-原來外層用薄sponge cake(圍住個蛋糕)就喺叫biscuit joconde..........初時食完個蛋糕都搵唔到餅乾,後上網查,先知biscuit喺法國嘅意思喺sponge/ sandwich cake咁解
-佢呢層嘅sponge cake軟,唔乾,唔"鞋" (無破壞到整件cake嘅滑滑主題)
-士多啤梨mousse有士多啤梨香,甜度不高
-底下嘅mousse有很重嘅奶香味
-2隻mousse嘅味都可以並存,各有特式,的確好味

-見不少食家寫咖啡味嘅呢款都唔錯,所以試埋佢
-mousse分2層,上層為焦糖味,下層為咖啡味
-焦糖mousse嘅"糖"味多過"焦"味,焦味只喺溫和,相信喺用嚟中和咖啡mousse嘅小甘苦味
-所以呢個咖啡蛋糕都有佢嘅特色

-買這件甜品,好明顯為咗個器皿............好cute,喺lc牌子
-上下都好滑,質感喺比較似creamy嘅yogurt,上層有自然嘅yogurt酸味
-中間夾有朱古力sponge cake同細朱古力粒
-整體味道都ok
-我最鍾意都喺個兜仔啦~~~~

這天所試的,是店裡其中一件較受好評的蛋糕 Charlotte aux Poires 。這賣相簡潔,味道清新的蛋糕的主要材料是洋梨。一片片排列得甚為整齊的洋梨片舖在蛋糕的面上,下面主要是 Mousse 與蛋糕,中間還夾雜有切成碎粒的梨肉,吃來感覺十分清新,味道亦清甜不膩
,雖然 Mousse 味道顯得略為平淡,但整體來說仍是甚為清新甜美的蛋糕

難得這位混血名模不單只是一個裝飾多於實際的花瓶,還有一雙製造蛋糕甜點的巧手,一份製作美味甜品的誠意,雖說這次所試的蛋糕未算盡善盡美,一張笑臉作為鼓勵仍是恰當的吧

Today is my first visit to petite Amanda, read a lot about it in different columns. I went right after lunch in IFC, it was just a small queue, probably because it's mid autumn and don't have the usual crowd. I bought 2 croissants ($15 each) and an Amanda's Verrine ($115). The sales lady was attentive as I asked her the best way to consume the verrine, she said it should keep refrigrated until serving coz it's contains yogurt.Actually this verrine is different from what I saw here on Openrice

The sales lady was attentive as I asked her the best way to consume the verrine, she said it should keep refrigrated until serving coz it's contains yogurt.

Actually this verrine is different from what I saw here on Openrice. It's base is coffee cream (maybe mousse), with a thin layer of chocolate sponge cake, some choco pops, top layer is plain yogurt. It tasted marvellous! Very smooth and not very sweet, portion is just right. It really brighten my mid autumn evening! You must try it and you will feel how lovely it is! From the taste, you can tell the heart of the patissier. I read Amanda's column too from time to time and I hope she can bring more marvellous cakes to us in the future. For the croissants, we think it's average, those from Mandarin is better.

不過, 只是間中放縱一下, 豪爽一次滿足自己, 這又何妨呢?


先品評較少人評論的Bresilienne吧! 其實是coffee mousse cake, 我本身是喝咖啡的人, 雖不是正宗coffee fans, 但對咖啡蛋糕有種另類偏愛! 這個焦糖咖啡蛋糕, 面層是Caramel & coffee mousse, 做得十分smooth, 有種入口即溶的感覺! 加上咖啡味很濃郁香甜, 而且我很喜愛表面的朱古力, 多了一份口感, 又滑又脆增添了變化, 所以於我來說是很不錯的! Mousse cake的下層是海綿蛋糕所做, 質地鬆軟, 但朋友認為只吃到咖啡味, 有點太濃太重, 她說好像過甜了, 整體算是可以但卻非最好, 所以不是咖啡迷的話, 這一款未必是你心中那杯茶喔!

