海老名沾麵 (English name: Ebina Tsukemen) is known around ramen fans as THE place for tsukemen ramen that is locally owned and run. That style of ramen where the soup is separate from the noodle and you dip the noodle into the soup.Located in Cheung Sha Wan, boyfriend and I decided to find it. Inside it's very narrow and cramped. It's a bar table with the chef cooking away infront of you.
All the condiments is infront of you. The tap is where you pour your own water.
This condiment was interesting. Sakura shrimp infused vinegar.
Menu is in Chinese only. There is no 10% service charge. Basically, they serve tsukemen in three soup bases: soysauce, tomato or miso. All include an egg, nori and char siu.
They also have a time limited edition where they only have a limited amount. On this day we were there it was oyster yuzu ramen.
Everyone is also provided with a plate of tenkasu (tempura flakes). Add that on top of your ramen to give it some crunch factor.
Boyfriend ordered the limited special. Oyster yuzu ramen ($128). I wasn't too fond of this one though boyfriend loved it. I felt it was too fishy in taste. The oysters were cooked just right but it just tasted way too fishy. I wasn't a fan.
I ordered the soy ramen ($79). It was a regular size portion of noodles.
The noodles were the thick kind. Very chewy and smooth with no aftertaste.
The soup (though extremely oily) was amazing. It was rich and fragrant. You could taste the strong taste of shrimp sued to create the broth. I felt it was way too oily. The char siu wasn't good at all. It was flavorless and pretty much hard to chew on.
The egg was extremely runny but it was not flavored.
Over all, the soup was clearly the star. Everything else was just ok so this wasn't a perfect ramen. But then isn't that what makes a good ramen? The soup? Perhaps. But for me, I think the entire package really pushes it over the edge and this didn't do it for me.
