This seafood salad is nice. The dressing is very refreshing.Actually this is the second one. The first one was a bit well done and the waiter was kind enough to change it immediately. Birthday lunch with my best friend who is 9-months pregnancy, better to avoid popular Sunday Brunch or buffet style with big crowds of people. Passing through K11, entering the Hyatt and it's just on the left, from a noisy shopping mall to an European fine dining place, quite interesting.


Because it's not buffet brunch, not many people were there, only less than 5 tables occupied and we loved the quietness environment. Weather was a bit cloudy but still the natural sunlight and the comfortable interior design made up the atmosphere. They do set-lunch even on Sunday, just 3 hundred something and for free-flow of sparkling wine, only costs 4 hundred something, so it's actually very reasonable. Talking about, the portion is big, cold and hot appetizers of seafood platter, pumpkin soup and 3 items of hot dishes, potato, pie, etc....choice of a main course of roasted beef, grilled salmon, ...many nice options; plus dessert of soufflé / a dessert trolley mainly serving various cakes, chocolate cake...just by looking at the menu, it's mouth-watering.

My friend couldn't take the seafood platter and changed the cold appetizer to green salad, very nice one; and my seafood platter, OMG, was it for 1 person? Yes! It's BIG. Oysters, clams, shrimps and half lobster...delicious!
Pumpkin soup was very nice, it's my favorite and we kept saying, we were having a healthy meal for birthday
The hot appetizers were very nice too, especially the pie with bacon, yummy! After these, we felt full....

Main course time, we had the roasted beef and salmon, both medium, perfect! The beef was excellent, absolutely high quality. My salmon with beans were delicious too, although we were full, we finished all.

Slowly....we both ordered soufflé, which is the chef's recommendation there. Very satisfied, so good!
I'm not a dessert fan but I like it.

What I really appreciated is, even some high-end restaurants do badly for lunch, Hugo's does it with heart. Will definitely come over again to try the dinner.

Enough has been written by others about its food quality and their gastronomic experience. I would like to write about my dining experience on its service and its ambience in general.

To me, Hugo of present has lost its past lustre, and it is no different than any western fine-dining restaurants. Firstly, its environment and ambience : I had not expected there to be that many guests and the tables were so closely positioned. The entree cart could just pass through between tables. We booked a table in advance, and were greeted with politely and were taken to a seat at the window. We could still hear the chatting from other tables, though. Had we been sitting in the middle of the hall, we could be hearing the conversation of the neighbouring tables. I cannot blame them for a full house for Monday lunch, and the high rent in Hong Kong.

Secondly, its service : when my friend booked the table via phone, she was greeted politely and staff proactively asked if she would like a portion of roast beef be reserved. When we arrived, we were greeted warmly and a magazine was given to my waiting friend. The overall service, however, was just average in my opinion. Although staff were diligent and polite, individual staff did not show any smile or emotion on their face. They did not even say thank you when taking the bill to us.

Thirdly, its menu : its not French anymore. Staff did not even bother to explain the main courses as they were taken to our table.

Have I been too picky ? Well, I am just comparing to my prior dining experience at restaurants overseas or locally in 5-star hotels, or even some fine dining restaurants at Soho, Central. Or was I having too high expectations for Hugo ?

-Hugo's closed for quite while as the old Hyatt@TST closed down for relocation. It was a loss really, and Hugo's is a living classic: a walk into the restaurant, dimly lit, instantly brings you back to the medieval Europe where people treats you like the king! Pity that i could only vaguely remember my visits to the old Hugo's before it shut down years ago. all i remember is the rose that i received from the restaurant as a gift to their customers


We went here for my ma's birthday last year short after its re-opening. Hugo's might have switched to a new address but there's something perceptual about this place: the decor, the service, the general atmosphere, and of course, the menu. The name of the restaurant guarantees not only the quality and taste of the dishes, but also the classic and traditions that it insists upon, and works to preserve.

