Dinner. Good to see chef Laloum back in the kitchen after his holiday back home.Having previously tried the pate, angel hair with caviar and yellow chicken, we decided to go for the 6-course signature menu ($1,688pp) this time round.Seated on the second floor and noted that 99% of diners were female.Here’s what we had:Sour dough bread with a nutty spread.As hors d'oeuvre: 24 month comté cheese puff.Brittany scallops, salmon roe and radish in a sauce made with citrus from Wakayama, Japan. Cinnamon roasted langoustines with morels and honey peas in a crustacean bisque made with French yellow wine. Perfect doneness and loved the crunchy texture.

Steamed line caught meager, a large fish that's similar in look and texture to wild sea bass. Grenobloise (butter and lemon) sabayon and confit French potatoes (cooked slowly at a low temperature in oil) on the side. Meat tasted mild, delicate and firm in texture. Went very well with the chicken jus and parsley oil on top.

Pigeon breast confit leg and duck foie gras cooked in a fennel seeds infused consomme with spring vegetables and dry plums. Loved it! Everything went so well together.

One could not leave Louise without tasting their canelés, which must be one of the best in the city. Last but not least, box of madeleines for breakfast the next morning.

In summary: well deserved Michelin ⭐️. Creative flavors but not overwhelming. Highly recommended.
