Time for dinner after work! The weather had turned a bit cooler and we decided to go back to this ramen bar which was hidden somewhere in the wet market in Wan Chai. Interior decoration was pretty ramen-bar-like with high ceilings, making one feel amazed that there was such a wonderland in the middle of the wet market.They had 5 types of ramen on their menu, two types of Tsukemen, 4 rice don, a few types of appetizers, snacks and skewers.They were so accommodative that you could choose the type

They were so accommodative that you could choose the type and hardness of ramen, broth concentration, amount of oil, choices of pork, amount of cabbages and spring onion, and level of spiciness. You can top up by $15 for soup dumplings or small salad and 1 can of drink for any ramen or rice.
We ordered 1 dipping ramen, 1 rice don and 2 snacks to share.

It was our second attempt as we had tried this during our first visit. Last time we had cold ramen and this time we decided to try hot ramen instead. The good thing about hot ramen was that it wouldn't cool down the hot soup as you kept eating. There were three oysters topped by some white sesame. They were not small and were cooked to the right degree such that they were quite tender and delicious. The flavour of oysters was quite rich too. The ramen was of those thick and al dente type which I quite liked! Other toppings included half a soft boiled egg, some crispy sliced bamboos and 木耳, onions, cabbages and lots of spring onion and a slice of seaweed. There was a slice of lemon for you to add to oysters too.

The soup was very tasty and reasonably thick yet not overly salty or oily. The dipping noodles went quite well with the soup and the ramen could absorb the soup quite well. After finishing the ramen, we could ask for refilling the soup once. We finished all the soup and didn't feel thirsty afterwards.

There was a long whole slice of grilled eel cut into 2 halves. It was warm and very meaty to eat. Delicious indeed. The rice was served warm and seemed to be pearl rice grain which was more fulfilling. There was an egg with a choice of either onsen egg or soft boiled egg. We broke the onsen egg and mixed the egg yolk with the rice to eat. Other toppings included cabbages and loads of chopped spring onion. Some white sesame was sprinkled on top to enhance flavour. It was quite a nice grilled eel don of a decent portion.

Both snacks we ordered were very impressive. This 芝麻手羽 had 2 pieces. They were freshly deep-fried so that they had crispy skin yet juicy flesh inside. They were well seasoned and were very tasty with some white sesame sprinkled on top. I could even finish the chicken tip with the bones. There were a few slices of fresh lettuces on the side.

This 和風餃子 were even more impressive. Presentation-wise, the whole dish looked so creative and special - like a pan cake. There were actually 6 pieces of pan-fried dumplings at the bottom. The dumplings itself had pretty nice wrapping which was not those crispy type and actually a little bit chewy yet they were great to eat with the crispy slice on top. The loads of 木耳, chopped spring onion and salad dressing had greatly enhanced the flavour and texture of the dumplings. Highly recommended.

Like most other ramen bars, there were some spicy pickled bean sprouts in a small jar on the table at your own service and they were actually more sour than spicy with a super crispy texture.
Overall, we were quite impressed with the food especially the two snacks which were both very delicious. Yet, the meal only cost $137.5 per head. Yummy dinner but at an economical cost.
