FINDS, located in hotel The Luxe Manor, is one of the very few Nordic restaurants in Hong Hong. Quite a number of dishes use fruity ingredients like berries and root vegetables. With no exception, this sexy ruby cocktail is made out of raspberries, lingonberry, passion fruit, vanilla vodka & lingonberry vodka, passion fruit syrup & cranberry juice. You can also find some edible cointreau gold caviar at the bottom that actually took us by surprise.
Salmon in Six Ways
We were told that there are 50 ways to prepare salmon because it is a very versatile fish that can easily go well with different cooking methods, seasonings, as well as ingredients. Luckily, we have the chance to try six of them and we cannot be more anticipated.
Starting with an order, we were recommended to try the lax first which is a very traditional Nordic appetiser to enjoy, usually with rye bread. A very thinly sliced salmon has been cured with beetroots, dills and sea salt for more than 20 hours, served with the mustard sauce to intensify the savouriness from this little piece of fish.
Smoked salmon roe remained plumped and shiny after this preparation process. The fishy taste is not as strong when the smokiness becomes more prominent. These delightful savoury roes are sitting on a bed of sweet sour cream and chives, a perfect condiment to go with any salmon dishes.
The cold-smoked salmon piece is not as savoury when comparing to other ways. It's smoked with alder wood imported from Finland. This is probably our most familiar way to enjoy salmon.
In contrast, pickled salmon is quite uncommon in Asian countries. A small cube of salmon has been pickled with sugar, dill, vinegar and water for over 20 hours, served with a slice of pickled carrot, a halved shallot, garnished with dill flower.
A seared salmon with a twist as it is rolled with fennel seeds and crushed peppercorn and served with avocado mousse. Basic but phenomenal.
Lastly, we have a dollop of salmon mousse with a crispy malt bread. The mousse is very smooth and packed with a complex salmon flavour, while the crisp bread has a little bit of sweetness to it. We were also recommended to try the mousse with the malt bread from our warm bread basket!
With only fresh ingredients are used at FINDS, we are very confident and comfortable to enjoy their veggies raw or cooked. This vegetarian dish consists a mix of colourful red and yellow roasted beets and goldroots, mushroom-celeriac-apple salad, beetroot sprouts from Skane, Sweden. You are experiencing a ride on a rollercoaster towards earthiness, sweetness and even smokiness flavours in a plateful.
A hearty bowl of hot rich soup full of flavourful parcini aroma, blended finely with onion, thyme and rosemary with vegetable stock as the base. The crushed hazelnuts on top kind of complete the whole thing because roast nuts are actually good with mushrooms. There is no fancy truffle but pure beautiful earthy mushrooms.
Venison is not the easily kind of meat to find in Hong Kong and we have heard that it is quite hard to source them. These venison tenderloins are extremely succulent. It is like cutting butter when your knife run through it. The seasonings and sides are taken seriously with Finnish pine salt, charred carrot, crispy celeriac, black current white wine sauce.
Vodka is part of the country so you can't have a nordic meal without some vodka, especially lingonberry vodka. Rustic cold stone shot glasses are used to keep its temperature cold. A lot of other kind of Nordic hard liquor can be found at the bar to keep you warm in this cold weather.
A fruity refreshing dessert made with mostly sweet and sour lingonberry and yogurt, complimented with different elements including meringues, lingonberry jelly, dried lingonberries, and lingonberry syrup. The mousse discs are very smooth and thin in texture. It is almost melting but it is not. You can easily down a few of these even after a satisfying meal.
