This is actually the 1st time I came to this shop to eat believe it or not - despite having walked past it like at least 1,000 times. Everytime I came by, I already had lunch or dinner and too full to try it. Man, was I missing out big time.The hand made duck egg noodles here are pretty superb. Even better than Mak's noodles, which never really satisfied me. Here, I think I finally found something tha satisfied my 'request' and 'demands'. If anyone else has suggestions of better 'noodles',

The noodles had a bit of eggy taste, unlike almost all noodles in Hong Kong, plus, the texture was just spot on, not too plasticky crunchy but still has a bit of a chew. The noodles weren't 'EVEN' either, which gave it an extra interesting and different textures on every bite, something I find only at 永華麵家, Mak's Noodles and 池記. A little bit of alkaline solution taste doesn't bother me to be honest, I actually like it - unless its like Yung Kee's or cheaper shops ones. HOWEVER, FOR SOME PEOPLE, this alkaline taste is probably too much already.
I had the Wonton plus Beef Tendon Brisket noodles. The wontons were more pork than prawn compared to other Wonton specialty shops - I kinda like it this way sometimes. They were quite good in a sense but not as good as Mak Man Gei wontons and Jeng Dau in Happy Valley, and occasionally other shops - cannot remember much of Lau Sam Gei's from tasting them few years ago - hope to revisit there again soon. But truth be told, I find some of the frozen ones from supermarket quite good compared to most wonton shops, haha (MSG bit aside). Yet I consider myself a training food gourmet, lol. Feel ashamed.
The Soup was actually quite good too but in a different way. Despite the 'briskets' the soup was the same used in the Wonton Soup - it has a deep taste, and quite oily. The oily taste definitely came from either Chicken or Pork input in the broth, which is probably not traditional? I did not detect as much 大地魚 taste relatively speaking but its definitely there in the background too. The soup base is a little bit 濁 to be honest, but nevertheless I'm open minded and it suited the noodles well.
The Beef Brisket was surprisingly above-average - its slightly soy based, not as naturally tasty as Gau Kee's but about 20 times tenderer, although its still slightly chewy here. As a side note, I don't order the fattier beef brisket parts usually, like 阬腩, 爽腩, 肥腩, etc. I'm not a brisket lover in any form, I just don't enjoy beef brisket's meat, fat, texture or attaching skins, etc, much, despite ordering it often. Not sure they even have these parts here anyway. Came with some dried gingers too, I think they are.
A Solid 4 and approaching 5, but if I could just combine the 'components' from different shops with their strong specialties..... By the way, the noodle bowls here are complained to be small, but its already more than double the size of Mak's for a similar price.
