Nice presentation and good play with colours, like the duck liver bun the best. Crab craw is slighly underwhelming. Turnip with crispy lobster tastes ok, the lobster inside is still considered crispy, very surprised was expecting it to be tougher when deep fried. But suppose it would be even more crispy if the lobster bits are added outside instead of inside puff.

Inaniwa noodles in fish broth - would rate this higher if it was served hotter, maybe the claypot should made hotter. The fish broth may taste slightly fishly though I am ok with this taste.

Crispy caramelised walnut is nice as a start! Impressive use of jade in cutlery and chinese themed plating.
