小時侯開始,家中每逢有成員生日總會準備個生日蛋糕,大多都是從連鎖餅店買來的,不論是卡通造型還是水果主題的蛋糕都已開心不已。投身社會工作後,對生日蛋糕的要求也提高了。又是到了一年一度老公的生日,又是為了選購慶生蛋糕而懊惱的時侯。有些蛋糕已嚐過試過,拍過照又呃過like,不想再重覆,朱古力蛋糕又非我倆杯茶,於是可選擇的範圍變相縮窄了,也更頭痛了。嚐過幾家酒店、餅店出品的拿破崙蛋糕,味道品質都具一定水準,今趟的選擇落於口啤也同樣是不錯的文華餅店上。Opera、1963 Mandarin Cheesecake等都是店方最受歡迎的蛋糕款式,但我卻背道而馳選上拿破崙。 於電話訂購後,到餅店取餅。餅店位於酒店閣樓,室內設計出自設計師Alan Chan手筆,風格是另一番的沉實華麗,跟文華一向的古典優雅截然不同。 置於門口及店中的玻璃櫃展示了非賣品的結婚蛋糕和精緻造型的朱古力。 靠旁的玻璃蛋糕櫃則擺放了可選購的蛋糕,高高低低的陳列著,色彩繽紛又精美,看來味道也不錯呢。 另外的玻璃櫃就放有自家製的朱古力、新鮮出爐的麵包、果醬,通通都是吸引啊~! 定價屬酒店的級別,雖然如此,也有不少人前來光顧呢。 餅店也有提供堂食的服務,除了中間位置的島型座位外,靠窗那邊還設有梳化位,提供餐飲、餅食和下午茶等。文華酒店的下午茶就吃過,但餅店的下午茶就未有機會一嚐,下次茶聚可以考慮一下呢。星期六的下午人又特別多,人人都在排一條隊,於是我們也跟著,到排到我們時,店員才禮貌告之原來堂食和取蛋糕是分開兩個Counter的,於是又要走到另一邊等候,排在我們後面亦有些是前來提取蛋糕,也被這條堂食人龍"欺騙"了。始終酒店服務有一定的禮貌,只是排隊上的安排可以做得更好呢!拿破崙 $388文華餅店的蛋糕盒有別一般紙盒,是用上磁石來黏合,開合起來十分方便呢。 拿破崙這款糕點法文叫做Mille Feuille,Mille是一千,Feuille是葉子,即是一千層葉子的意思,將葉子變成酥皮,因此拿破崙也叫作千層酥,時至今天拿破崙這名字已跟千層酥畫成等號了。 文華餅店的拿破崙蛋糕用上最傳統的三層酥皮及兩層吉士醬組成,這經典的法國甜品看似簡單,沒有多餘的裝飾可言,更沒有加入芒果或士多啤梨等的口味,但當中技巧的拿揑相當困難,絕不簡單容易。 酥皮具層次,焗至層層分明地重疊着,帶點酥香又帶點酥脆,每層香口鬆脆亦具一定厚度,做到重點的酥、香、脆、焦、甜。 一片好的酥皮必須具備有牛油香,而牛油便是酥皮的靈魂所在,油脂成份較重,油脂越多牛油香味越濃,酥皮層次會更細緻,入口會更香滑鬆脆,而這個拿破崙有牛油香的同時又不過於油膩。 每層酥皮都帶股煞是吸引的焦糖香味,這陣焦糖香是來自塗在酥皮上薄薄一層焦糖,焦黃的色澤,不像砂糖般有粒粒口感,嗅著這焦糖酥皮的香氣,瀰漫着一股香甜的幸福味道。 酥皮又密又厚,切下脆度高但又不易散開;咬下去,脆得聽到咔嚓聲,層次感十足。入口沒有過份鬆散碎開,亦沒有太腍韌,像同時吃着數十塊餅乾的鬆脆口感,酥香溢滿口腔中每吋味蕾。 再結合唧成粒粒水滴形的雲尼拿吉士醬,質感細滑香濃,做得不膩,中間加入了雲尼拿籽,充滿雲尼拿的芳香,甜味掌控得適中,效果又香又甜滑溜無比,與酥皮混入後的化學變化,無論味道及賣相都令人滿意。 酥皮只不過是簡單的由麵粉、水、鹽和牛油重複摺疊製造出來,竟然可以產生出美味的魔法來,當中每一個細節都不能忽視。拿破崙的酥皮做得好,證明餅師有一定的功夫,在云云餅店中,文華餅店的拿破崙品質跟味道算是不錯,當然相比某些餅店仍有不足之處,但至少贏得老公的讚賞。 繼續閱讀

