮豆腐 – 皮脆而薄,比好多已經炸得好嘅食店仲要薄,豆腐仲好嫩好滑,可能佢哋將啲豆腐切得的式所以可以揀啲較嫩滑嘅豆腐嚟炸都唔易散。超水準之作!Wasabi木耳 – 用wasabi 同醋嚟泡嘅木耳,酸得嚟又有 wasabi 嘅攻鼻刺激,木耳爽脆,好醒胃嘅前菜,個人會較喜歡再酸啲同攻鼻啲,所以會點多啲汁先食!清蒸沙巴龍躉仔 – 原本以為喺呢啲小店嘅海鮮一定冇辦法同西貢嘅名店相比,但佢哋一啲都唔失禮,魚夠新鮮又蒸得幾好火喉,用嘅豉油亦配合得好好,個小朋友係咁要點豉油嚟食魚食飯!同幾百蚊一條喺西貢或者鯉魚門食嘅魚比,百幾蚊食到呢條魚可謂物超所值!咕嚕肉 – 似乎佢哋對炸嘅食品特別有心得,又係皮薄而脆,豬肉肥瘦適中易咬,個人喜歡再肥啲不過就冇咁健康!蒜蓉炒菜芯 – 我係食肉獸,食菜我只係一般,菜芯清甜唔老亦炒得剛剛好,我都食多咗兩條!沙薑雞 – 我食雞就最唔鍾意食雞胸,因為雞胸都會”鞋”啲,不過佢哋嘅唔算”鞋”,隻雞都好入味!老火湯 – 佢哋嘅老火湯絕對唔係例湯可以比,今晚嘅係螺頭雞腳湯,雖然未必有燉湯咁精緻,但材料十足,味道不遑多讓!總體覺得佢哋係認真用心嘅小菜館!…Read More

由學生時代已經去西貢食海鮮,以前都係幫襯全記,但係自從食過六福之後,每次嚟西貢都係去六福食!六福並冇海鮮魚缸俾人揀海鮮,所以種類冇咁多,但係六福就係以食物水準嚟吸引同埋留住食客!食得多咗,有時會見到佢嘅老闆老虎哥阿Sam,佢相當好人亦好好傾!每次去都一定會食海鹽蒸魚,多數都係食黃皮老虎班,今次都唔例外!如果唔係要食好滑嘅魚,黃皮老虎班係好抵食嘅魚,佢只係紅瓜子班價錢6成左右!有個有趣嘅情況,就係佢哋上菜好似都有個既定次序,今次嘅次序亦一樣,最先係椒鹽鮮魷,之後係油鹽水花甲,跟住係海鹽蒸黃皮老虎班,再嚟燒雞,最後係竹笙菜心。飯後水果都係西瓜,不過每人最多都只得3塊!有一樣值得一提係佢餐前小食嘅炸菜,非常好食又開胃,次次都食曬!椒鹽鮮魷 – 各類椒鹽都係六福嘅強項,好似椒鹽豆腐,椒鹽鮑魚咁都做得好好。我自已比較偏好鮮魷,不過就好睇嗰時啲魷魚靚唔靚,點嘅時侯都會問問啲夥記!今次嘅椒鹽仍然係高水準,鮮魷亦唔錯,只係有一兩塊差咗小小。有啲奇怪係今次完全冇魷魚頭同鬚!油鹽水花甲 – 花甲亦一樣,要問吓夥記先決定叫唔叫,今次嘅花甲,雖然比我食過嘅最肥嘅細咗好多,但係就好好味又唔韌。不過今次係用姜而我就比較喜歡之前用胡椒!海鹽蒸黃皮老虎班 – 蒸魚嘅魚頭我一般唔會食,但六福嘅魚頭我每次都食,有時成個都俾我一個人食晒,今次條魚非常好食尤其係魚咀嗰部份,蒸得啱啱好,有小小粘骨但完全冇血水。燒雞 – 通常要訂先至有,可以話係水準高而穩定嘅一道菜,可能係雞嘅供應穩定,水準易控制!今次仍然係做得好好,不過上枱時就發覺比平時大咗好多,結果係啲肉就唔夠嫩滑,但總括仍係好好食!竹笙菜心 – 對唔住,我唔太喜歡食菜加上已經食得好飽,所以只食咗兩條,冇乜意見!…Read More

