It was Friday night around 22:00 and there was a small line outside. I waited for around 20 minutes before getting into the restaurant. I did enjoy that they let you order while you wait so as soon as I was in and at my table my food had arrived in about two minutes. The staff was nice. Making sure I understood everything and was happy. I ended up ordering one of their recommendations, the Karatama-uma(spicy ramen with chashu and egg).
As I took my first sip of broth, I was impressed at how thick the broth was. Almost resembling a hybrid of a cream and soup like texture. With the first sip you instantly taste fatty meaty pork, with a lovely tomato flavor that adds a fruity and vinegar note to the broth. Then it finishes with the spicy Sichuan chili and white pepper spice that left a subtle numbness in your mouth which had me craving more.
The pork had a great ratio of fat to meat, that was falling apart as I tried to grab it with my chopsticks. The meat was melt in your mouth tender.
The egg was cooked to absolute perfection. A stiff runny yolk and perfectly cooked white that had clearly been soaking for hours in a soy sauce based marinade.
The noodles were cooked just as I had wanted them. I slight chew, not too firm or too soft. The thin noodles didn’t hold onto the broth which I felt was a nice refreshing relief from the heavy broth, pork, and egg.
Lastly, the bamboo shoots gave a great refreshing crunch and vinegar note to cut through the fat to help cleanse my palate and keep me going back for more.
While this was a great ramen for the price, I find myself enjoying other ramen restaurants a little more based on the fact that I am able to customize my ramen to a larger degree. Here you are able to change how your noodles are cooked and a few add in ingredients. Where as at other locations I was able to create the broth that was right for me. To me, that’s worth the extra money.