再來是一款較少遇見的Jasmine Vert! 我不常品嚐到用茉莉花做的出品, 所以滿有期待的! 但吃下去味道較淡, 茉莉花味不突出, 反而被蛋糕本身的抹茶味掩蓋了, 個性與味道難稱得上很出色, 再說沒有搭配其他用料, 以蛋糕本身而言食味略單薄, 有點可惜吧! 不過, 可讚賞的是蛋糕表面有層清新的茉莉花茶啫喱, 雖說主角的jasmine太light, 但設計上是挺特別的, 而且顏色很獨特, 坊間少見! 它的mousse做出來是一貫的幼滑, 如果想輕怡一點的可試這個吧! 但對我們幾位而言, 不是最佳之選喔!
其後, 當然不能錯過大家也推介的Merveille吧! 我對於任何士多啤梨的出品也很有興趣, 加上這Strawberry mousse cake的造型極其吸引人, 這種誘惑我怎能抵擋嘛! 回到蛋糕上, 頂端有數片strawberry, 很新鮮又不會酸, 是我最愛的味道! 那層mousse混有一種香甜奶味, 很creamy, 確實提升了整個味蕾享受! 底層則是軟身的cheesecake, 沒有那種正宗的結實感, 雖說cheese味不濃, 但反而不會搶去strawberry的風頭呢! 加上包圍在外層的蛋糕則加上了士多啤梨醬, 質感也做得較為濕潤, 與內層cheesecake拿到一個很好的平衡, 我們一致視他為第二最愛, 有5**!

為什麼Merveille只排在第二位? 是誰搶了第一位置? 答案是這個Mille Feuille啦! 本身大家也沒有打算買拿破崙酥餅的, 因為怕胃容量負擔不了! 可是, 當看到他誘人的樣子, 又確實難以控制吧, 最終我們一於豁出去, 還買了兩件, 呵呵! 看資料說到法文Mille是一千, 而Feuille是葉片, 千葉是形容它的酥皮, 要做出千層的功夫可真不簡單! Amanda做的這個餅脆而不碎, 十分crispy而且香口, 每層也做得夠薄身, 不會太重, 亦不怕只吃到一種死實的牛油味, 這種厚度反而令custard的奶香能充分滲入當中, 豐富了其口味之餘, 也令香滑與鬆脆互相配合, 這種功夫與水準發揮得很出色! 真的是值得encore的, 給這個拿破崙5**是有我們的原因的啦!

蛋糕之行還未終結喔, 再來點評的是Delice Aux Abricots, 單看樣子會以為是orange呀, 橙色的半球狀, 外型夠獨特! 這個是用apricot做的, 中間部份有新鮮的杏桃肉, 挺juicy的, 雖然份量不多, 只有數粒而已, 但已有效增加鮮甜度! 不用擔心味道會太甜膩, 而另一不同之處是這個餅底用上牛油tart, 較結實且硬身, 略帶一點咸味, 與其他相比是另一種口感, 吃起來一軟一硬, 一咸一甜, 真的夠refreshing! 不過, 可能是個人問題吧, 總覺得蛋糕面層的杏桃味可再強化一點!

既然要深度品評, 不能缺少另一法國名物croissant! 說到底, Amanda是在法國學藝回來, 以此測試一下功力嘛, 哈哈! 我最愛的croissant當然是名牌店Joël Robuchon及simplylife的出品, 這裡做的可叫合格, 外層勉強算是脆身, 可吃得出麵包本身也夠鬆軟, 可惜裡面的麵包不夠層層分明, 有點黏在一起了, 而且要說上鬆化程度也可再提升, 牛油味是有的, 但又未充分散發出那種陣陣的芳香, 或許是我放的時間久了吧, 其味道、油潤度與鬆脆度上能再加強點就好了, 雖水準也不能算差, 覺得是有點可惜喔!

我是超級麵包迷嘛, 這次也買了Brioche loaf回家去與家人分享! 表面有不少糖粒, 把甜度進一步提升, 而且有點咬口呢! 麵包帶點黃色, 因加入不少butter製作吧, 所以味道整體上夠香夠豐富, 質地是鬆軟的, 水準也不俗呢! 但說實在, 這條loaf很大, 吃得太多會有點過膩, 還是少吃多滋味嘛!

除了法式牛油麵包, 我上次也買了其他歐陸麵包, 整體上叫我十分滿意呢! 我本身特別偏好麥包或sourdough之類, 是texture及密度很高的那種, 所以看到sourdough便沒有猶疑, 它外表十分挺身, 不論在顏色及發酵度上也是恰到好處, 烘烤時間掌握得宜! 以為它很硬不吸引? 錯了! 整個包非常外脆內軟, 有種十分綿密的質感, 麵包富香味之餘也帶韌勁, 咬下去很實在, 加上麵包濕度夠高, 更富彈性, 味道也是略帶酸味, 不會覺得很單薄, 水準真的不錯!!! Nice!