下午食完葡國菜,夜晚都係食中菜,但係又唔想去李康記或者陶陶居,最後朋友話試吓呢間。去到門口見到好多人喺外面等位,應該唔差,仲見到佢攞到米芝蓮推介。又咁近新葡京,又有推介,唔怪得知咁好生意,不過就係大陸人為主。好彩我哋只係兩個人,其他人多數係等大枱,等咗一陣就有枱。餐廳嘅裝修都幾啱大陸嘅口味,仲有十大元帥同十大上將掛喺牆上。酒櫃有茅台,XO同藍帶拱橋等大陸人特別喜歡嘅酒,酒櫃下面就有一台大陸客至少飲咗兩支茅台,好彩餐廳裡面冇一大陣嘅白酒味。我哋兩個都唔係好肚餓同埋都鍾意食粥,所以先叫咗兩碗泥鯭粥,其他就冇乜所謂,叫咗隻乳鴿,蝦醬通菜同紅燒魚頭煲。兩碗粥最先嚟,泥鯭應該係煎咗先至折肉,咁樣煲啲泥鯭肉冇咁易散,但係啲粥就冇乜魚嘅鮮甜味,好彩粥底唔差,好好味。啲粥未去到廣東粥咁綿同埋仍然可以見到煲得相當爛嘅飯粒。乳鴿相當香脆,但係就太乾,要食到近脾位先有啲肉汁,不過不失。淨番嗰兩味就極之失望,都係太鹹。個蝦醬通菜煲煮到淋晒,通常揭開煲蓋時啲菜應該仲生生哋,用煲嘅熱力慢慢焗熟啲菜,但係呢煲菜一開蓋已經淋晒,仲出到成煲水,只可以食嗰啲冇俾嗰啲汁浸住嘅菜。魚頭煲亦一樣,只有啲豆腐唔算太鹹,可以食。魚頭亦平平無奇!真係唔知佢點攞到個推介!…Read More

每次嚟澳門都差唔都一定會嚟”新口岸”食一餐,通常係食Lunch,而且每次都差唔多點同樣嘅菜。今次亦唔例外,落咗船就直接過嚟醫肚,點咗葡式牛尾,馬介休炒雜菜,芝士焗大蝦同沙旬魚,當然仲有例牌嘅猪仔包!猪仔包一直都保持水準,由焗爐出嚟,皮脆而帶溫熱,係一個好好嘅 starter,不過就次次都食到成枱麵包碎!:)跟住嚟嘅係牛尾,今次炆得好夠淋,好容易就將肉同骨分開,肉亦都好入味,但係今次嘅牛尾就少咗啲牛肉嘅香味。薯仔亦都唔入味,可能係怕炆得太淋,所以最後先放入去。:)跟住嚟嘅係雜菜,係我食咁多次最差嘅一次,菜淋到開始爛,個芡汁太杰,馬介休肉大大條好似薯條咁粗,但我覺得切得細啲融入啲雜菜裡面仲好食!本來想叫炭燒魚,不過原來魚販未開工,冇鮮魚供應,就隨便叫咗沙旬魚,有啲後悔,沙旬魚真係唔會太好食,腥味重魚肉鞋魚肚又苦,所以隨便食完就算。最後就係重頭戲嘅大蝦,淨係呢牒蝦就係成張單嘅一半價錢,原本係$240一份,但係我哋叫咗最大嘅蝦,要$320一份。芝士焗得啱啱好,表面有少少燶好香口,芝士仲有濃濃嘅奶香味!蝦頭係我最喜歡嘅部份,可惜今次少咗啲膏。有鮮味又彈呀,水準之作!…Read More
