Konjiki Hototogisu is originally from Tokyo with a  Michelin Star from 2019 - 2022. It opened it's first branch in Hong Kong's IFC a while back and we went to try their signature shoyu ramen with it's distinctive fish and pork base. A few years later, they now have a new branch in Fashion Walk. It had a lot of attention and every time I walked by there was a line of people. Their focus in this shop? Ramen using an oyster based soup.  But as hype usually dies and it appeared other shops started to create their own oyster soup ramen, this place became a lot more quiet. And as I hate lining up for food, we decided to go here for dinner.

The front was flashy looking and didn't feel like your usual ramen restaurant.

Menu is in English, Japanese and Chinese. They offer their signature oyster along with other broths as well. The other broths can be found at the other branches but only this one offers the oyster one.

They also offer appetizers but there is one page that has appetizers based around oysters that the other branches do not have.

As we started with appetizers, we ordered a couple of drinks to go with them. Boyfriend ordered the Ripe Peach Soda ($32). A light carbonation with a strong peach taste.

We wanted to try some of the oyster appetizers as this is the place for oysters. This is the Grilled Oyster Skewers ($62). A thin slice of pork wrapped around a shiso leaf and a perfectly grilled oyster. A light sweet glaze went on top. All with a palate clensing pickled daikon. You get two skewers with two oysters each so not a bad deal.

Oyster and Vegetable Tempura ($88) was a recommended item on the menu so we gave it a try.  You get two oysters, a sweet potato, Japanese green pepper and a slice of corn on the cob. The tempura was light and not oily. The most surprisingly delicious item was the corn on the cob.

I had the Shio Oyster Soup Ramen ($118) as we purposely came here for oyster. There were two thin slices of charsu, a slice of red pepper, red onions, scallions, parsley and rocket lettuce. There was a drizzle of oyster oil and oyster paste to pump up the oyster flavour. The charsu was so soft and tender.

And of course, the soup. A clear broth that had a strong oyster, pork and fish taste. It was rich yet delicate. Very umami.

Boyfriend decided to order the Tonkatsu Smoked Pepper Ramen ($115) as he didn't recall this in the other branch and was curious. Two slices thicker cut charsu and burdock was found. But what really stood out was the smoked pepper taste in the soup. Somehow it enhanced the fish pork broth and made it even better.

Very chic decor with a more higher end ramen experience. Food was delicious and service was efficient. Would come again as I noticed that lunch time they have a decent value for money sets.
