Cold Marinated Tomato - The tomato was first peeled and then soaked with Ume solution (Young Apricot) to give it more fragrant flavour. Quite appertizing. ~ 7/10.Omelette Roll with Avocado and Sliced Pork Char Siu, with Cucumber and Leeks & Spicy Miso Sauce -This was promising but I think the char siu was a little too cold which made it a little weak in flavour. 蓮根チャーシューつくねはさみ揚げ - Fried Lotus Root Sandwich with Char Siu
Lotus root sheets sandwiching minced char siu and yamaimo, a type of vegetable with a crunch. I liked this and at $48 it's a bargain. ~ 8/10

Spicy Shrimp Mayo -
This was very nice actually. The prawn head and prawn meat had abundant prawns taste, the chili mayo sat beneath the prawn to ensure it stays crisp. Very exotic and at only $65 a bargain for 4 prawns and 2 prawn heads. ~ 9/10

Grilled Beef Ribs -
Slow cooked until fork tender and mixed with Orange marmalade and Sichimi spice. This was generally pleasing, but probably needed more thickish sauce coating? ~ 6.5/10

中華そば - 博多醤油拉麵
The Japanese Chef himself kept referring to this new ramen as Chuka Soba 中華そば, and this is obviously Tokyo style ramen and partially Chinese influenced. You can actually find this in Fukuoka city (Hakata is an area within Fukuoka), the origin of Ippudo - basically the rule is that anywhere with a China Town will you see a 中華そば. Made with Soy Sauce, a bit of Fish powder, more Chicken than Pork Bones and made into a clear soup, etc. The ramen can be chosen between a Curly Thin noodle or a Medium Straight noodle. Recommended: Curly thin noodles ordered super-hard. This is the original intention of Ippudo even though it is not the most traditional 中華そば version. ~ 7.5/10

Almond Tofu with Green Tea Sauce -
$28 is a good price. This had a very strong almond taste and is quite gelatinous like but smooth, it is so Japanese. The Green Tea sauce was interesting. Some didn't think it worked as a combo. I think this was exploratory but I prefer fresh fruits with my Almond Pudding too usually.. ~ 7/10

サーたーアンダギーアイス添え - Okinawan Donuts with Ice Cream
I have had this before, it is quite a good end to a meal. ~ 8/10

The Japanese Chef mentioned that in Hong Kong, many customers expect ramen to be served with a tonkotsu and strongish broth base.

He introduced this original Hakata Ippudo recipe to Hong Kong just to show that ramen or Chuka soba can also be made with a clear soup with soy sauce, and hoped that we will also enjoy this alternative style. I can't agree more! Eating Japanese ramen is all about being open-minded and having fun! When are we getting our dose of Mapo-Tofu ramen or Sanma Ramen ? Or Oyster or Horumon ramen as is found in Hokkaido? Amongst many other alternatives, such as Ice Cream Ramen and Coffee Ramen, Blue Algae ramen, Whale Ramen, Horse Ramen, Shrimp Ramen, etc. These can all be found in Japan, only because people there are receptive to new ideas and don't judge food using their myopic subjective minds.