The bread basket: three kinds of bead-the garlic toast,mini baguettes and round dried fruit buns. Would be much better had they been warm tho-now that the garlic toast had gone sorta stale because its cold, and the mini baguettes, tangy and too chewy, were wasted. The sweet,round bun with raisins and dried fruits was extremely lovely, and i could not stop myself from buttering it (wit the room-temperature butter) and pushing it into my mouth!

we ordered three appetizers, the first being the Caesar Salad - prepared table side. Given the portion its actually one of the most expensive Caesar salads too. But its also the best in Hong Kong as it was not only prepared table side, its also made from nothing. The dressing is not made in advanced but mixed in front of the customers, which was then nicely tossed into the delicate pieces of lettuce, finally topped with croutons, bacon bits and cheese. It was D-E-L-I-C-I-O-U-S. Ive never tasted such sweetness in the dressing before. It had a strong flavour of egg yolk and lemon juice and - was there mustard? but there cant be - a little spiciness in the dressing. The taste of it simply fills up your mouth once you take a bite into the lettuce, making it the most enjoyable salad i have ever had.

Steak tartare was also prepared table side. We love the beef tartare at Tifffin's, chilled on an iced bowl and ate with thin crisps. Here they toss it fresh and serve with a thick slab of crispy toast. And man, the tartare here is marvellous! The chef gave us a sample to taste if its salty enough before serving it to us. The steak used are clearly of a high quality as they carry the natural sweetness of beef. The amount of mustard and capers were just alright, not too much as to cover the natural taste of the meat - man. There's no way of returning as what I tasted basically redefined what 'delicious' means!

Shrimp cocktail.The shrimps arent huge-as compared to what's at Morton's-but they are certainly full of the flavour of the sea, extremely spongy and hell, they tasted much better with the thousand island dressing which came with it. The dressing you usually have outside are so rich and fattening that drives you to nuts, and they dont taste good in anyway. This one was different as it was so, so refreshing and light but sweet. Marvellous.

Lobster Bisque. Of course. Who doesnt try their signature Lobster Bisque at Hugo's? Also prepared table side, the soup was cooked after the brandy was flammed and the pot was warmed. Served steaming hot, they do have all the reasons to be called a true classic. It was so rich in flavour that it almost brought me to tears as i drank in. The soup had just the right texture and consistency, and it was thick and rich with the aroma and sweetness of the lobster. The little pieces of lobster flesh were spongy and extremely tasty. Despite a little too salty, it was within the acceptable range and- i just fail to search for the word to describe the drinking experience. It was too good to be true, really, and theres no doubt that it is the BEST in hong kong.I drank much slower than my parents did as I wanted to savour each and every spoonful of the soup, recording the taste and everything better in my mind. Its a waste if you drink too hasty and soon forget about the flavour.

Pepper steak, also prepared table side. I start to wonder how many percent is actually cooked in the kitchen since the floor seemed to be more busy with chefs preparing dishes outside...anyway, the steak was certainly good. I only tried a little after it turned cold, and yet it was still juicy and tender to the max, as smooth as silk on your tongue but taints you with the flavour of the meat. The pepper on top gave a little spiciness to the meat. Marvelous.

Australian Black Angus rib of beef from the carving wagon with Yorkshire Pudding.That slab of meat looked too big to me. I didnt get to try it but i think it must had been good,judging from the facial expression of my dad as he craved in. The Yorkshire pudding tasted a little like croissant so he said.

Lobster Thermidor. It has become the new i-want-nothing-but-you-dish whenever i dine at steakhouses. I thought the Thermidor i had at JW's California was good enough. I was wrong. Hugo's one was much, much better that it basically surpassed the one i had in all aspects. Two halves of a whole lobster was served, with the flesh scoped out and baked with cream, yogurt, cheese and brandy, then restuffed into the shell. Man, the taste of the cream sauce was so good that I wanted so bad to soak it up with a piece of bread and clean it all! The rich sauce had not covered up the taste of the lobster flesh as the flavour was simply condensed and locked into the flesh, and exploded in my mouth as i bit in. Man. I could hardly speak while eating as i worry the flavour would escape from my mouth once i open it!It was good. It was really good that it basically reset my definition of 'delicious' and 'scrumptious' in my little dictionary of food!

Side dishes were warmed on a silver warmer. We ordered two and together with the baked potatoes that came with the ribs, we had three in total. All were delicious. The creamy spinach was not tooooo rich (as it always is elsewhere), and chopped so finely that you hardly have to chew before it slipped down your throat, sweetening it with the taste of the cream. The sauteed mushroom was rich in flavour and a bit into the mushroom came the juice which exploded out. Even the baked potatoes was nice(but i could not eat too much), and i like how the bacon bits are. They are the genuine bacon bits, not the bacon-flavoured whatever. It was good. It was just-good.