I have a very special dinner lined up tonight, one that I have been really looking forward to since I secured the table last month. The only problem now is the fact that I have another hour to kill before the long anticipated meal. So I found myself on a mission to find a place interesting enough near my dinner venue to get me through the hour.After walking around Central for a good 15-20 minutes without success, I suddenly came across The Mandarin Cake Shop (文華餅店) at Mandarin Oriental Hotel, a place that I haven't visited for a long long time. Bingo.Opera cake ($48) - This was pretty decent but the contrasting textures from the different layers didn't come through. There're at least half a dozen places that I think offer a better opera cake. Check that, maybe at least a dozen.1963 Mandarin cheesecake ($48) - A namesake dessert (sort of), oh I love namesake desserts. This was pretty cheesy almost like an American style cheesecake but it was one that was desperately looking for something to spice it up. Blueberry, passion fruit, something.....I still remember The Mandarin Oriental Cake Shop as one of the top patisseries in the city not too long ago and even now, it's still pretty highly rated by many Hong Kongers (as seen here with customers walking in and out of the shop during my visit). But I thought with the growing number of quality patisseries these days, their stock has dropped significantly to a point where I won't even consider them a top 20 choice in town. The only title I'm willing to give is perhaps "The most overrated cake shop in Hong Kong".PS. Another 10% was tagged onto my bill for dining in. Fair deal (Service was excellent).  繼續閱讀

Ordered a Green Tea Red Bean cake for my husband birthday. The cake is delicious. We had a croissant and cinnamon at the cake shop while we went to pick up the cake. The service, of course, is top notch. The bread were not as good as expected. However, the cake is worth a visit and worth to reorder again. Will definitely come back for the rest of the cake.  繼續閱讀

中午和朋友吃完飯後,不太想行街,所以決定找個地方再吃東西。她指文華蛋糕不錯,所以決定試試。餐廳環境一般,不是很大,我們選擇了坐在中間的大枱。蛋糕有很多選擇,最終選了兩件西餅及兩杯飲料,西餅價格相宜,每件約50元,而且賣相美觀,但是味道則好壞參半,沒有想像中的優質。飲品普通,沒有拍照。這件Opera 蛋糕很好吃,層次分明,大概8層不同的質感,不算很甜。但這件粟子🌰蛋糕則不太喜歡,有少許失望,精緻,但不太好吃,有點甜。外面有不同的人走來走去,但也沒有影響我們談天的心情。也許,甜點總是讓人感到開心吧! 繼續閱讀

Mandarin Oriental always never disappoint on their dessert selections. I always eat lunch at the Cafe Causette, but what fascinates me the most are the cake display on their cake shop. They are always very extravagant and fit the season. The Center piece by the bar seating always have a “Wow” factor. While the others on display are always very intricate. The bread at their bakery is also very good, which I order as take-away, whenever I visit after my meetings. This time I had the chance to try their chocolate cake with nuts, this is definitely a chocolate lovers dream. Don’t mind my poor photos, but the photos definitely don’t do the cake justice. The chocolate was of a dark chocolate, the cake was dense but with the nuts in the top layer it balances the cake out. It gave the crunch it needed since the cake was so dense with a chocolate filling and an outer layer. I got to say “Nomnomnom”! 繼續閱讀
