Carbone is one of the restaurants that I have been dying to visit for the longest time. The Tortellini al Ragu was a firm favourite. I was told that lamb ragu itself is uncommon in Hong Kong, thus making it a rather special dish! The pasta was cooked al dente, to the point that it was almost chewy. Sauce left a slight burn in the throat from the spice... but no regrets because it was delicious! The ricotta cheese was also a nice addition as it made the pasta quite creamy and toned down the spice levels.

Another favourite from the night was the Dover Sole! It’s interesting watching someone debone a fish right in front of you, because that doesn’t happen... ever. I loved the sole dish as it was firm but flaky with a very nice texture. The brown butter with capers and parsley was such a simple but powerful combination. It ended up being the sauce for the fish and honestly, I was just gulping everything down at this point. Absolutely stellar and I highly recommend the Dover Sole to anyone who wants a unique experience.