另一款是多穀麵包Multi-grain bread, 同樣地麵包很富質感, 外表也很脆身, 當中用上了sesame, sunflower seed及poppy seed之類, 更具口感! 而且用料一點不少, 平均地散佈整個包之中, 每一口也能感受到, 所以很飽肚, 很健康, 哈哈!

最後, 也買了apricot mini roll, 這個是比較普通一點, 不論在味道及質感上未能滿足我, 始終杏桃份量少, 味道很淡不突出, 還是買”大”的好, 嘻嘻!

名牌只是一種包裝而已, 所謂名人效應總不能維持長久吧!
我想說的是, 高品質才能留住客人的心, 才能一直承傳下去, 走得更遠…
說實在, 蛋糕店比比皆是, 說到水準這裡並非最好, 但因為傳媒的不斷炒作, 這裡一直人氣高企, 不過為什麼不可以摒棄一切看明星的世俗心態, 細心體味一下那份用心與投入的熱情呢?
於我來說, 這裡的蛋糕水準真的不錯, 是很有誠意的出品, 我會讚賞的反而是這種味道與創意吧!
最後, 還買了一些曲奇回去當作手信, 朋友很開心, 我也很感謝Petite Amanda令我有這麼一份回味的感動時刻!

A well-known brand new cake shop opening up for not more than one month, not just because of the owner 's celebrity but also her passion to share the delicacy of her cakes with others.I have bought seven of the ten pastries served at the shop. A well-known brand new cake shop opening up for not more than one month, not just because of the owner 's celebrity but also her passion to share the delicacy of her cakes with others.

I have bought seven of the ten pastries served at the shop. Most of them are delicious, the sweetest is just fit for those girls who are crazy for desserts but also weight-conscious. The cakes are tasty but not heavy. One can eat at least two if one really loves desserts very much. A sip of coffee taste is just good enough for Bresilienne. Mangoes on the Mango Tart are fresh and perfect to go with custard cream in between the cookie tart and the fruit itself. You can taste different "textures" with Plaisir Sucre, which serves layers of chocolates, both nutty and milky. Mille Feuille is the best among all. The puff is fresh and crispy, custard cream is tasty but not heavy. I think it's good to serve chilled.

One shortcoming is that each customer can only purchase ten pieces at one time. If you are looking for dozens, you'd better ask some friends to accompany with you to get the head count for more cakes, or else you have to queue many times.

今日行過IFC,抬頭一看就見到petite Amanda..基於甜魔心癮,於是又忍不住口上左去食見到Mille Feuille,係我喜歡的Napolean Cake,即刻買左件~~的確唔錯,Layer都算幾多,酥皮焦糖味岩岩好,食落去又甜又脆 裡面的吉士打得幾滑,好味!不過個人都係喜歡Zoe的1459,這個酥皮始終無1459這麼多層 還試了 Bresilienne 焦糖咖啡慕絲蛋糕慕絲整得幾滑,入口融化般~不過蛋糕本身味唔夠濃,咖啡味唔夠香濃,焦糖味更加食唔出 @@下次要試Plaisir sucre!

的確唔錯,Layer都算幾多,酥皮焦糖味岩岩好,食落去又甜又脆

裡面的吉士打得幾滑,好味!

不過個人都係喜歡Zoe1459,這個酥皮始終無1459這麼多層

慕絲整得幾滑,入口融化般~
不過蛋糕本身味唔夠濃,咖啡味唔夠香濃,焦糖味更加食唔出 @@

無論如何,真的很難得、也很開心可以見到如此齊全的甜品陣! 對了,除了精緻甜餅,店內亦出售不同口味包裝曲奇、更多麵包酥點,以及咖啡飲料等;當日所見買麵包的可以不用排隊,即時付款離開,瀟洒多了! 見曲奇餅包裝簡約可人,我又忍不坐幫襯了一包,連同三件餅共同$178。

當日以首名甜品顧客身份付款後,轉眼一看,小店已出現一條人龍了;據知這條人龍去到下午會更加誇張,直至店內甜餅全掃光為止! 餅店歡迎顧客付款後留餅後取,當天我也是餐後回來再取餅,回來之際並很驚喜見到Amanda本人回店! 新婚的她看來相當忙碌,但仍散發著一股難言的魅力,果真是餅店的生招牌!

