We had been wanting to try FINDS for a long time and we finallygot the chance when we went there for our wedding anniversary lunch.The place does Scandinavian (Nordic) food. We were seated and immediately given menus - our server was very good and efficient. We both went for the signature lunch menu with free-flow drinks. We both ordered the famous salmon six ways, I then opted for the beetroot risotto and my wife chose the Swedish meatballs. We also both decided to have the dessert: Daim parfait.
First we had a glass of prosecco and awaited the salmon. When it came, it was a feast for the eyes. Beautifully, yet simply presented with a nice progression through various techniques. We were told to start with the gravadlax and then proceed as we wished. The gravadlax was very nice. Beets were used in the cure, so the the translucent fish had a nice pink edge. It was very nice served with a dill and mustard sauce. We then went on to the salt and pepper slamon. The barely cured fish was wonderfully textured and the salt and pepper played against the smooth avacado puree and crunch of radish. Then was the pickled salmon. I have never eaten salmon pickled before, but it was delicious. The salmon came through the pickling process and was not lost. The cold smoked salmon was next and it was delightful. The salmon roe was a light and salty treat that popped nicely between the teeth. Finally, the salmon mouse was really nice. served with a crisp black bread, it was soft, but had texture and moist, but not wet. It was not over worked and kept its integrity.
After being poured a glass of red, our mains arrived. The beetroot risotto was warming and earthy. It had an incredible colour and the little treats of feta and pickles cut through the richness of the rice and added extra flavour layers. The bright green of the Romanesco broccoli on the red of the risotto was eye-catching.
The meatballs were sensational. Served on some of the butteriest mashed potatoes ever, the smokiness of bacon came through the juicy and satisfying meatballs. The gravy was rich and heart-warming and the lingonberry compote sent it over the edge. It was a triumph and screamed elegant comfort.
The final dish of the day was the daim parfait. To those who have not lived in Europe, daim bars are a king of hard caramel chocolate bar. The dessert here does not use actual daim bars, but it plays off thei flavours - spectacularly so. The parfaits were rolled in a crumb and served with a caramel sauce and a chocolate sauce. The freeze-dried raspberry crunchy stuff was incredible. It was a plate full of different tastes and textures that came together as a whole to invoke that European childhood classic.
Basically, this place is really good and the executive chef, Jaakko Sorsa, is very enthusiastic about what he does. He came out to talk with us after out meal and spoke about his work. FINDS is a one-of-a-kind in Hong Kong and it is a great find. I have recommended it to all of my friends, colleagues and clients and I do so again now. It is great. We would not hesitate to return and try more of their great dishes - perhaps the scapas.