After enjoying our delicious meal my father suddenly asked for a Bailey's on the rock, which was basically coffee plus liqueur. A little too sweet for me, but enjoyable and certainly one of the best drinks you can have after a delicious meal as it had been.

Our table was then cleaned, all breadcrumbs and mess from the food wiped off by a briskly waiter, and there came the dessert menu.....

The meal finally ended with the Chocolate Bon-bons, served in a container with dried ice, and once its opened smoke came out in a rush. Despite the visually stunning effect they didnt taste good, to be frank. The crispy coating of chocolate tasted a little bland and 'thin' to me, and the vanilla ice cream was certainly beaten by the ice-cream we just craved in. But oh well, whatever...like whatever else we had throughout the meal, it is what makes Hugo's a classic of Hong Kong. The insistence on quality and history instead of changing swiftly to match with the new trends in the society is just not what Hugo's would do.

But theres' something that has changed over the decades-Hugo's isnt always as stagnant as it might appear to be - and I was SHOCKED to hear the singer singing 'BAD ROMANCE' at Hugo's. Yes, BAD ROMANCE by LADY GAGA, sung and played upon request at HUGO's. My head turned my 90 degrees as i hear the clear 'ah ah ah ah ah' from the other side of the restaurant. I was joking with my mum what would happen if I requested 'Beat It' from the singer-and there he was, singing Lady Gaga. Oh lord, what a classic. I shouldnt have let him go when he sung for our table, first a birthday song and then an old song requested by my dad.


A marvelous night it had been. The food was absolutely delicious,and theres no way you could complain about it. The service was good, although theres certain coldness in some of the waiters. One thing i had to point was that the lady at the reception wasnt very friendly as i brought the icecream cake in advance and our convo made me feel like a stupid fool. Is it because I look too young and indecent to deserve more politeness from the staff? Everything else was alright and acceptable.

Another surprise for the night (apart from the BAD ROMANCE) was that you could waive 20% off your bill if you pay with a HSBC platinum card. It had certainly helped quite a lot as its expensive to eat at Hugo's after all.

After the re-opening and my 1st trial... we must give Hugo's an appeal for another chance.A lot of my friends came and said it has been improved since... Now they offer a Dinner set for either a $888 for a Sea Food set or $868 for a Classic set. Along with some Bank Cedit Card promotion which offers an extra 20% off.

The differences between the 2 menus are the appetizer and the dessert.
Both of them are thoroughly arranged with their signatured dishes inclusive.

Still enjoyed the ambiance and they lipped around your table without you ever noticed. We spent over 3 hours for the dinner and did not even notice the time flew.

But, again don't know why, the food has become less innovative and did not sparke that would urge you to have to come back again...

Just keeping the standard, but the passion in the food is missing here.....

menu,有介紹 Hugo's 既歷史同由來,好有趣。一坐低既 order 支有氣礦泉水解解渴先。Waiter 好認真及熱情地介紹紅白酒,為配合我地今晚食既送菜,最後選定依支白酒 New Zealand Ata Rangi white wine。真係一分錢一分貨,果味香、味道清帶甜,酒味純不會搶,完全無苦澀味,好好味,多謝 HKD900 幾啦。餐前包,有兩款,其中一款係牛油蒜蓉焗法包,味道口感香脆,滿意。另外一款嚥嚥靭靭,麵包味濃,好味。要決定點菜喇,想試多啲野,所以每人 order 左個 6 course set,即係可以試到 12 樣野喇 ~ 但係 facebook 只係能夠 update 12 張相,所以未能盡錄。

什果蝦沙律,賣相非常吸引,將蜜桃、牛油果切片,跟鮮蝦排得整整齊齊,鮮蝦味鮮、口感彈牙,配上即磨糊椒碎更加醒胃。

堂前凱撒沙律,廚師推住架餐車到面前,先問問對凱撒沙律有咩特別要求,例如配菜同醬汁,咁我只係可以答 normal 得喇,因為都唔係太清楚。新鮮蔬菜清甜水潤又爽口,加上煙肉碎及酸酸甜甜既 dressing,美味又開胃。滿枱既餐具,6 道菜有 6 套餐具,仲有餐前包同甜品,好采免強仲認到點用啫。

