okay.. in order to secure a table, you definitely have to reserve a table WAY BEFORE HEAD.

So we booked a table for 2 around a week ago, we can easily secure a table on a weekday at around 6:00pm

First you need to choose what soup - the most famous one will definitely the chicken fish moat soup. Some may choose to only have the soup itself. But we chose to order half portion and try several hot pot dishes. We ordered 2 fish moat dumplings (yes i do love fish moat), beef, claims, 'hern ling' and cuttlefish ball. Honestly thats quite a lot for 2 people since you will have to finish the chicken as well but we managed to finish everything (or most things) after around 2 hours. 

We were starving when we were there, so when the food came we just couldnt stop ourselves from start 'hot potting' - putting all the raw stuff in the soup. BUTTT as you put stuff into the soup, you basically ruin the integrity of the soup. SOOOO the right way is to drink as much soup as you can BEFORE you put any food in. Only by that way you taste the geletiny texture of the soup. 

Besides, the seafood - (clams) is also VERY good. They are fresh (you have to go order it at the counter) and soup just compliments the freshness of the clams quite well. As for the beef, it was cut at an appropriate thickness to retain the chewy texture. 

As I have repeated quite a number of times - the essence of the meal had always been the soup!! Butttt I do think the soup could be slightly oily. Try removing the layer of oil on top before devouring this heavenly soup.
