在香港主流嘅酒吧文化(劈酒/ DJ/ Live Band)之外,探索一下調酒的品味世界。認真做Cocktail,畀得起錢嘅當然可以去五星酒店,但係要價錢親民嘅,除咗北角CURE之外似乎都唔多選擇。呢度一杯嘅價錢為$98。每人嗌左兩杯都唔貴。很多出名嘅酒吧嘅cocktail都係嚟嚟去去嗰幾樣嘢,或者用「好睇唔好飲」嘅材料俾人打卡,但係呢間酒吧嘅理念係想俾人飲到真正嘅和原創嘅Cocktail,推廣調酒文化,達致調酒的「藝術治療」,CURE就係呢個意思。Nostalgia in Glass Bar Manager Anthony話呢杯signature Cocktail概念來自不斷流逝嘅集體記憶,好似近期嘅新光戲院光榮退役,好想以Cocktail嘅形式去記錄我們的老香港🇭🇰。層次:第一步聞到肉桂香,然後會飲到咖啡和錫蘭紅茶做出嚟嘅鴛鴦,再之後榛子香,最後再肉桂糖漿完結,首尾呼應。Warmth & Whispers層次:煙肉脂肪洗過嘅波本威士忌,豐富嘅煙熏氣息,然後甜而微酸係波特酒同檸檬汁平衡。肉桂粉呼應威士忌嘅煙燻香。最後黑莓和蛋白為酒帶來整體提升。炸雞翼和炸薯條小食高質,有心機,火候控制剛剛好,可以同Cocktail完美配搭。…Read More

相對於港島區的標準Omakase,呢個九龍城區嘅串揚(大阪炸物)算係平咗一截 ($1380加一),但係三個原因它的質素非常高:1/最高質食材,每早上由日本魚巿場直送;2/日本師傅主理;3/聽日本師傅講故事。「渡邊先生的故事」。今晚竟然俾我哋有幸遇到了九龍城衙前圍道附近三間日本料理(北斗、浜淹、渡邊屋)的主理人渡邊先生!今年在香港37年,會講廣東話,雖然講得唔係好正,但充分表現出佢對日本飲食文化嘅熱誠,好想好好介紹日本,令顧客唔單只係享用美食,而係明白背後嘅豐富故事,呢個同師傅有趣嘅交流😅,都唔係去日本可以搵到😘。「串揚的故事」。串揚係源自大阪,但係餐廳係仿照高級的東京style 串揚,即係大老細放工去食嗰啲fine dining,水準超越了大阪嗰種平民化炸物(我幾年前喺大阪食過串揚,一大疊上,好似食緊大排檔咁)。但呢間餐廳果然係完全另一個層次。渡邊先生話,天婦羅Tempura 原來唔係日文,竟然係葡萄牙文黎,炸物係幾百年前由歐洲傳至日本嘅料理😮。「即日到港的故事」。傾吓傾吓又講到 ,所食到嘅海產係日本魚市場即日嘅貨!🔅前一晚11pm通知日本魚市場需求的貨🔅早上3-6am 日本魚巿場買貨🔅中午12pm坐飛機嚟香港🔅下午3pm送到來香港的店舖好多香港餐廳都係隔日,能做到即日嘅餐廳真係少之又少。聽到呢度,我竟然有少少眼濕濕,知道每一碟背後都費盡功夫,長途跋涉😭⋯$1400 一位,食過就明白佢嘅價值所在。(食材每次不一樣,相片僅作參考)…Read More