香草焗法國田螺,熱辣辣,有別於一般餐廳凍冰冰。香氣撲鼻,田螺口感軟棉棉彈牙,牛油香草又美味。可能會覺略為有點單調,如果可以加個香滑既薯蓉底就更錦上添花喇。

鮮蠔三食,生蠔配 sauce,個汁主要為黑醋汁,酸酸甜甜,生蠔呎碼雖小,但係非常肥美,清甜又 creamy。芝士焗蠔,靚芝士外面香脆,裡面軟軟棉棉,將蠔汁鎖住,鮮甜無比。煙肉焗蠔,熱辣辣香濃惹味,煙肉濃郁既肉味跟生蠔海鮮味混和,嚥嚥靭靭加埋嫰滑軟棉,多重口咁,好正。有大量海鹽墊底,唔知係咪一齊焗架呢,定係攞黎調味呢?應該裝飾似啲。

堂煮干邑龍蝦湯,女廚師推住架車餐黎到我地張枱前面便示意開始者個龍蝦湯。燒紅個煲落龍蝦肉炒香,再落干邑即刻搶晒火,燒到坎坎聲,勁 high,再落龍蝦湯略煮,再調味加 cream,上枱喇。味甜又鮮唔會過咸,淡淡酒香味,質感幼滑,都好滿意。龍蝦湯一直都係我至愛。

香煎三文魚扒,感覺有點普通,煎得皮脆肉嫰。用上新鮮蔬菜及鮮魚籽,可帶來點點清新既味道。個人都係較喜歡三文魚做刺生。

白汁銀鱈魚,簡單既磨菇白汁、簡單糊椒同鹽既調味,反樸歸真得黎好美味,清清地,魚肉嫰滑多汁,不錯。

煎焗黑鱈魚,都係第一次食黑鱈魚。皮煎得香脆,真係脆卜卜架,有濃郁海魚味道,肉汁好豐富,口感算滑,滿意。個汁有蝦米架,好得意,咸咸地,好好味。

澳洲穀飼牛柳配黑椒汁,只不辣既黑椒汁,微甜。牛柳肉質非常軟棉,完全唔洗用力去切,用刀一拖已可完全分開。Order 時,waitress 並無特意問想幾成熟,都係由廚師決定最好既烹調。依個係 medium rare,裡面嫰紅色,嫰滑非常,但絕唔會比您搵到半點血水,依個就係技巧喇。牛柳味濃、口感軟棉嫰滑、汁清淡不搶,中上級,正。配上蛋黃芥未醬,令味道更加提升。

安格斯牛柳配燒大蝦,大蝦有好香燒烤味,非常喜歡,肉質鮮爽彈牙,啖啖肉。安格斯跟澳殼飼一樣軟棉棉、味道濃郁、肉質鮮嫰多汁,滿足滿足。不需加添任何醬汁以好好味,我愛加蛋黃芥未,甜甜辣辣跟牛柳既味度真係好夾。配菜有焗薯及紅蘿蔔,用火爐暖住分開上,保持溫度,好細心啊。

朱古力梳乎里 Souffle,好香濃既朱古力,如果厭未夠甜,可以再加朱古力漿,或白朱古力醬,雖然本人唔好甜品,但都覺好好味。

堂煮班戟雪糕配香橙汁,如果淨食塊班戟會有啲寡,但係配埋冰凍既雪糕就完全唔同晒,又熱又凍,好難形容,冰火感覺特別,不俗。

寒冰脆皮雪糕球,上面放甜品,下面放乾冰,一放低就成枱冒煙。外層係朱古力脆皮,裡面係冰凍雪糕,雖然此甜點夠普通,但賣相同造形就一流喇,係好吸引。見到乾冰既演譯,又令我諗起明閣既翅晶瑩。

食埋甜品後,全晚服務、美酒佳餚、駐場歌手、高檔既裝修,多謝 HKD2888。

可配橙酒醬,令Souffle更香,而且冇咁漏;亦可配朱古力干邑醬,令味道更濃郁,更豐富。

原來仲奉送一個甜品,朱古力Bonbon,好味!已經好飽,未能一試魔鬼咖啡,下次再嚟試過!