去到下午時分,為食的大肚媽媽已忍不住,率先打開
Chocolate Chips Cookies($47)來品嚐。曲奇一包有11件,金黃餅身吃來極富牛油香,口感又鬆化動人,中間的朱古力粒又增添美妙滋味,是預期之外的出色,甚至比甜餅部份更令人留下深刻印象。

至於另外三款甜餅,就帶回家再慢慢再享用。先由口味較清的
Charlottes aux Poires($40)試起,甜餅面層的梨肉十分清甜可人,中間的蛋糕層則濕潤中帶甜美,予人印象與Amanda本人相像,的確是款輕柔可口的佳作,難怪成為熱賣項目。

Plaisir sucre($48),此餅朱古力味不算濃郁,但因有著香甜榛子味作襯托,再加上清脆餅底,甜美得來口感豐富,果然十分美味吸引,我只嫌份量較小稍不夠喉! 這件餅也是三款中個人最喜愛的一款,推介給大家,如你是朱古力迷更加不應錯過!

最後再試
Mille-feuille($43),這裡的出品酥皮層做得鬆脆,層次分明,中間的吉士層也算香滑,整體標準合格,但就沒有特別驚喜。要吃真正出色令人驚艷的拿破侖,還是行多幾步去置地廣場的Le Salon De Thé de Joël Robuchon吧!

無論如何,這次嘗試已是比我預期中為好,也證明了Amanda並不只靠漂亮迷人外表,也有一定實力的。在此祝福這位甜姐兒生意繼續興旺,遲些與丈夫有個開心甜蜜的蜜月假期,之後與我一樣搞出人命,炮製出真正的petite Amanda!

Petite Amanda has been so popular since it's opening. Every review about it was positive, and it's been all over the media about the success of the shop. Moreover, I've admired Amanda S. for so long, I of course wouldn't want to miss a thing about this shop.A friend accompanied me here to try the food. We skipped lunch and came here directly. The cake shelf was empty already at that time. We then had croissants and a brioche mini first and decided to sit down and wait til 15:15 for the desserts.

The croissants were marvelous, only that it would've been even better if it's warm. The outside of the croissant was kind of crispy but the inside was so fluffy. I also really enjoyed the mild buttery aroma from it, it was just right for me, not so heavy but still with great aroma. Brioche ain't really common in Hong Kong as I know, and I don't know how to determine if it's of a great quality or so. For my personal opinion, the cake-like texture of the bread was a delight to have. I enjoyed how fluffy it was inside again. However, as same as the croissants, I wished it was warmer and I bet it will be more aromatic then.
As it wasn't time yet for the desserts to come out, we ate slowly and sat and waited, but you just kind of crave for some bites to have during the wait, so we bought a can of cookies as well.

We bought chocolate chip cookies. Merely the cookies might sound ordinary, but I think the cookies here were amazing. What's so stunning about them was that when you open the container and plastic bag, you can still smell the freshly baked aroma. They were not kept in ovens before selling like those at Mrs Fields, they were already packed in a plastic bag and into a container. Therefore, I was kind of amazed when I smelled that aroma after I opened it. The texture of the cookies were great as well. It's crunchy on the outside, and a soft chewy texture at the inside, and this texture normally cannot be attained after the cookies were being cooled down for long, that's why I admire the cookies so much. In addition, the cookies are of great value too. One can contains 10 pieces of cookies, and with that great quality, it costs only $47.
It was about three already when we finished the can of cookies, and we saw people starting to queue for the desserts, even if the dessert shelf wasn't ready yet. We queued up as well, and Amanda S was there helping. Needless to say she looks absolutely gorgeous, with that delicate structure of her face and a tall and thin body figure, and a really friendly personality as well. What I appreciated so much was that she insisted on doing the work herself. She insisted helping, organizing, and serving by herself. You can feel her passion towards this business, how sincere she was in serving you, and how much heart she'd poured into to learn making all the desserts and in starting the business. She arranged the desserts nicely and orderly onto the dessert shelf herself. The shelf was filled with colorful desserts very soon. It was really delightful to see such a colorful dessert shelf in front of you.

After queuing for a while, we picked four desserts to try. Before reviewing the desserts, I would want to mention about the special design of the paper plate which makes it convenient for people to hold them. Firstly I think it's a very smart design; secondly, I think it's really considerate of Amanda to have thought of this. Also, when we returned to our seats, we were told to eat two of the four desserts first since they were light desserts and later the other two which were heavier. It was just a little reminder but I really appreciated it. I can feel their sincerity in serving you and assuring you an enjoyable dining experience.
Back to the desserts, the first one was Charlotte Aux Poires. I've read various reviews and most of them kind of highly recommend this dessert. It is a pity that I don't eat any fruity things. My friend said it was a really refreshing and light dessert, and was absolutely marvelous. With all the other positive reviews from other people, I am quite sure this dessert is indeed of a high quality and can be said as a specialty of the shop.