是晚Hugo's都差唔多滿座,我諗大約有七成客人都係嚟慶祝紀念日嘅,因為吉他手都唱咗好多次Happy Birthday。另外見經理攞咗九十九次紅玫瑰去其中一枱,相信係客人求婚用嘅!所以呢度真係幾適合慶祝紀念日嘅。

來到
頭盤環節,二人都棄特色沙律(是日為油浸鴨肉沙律)及精選餐湯(是日為露筍忌廉湯),而選了自選頭盤(Selection from the Hors d'Oevures Trolley)。十八款不同的特免沙律及頭盤,由精緻可轉動的Christofle銀餐車推至食客面前,由侍者按食客要求,填滿一圓碟上檯。

內容款式之豐富實在令人眼花撩亂,幸而侍者十分體貼,為兩口子每款都取了一些,堆成滿滿一碟上檯。由於款式真的太多,只簡介其中部分:
- Parma ham拌清新甜美的melons,是永遠的頭盤心頭愛,這裡也有供應,真好!
- 青蘋果華夫沙律十分清甜可喜,當中香脆可口的合桃起了點晴作用,也是必吃推介!
- 芒果蝦沙律甜鮮交錯,又是相當美味
其他推介還包括鵪鶉蛋吞拿魚沙律水牛芝士蕃茄沙甸魚牛舌肝醬批也不錯,但最後兩款較為飽肚,建議不要選擇太多,因為主菜也很豐富! 另外而在吃沙律時,侍者見麵包籃空了,又細心添上一籃新的,服務貼心可見一斑。

來到六選一
主菜環節,內容據講是每星期轉一次,但當中鐵定不變的是享負盛名的燒牛肉($375);這款主菜,需在訂位時預留(侍者也會主動提問),否則以其受歡迎程度,食客臨時落單是會不吃到的,而我也為老公預訂了一份。
 
一看而知是極優質的五成熟燒牛肉,份量約有十安士之多,另配上約克布丁、原個焗薯及雜菜上檯,陣容十分強大。色澤粉紅的燒牛肉十分柔嫩,肉味極濃,不添加任何芥末或醬汁,單吃牛的原汁原味,已經十分動人,連同邊位的油膏同吃,更是豐腴美味,水準要比Lawry's高幾班,果然是一味必吃的招牌菜。拌碟的約克布丁也鬆軟得來有口感,比早前幫襯的Yorkshire pudding好吃多了。至於另一配菜焗薯,上菜後侍者以銀盤盛載多款芥末醬、還有滑忌廉、酸忌廉、煙肉脆粒、蔥粒等焗薯配料,供食客選擇,真是非常的細心;不過一來份量太大,二來焗薯整體較濕(應是恰的時間過長而焗的時間不太夠),所以盡了力也只完成不夠一半。最後雜菜的長豆條則新鮮爽口,全部吃光了! 總的來說,如斯份量與質素,真的值得多付$100來嗜嗜,牛魔尤其不應錯過!

就當日所見,場內真的不少食客是全檯皆牛(所以必須預訂!),但這樣對於咸胃有限的我太沉重了,故另一款主菜就揀了精選鮮魚,是日為黑鱈魚(Black cod)。黑鱈魚與一般鱈魚口感不同,肉質結實多了,魚皮也較厚富油香,魚味濃郁,與海鱸魚較接近;然而是日略帶醋酸的調味,未能將魚的鮮味表現出來,魚頂的放置的微咸蝦粒也沒有化學作用,表現有待改善。然而個人十分欣賞那墊底的又香又滑的薯蓉,收吸魚的鮮汁後尤其美味,我可是將之全部KO了!

來到最為期待的
自選甜品環節了,精緻琳瑯的多款特色甜品、蛋糕及水果杯,以另一架Christofle銀餐車緩緩推過來,簡單令人心臟快承受不了!!! 不知是好事還是壞事,餐車上每份甜品都有相當份量,一定吃到飽足有餘;但每位食客只可選擇一份,這可令甜魔真為難...

聽完一次甜品由頭到尾的介紹(甜品也是每週轉款的,所以在此不贅了),又想了半天(十分多謝侍者的耐性!),最後決定:來到經典法國餐廳,就點法式經典甜品---拿破侖。覺得自己的選擇很明智,因新鮮製起的拿破侖質感極端清脆,厚厚一層吉士醬甜美滿分,比老牌Amigo的有名出品美妙多了!

在揀選拿破侖時,見到碟身空白的位置頗多,我又不客氣追問可否配上一些水果,結果侍者多給一整芒果杯,陰謀得逞樂壞了!!
可知道這芒果杯除了份量充足,當中又是盡超甜美的完熟芒果,真的令人無限滿足!

嗜酒的老公,就聽從推介選了法式水泡餅。從精緻動人賣相,真的看不出,也想不到這是水泡餅,甚至吃在口中,也是軟軟濕濕的蛋糕口感;原來長期間浸泡清甜白酒中,是這款甜餅的關鍵,想一想,這甜品的口感,的確又比一般蛋糕挺身,浸泡的效果是酒香突出、清甜醉人,杯底的甜酒餘液,也是不可浪費的美妙精華,至於頂層的雜莓,也是不用說的鮮甜可人。

餐飲,與老公又是選了Cappuccino及Latte,各附以香脆蝴蝶酥上檯。這裡的Cappuccino泡沫是我所飲過中的最豐盈,估計約佔整杯咖啡的三分之二,口感也幾挺身又細滑,歷久不塌;杯底的咖啡則香濃有致。老公的Latte口味柔順自然,熱度很夠也不錯,就此完成滿足的一餐。

而也是當天埋單才得知由11月開始,餐廳逢週一至週三午餐特設八折優惠,折扣後這頓飯才$600有找,真是物超所值,抵食度有5分滿分! 大概已經不多人知道此優惠,當日離開時餐廳幾乎是全滿的,大家要吃還真要訂位;而筆時剛得知*餐廳現時也做週日午餐了,雖然價錢有所提昇,不過總算給大家多一個機會,去品嚐這經典風味!

本身不吃牛肉,喝咖啡又會失眠,所以無緣一試Hugo’s的兩款「名物」。既然餐廳有午市套餐供應,懶人如我當然從套餐入手。Hugo’s的午市套餐只在星期一至五供應(餐廳週末只做晚市),三道菜式的套餐價錢為每位$275,有六款選擇(包括: 法式燴海鮮、油封鴨腿、精選鮮魚、紅酒燴雞、薯仔麵糰燒南瓜配香草醬),最貴的一道為安格斯牛肋骨,每位的價錢為$375。

餐廳的前菜有三種選擇,分別為: 自選頭盤、凍兔肉醬和精選餐湯。建議大家下次來試午餐的話,一定要試自選頭盤。店方會派專人推著一輛盛有十八款前菜的精緻銀色餐車到客人面前,客人點選後由侍者將材料放在碟上,好細心的服務喔!當天除風乾火腿外,還有牛舌、無花果、鮮沙甸魚、帶子、墨魚和水果等…… 選了風乾火腿配蜜瓜、蕃茄配芝士、帶子、墨魚、牛油果配橄欖醬和芒果蝦等。Hugo’s的食材非常新鮮好味,蜜瓜和芒果真是又熟又香甜,海鮮既鮮甜又有海水味,風乾火腿更是鹹香和油份兼備,好吃得無話可說!

主菜我選了油封鴨腿,所謂「油封」是一種古老的烹調方法,廚師將鹽和多種香料,將鴨腿醃一晚,再以鴨油慢火燜煮而成。記得上次跟食友在Petrus吃午餐,食友選了油封鴨腿作主菜,當時食友分了一部份給我試,覺得非常香口。個人覺得Hugo’s當天為我煮的油封鴨腿,外型和配菜的搭配比Petrus的稍勝一籌。法豆、薏米、蘑菇和紅蘿蔔所做的湯很清,顏色又好看。切鴨腿時有大量鴨汁流出,當鴨汁與湯汁混合之後,鮮味盡出。鴨腿吃起來皮脆肉嫩,香味四溢,一點都不覺油膩。鴨腿的肉味在口腔內漸次釋出,是層次感的最佳演譯。