The second one we had was the Mille Feuill. This dessert was all about pastries and custard. I bet it kind of sounded unbelievable that it was recommended to eat first since it was lighter? At least I had my doubts at first, but after I had a few bites, I was stunned by the dessert. It was so surprising that it didn't taste heavy at all, in fact it was light, but not as light as those that get tasteless, it still remained a great taste. The dessert may not look as delicate as the others on the display, but I think this was one of the best desserts made here.

Moving on to the heavier desserts. The Plasir Sucre has a great texture. Each layer gives a different texture and it was sensational to eat it. However, I think some darker chocolates can be used in a few layers, so as to give rise to another texture and sensation by the various types of chocolate used.

Last but not least, the Brisilene. Among the four desserts, I think this desserts tasted the least surprising. However, I can't help appreciating all the delicate work behind in the creation of this dessert.

Think it's merely a coffee cake with mousse on top? You're wrong then. There are actually two layers of mousse, the upper layer is caramel mousse and the lower layer is the coffee mousse. The lower coffee mousse was wrapped with a very thin layer of coffee-chocolate sponge cake. Such work involves great patience and techniques, and I absolutely appreciate all the work behind.

It was pretty satisfying after finishing the desserts, and some bread and pastries and cookies beforehand as well. To round up such pleasurable dining experience, I had a cup of coffee. I bought cafe latte, and the milk used here is organic milk. The coffee was indeed a great round up. I loved the texture of the coffee, and the milk, no matter in taste or in texture, was perfect.
When you crave for some light bites and light desserts, this place is a great option to consider.

我是一位cake lover, 好欣赏Amanda去法國藍帶學藝。八月一日試業期間, 放工6:00pm, 滿心歡喜去買2件美麗蛋糕回家作飯後甜品。拿著Petite Amanda出品,由中環乘地鐵到銅鑼灣,接著乘巴士回家去。回到家中7:45pm, 立即打開蛋糕盒看一看蛋糕是否走位。但是嚇了一跳,Jasmine mousse cake 變成這樣子, 已經不能吃了. 曾經去過Tony Wong Patisserie , 它會提供乾冰保持住, 以防變形。八月二日早上8:30am返工前去通知sales 姐姐這情況,同時讓她看看相片,希望會改善, 通知客人一聲蛋糕會變形。同時我也買了croissant for breakfast, 但是付款後才發現得幾個croissant及冇蛋糕賣,應該是隔夜,所以croissant唔脆。最後公司來電說, 再來買jasmine mousse cake, 給我半價。這經驗, 我不會去買了, 損失HK$40, 算吧!

red ink coloring really works for me, i love it, this cake was SIMPLE, PURE, CLEAN, LIGHT( except the almond cake used ), LOW SUGAR, it could not give you a WOW, but definitely a return...keep it up and work harder in the design of combination of cake ( sponge/ lady fingers/baked almond cream/ decquoise ) used in pastry, it affects a lot~!

八月二日 (星期二)名人開甜品店第一個反應,必是靠關係,靠知名度拉客唯此店真的可以說是例外Amanda雖是名模但對於整餅卻有如她的橂特兒工作般那麼認真投入零五年已為開甜品店的夢想作出部署先在巴黎著名學院Le Cordon Bleu考得證書其後回港更在Caprice當實習生終於在今年如願,生了自己的寶貝我們就襯早期試業期間,一探虛實餅店賣的是簡約法式甜品糕點全由她親自主理而麵包,牛角酥等則由其他廚師主理店面還有另外兩位工作人員一個負責拿餅,一個負責收錢Amanda則負責最重要的一環將她心愛的作品放入設計精美的紙盒內幾片新鮮的雪梨在蛋糕面,很幽香而蛋糕本身是雪梨慕絲,更混入雪梨粒,很有口感唯獨蛋糕味道一路都是較plain,稍欠層次感,未能盡興內裡是白朱古力慕絲,奪目的橙色外層是用杏仁做的本身杏仁味道較淡,所以被內層香濃的朱古力味蓋過主角杏仁頓成配角吃不出本身的主角味道,是有點失望的四十元一件蛋糕有多少花在包裝,又有多少花在IFC的鋪租?本想給一個中等的,但聽到美女每朝五點就到香港仔的製餅工場親自監工,又忍不住給了一個感動的"好評"~加油...繼續努力!!!

吃不出本身的主角味道,是有點失望的

本想給一個中等的,但聽到美女每朝五點就到香港仔的製餅工場親自監工,又忍不住給了一個感動的"好評"~