喜歡甜食的朋友更要來試Hugo’s的午餐,店方也是以餐車將約十多款甜點及水果(有拿破崙餅、黑森林、栗子慕絲、Tiramisu、草莓蛋白等……),推到客人面前讓後者自行點選。有這麼多選擇,款款更美觀吸引,真的不知該如何選擇才好。當天選了黑森林和雜莓水果杯,兩款的份量都不少。黑森林慕絲是以忌廉與櫻桃醬相間,幕絲內放有軟軟的櫻桃肉,面層綴以許多朱古力碎片而成。整個甜品的味道不是太甜,忌廉有豐富的乳脂香味,朱古力碎片也香,但略嫌櫻桃肉的香味不足。雜莓水果杯內有許多新鮮藍莓和覆盆子,水果只要新鮮的話,味道就自然好。

餐飲我選了熱朱古力,味道其實與St. George和Grissini的差不多,都是濃香滑溜。不同之處是,Hugo’s熱朱古力奉送兩塊酥香脆口的金黃迷你蝴蝶酥伴熱朱古力,Grissini的熱朱古力面上有「拉花」,St. George只是朱古力一杯。個人還是喜歡小店Cook Light Café的特濃朱古力,因為後者可讓我自定甜度,更愛它的濃濃朱古力香和面層的奶泡、忌廉裝飾。

來Hugo’s當然可以吃到好味的菜式,但最令我難忘的,卻是服務團隊細心和殷勤的服務。店方主動送來雜誌,讓我在等待菜式的準備時可以看。侍應又為我主動介紹餐牌菜式,面帶笑容是一定的了,還問我對菜式的意見。我向侍應表示,希望取得晚餐餐牌作參考,Paul劉經理更在我離開餐廳後兩小時內,親撰內附餐牌的電郵給我。如此重視客人的要求,當然要向大家大力推介!!!

We arrived 1 hr early, they still let us in. We were sitting at a huge circle table. The settle is nice, light very dim, soft music.
Serving speed is slow (in a good way), some dishes were freshly made in front of you. You will have all the time you need for chatting.
Portion is just right, I finish all my dishes not feeling extremely full. Steak and 牛仔肉 is not extremely good, but I would rate it 85/100, if "The Steak House Winebar + Grill" is 90/100.
Overall, excellent experience with reasonable price (in hotel standard).

We went there at night, 5 persons in total. Extremely disappointed in the food. Food quality been dropped a lot! The started drink was good (Not champang, but a cocktail). The bread was nice, the side dish was not bad . The bake potato come and the Steak was awesome. However, that's it. We have ordered few appertize to start out and it started to screw up from there. And server order as following too: Person A (Me): Escargot, 1/2 Cesar Salad, Lobster Bisque, Pork Chop, Cream Brulee. Person

Person A (Me): Escargot, 1/2 Cesar Salad, Lobster Bisque, Pork Chop, Cream Brulee.
Person B: 1/2 Cesar Salad (served together with me and been waited for over 25mins after Person C salad had served), Steak.
Person C: Cesar Salad, Lobster Bisque, Steak.
Person D: Hot Foie Gras, Lamb Rack
Person E: Hot Foie Gras, Pork Chop.
The waiter recommended me to have Escargot first, then salad then Bisque. OK, it's fine.
First, they tossed 2 order of Cesar salad in front of us, serve 1 order to Person C. Here is the "fun" part... they brought another tossed order back to kitchen instead of serving to Person A (me) or B. We were waiting with empty table for 15mins before the escargot arrive (while other was having their Cesar Salad or Foie Gras or Soup). While I was eating the escargot, B still had nothing. After I finished with the Escargot, B and mine Salad finally came. Yup, not freshly toss but been tossed for over 25mins....... Question here: Why don't they toss it fresh? Why don't they serve 1/2 to Person B while it already been tossed for long time?? Still don't understand.
Escargot: Blend, tasteless.
Cesar Salad: Blend, tasteless.
Hot Foie Gras: ...... way over cooked, too dry.
Lobster Bisque: I understand it's Cognac style but Cognac taste was just too strong, lost the balance of the soup. Not my cup of tea.
Pork Chop: We can't finish it, it had strong 臭豬味, not the rich protein taste it should have.
Lamb: So So, standard.
Steak: I don't eat beef but my wife said it's awesome and my Dad said it's as good as before.
Creme Brulee: Worst of the worst.... it had a burn plastic taste... we have to return it. Come one... did you guys forgot to remove the plastic warp??
Service was OK but I guess they are still very junior, inexperience. One person did impressed us, the Filipino Singer. Does anyone noticed that he used to work in Sabatini?
Frankly, the Buffet food was much better then Hugo....
