时间飞逝,日月如梭,话咁快就来到2022年啦。捏指一算已经2年冇去旅行了,特别怀念东京的居酒屋和靓和牛肉。在2022年的第一个周末决定食下靓的日本和牛作为开年。 Time flies. The year 2021 left us without saying goodbye. 我和朋友周日晚上7点专门来的尖沙嘴金马伦道29A号的日式烧烤居酒屋 Wagyu Ya。 Wagyu Ya地方不是太大,店内干净企理,温馨雅致,有吧台位和卡位供食客选择。为方便向吧台前方的工作人员点菜,我们选择了的吧台座位。这里通风系统做得几好,烧烤炉是日本制造,烤肉时唔会觉得烟幕弥漫,特别适合几个知己好友倾计小酌。 Wagyu Yam卖点是为食客直送日本岩手县出品的和牛。日本和牛被称为「世界上最值得一吃的牛肉」,最大卖点是肉味比一般牛只更为香浓,肉质更加细腻,有入口即溶的效果。餐牌上提供各种日本优质的和牛,海鲜,清酒等,各种食材供真系琳瑯满目,让人目不暇接。
A friend of mine and I dined in Wagyu Ya on Sunday night. Wagyu Ya is a typical Japanese Izakaya and is located in G/F, 29A Cameron Road, TST. The restaurant is clean, warm, and full of an atmosphere of elegance. The menu offers a variety of Wagyu beef, KuroButa, and sea foods. The restaurant imports Wagyu beef directly from Iwate, Japan. We ordered Meat-Eater, “HJL” A5 Wagyu Sando, and Wagyu Uni Seaweed Taco.

我们2人点了餐单上的“食肉者“,Wagyu Ya Don定食,A5和牛三文治以及和牛海胆紫菜Taco。 ”食肉者“包括和牛4个不同的部位:牛舌,牛肩胛,西冷,三角腩。牛舌(Oxtongue)富有弹性且软嫩多汁,油花丰富,味道香醇,短时间即可烧熟,具有独特口感和味道。肩胛肉(Chuck)是牛经常运动的部位,因此筋肉发达,油脂分布有如雪花般的纹路,肥瘦适中,口感较结实,肉味更浓。西冷(Sirloin)为牛只后腰脊柱两侧的后腰脊肉,此部位靠近腿部之运动肌肉,油脂如同霜降分布均匀, 肉质有弹力,口感有咬劲,每一口都拥有浓郁的牛肉香气,肉质嫩而多汁。三角腩(牛小排Chuck Short Rib)含有清晰油花的软嫩肉质,肉面布满清晰的网状油花,堪称是牛五花或者牛肋排中的顶级品种,食完齿颊留香,其滋味油香及嫩滑肉质令人回味无穷。
The Meat-Eater included 4 different parts of a Wagyu, Tongue, Chuck, Sirloin, and Chuck Short Rib. Each slice of the meat in Meat-Eater looks pink, so fresh and so attractive. The taste of the Wagyu beef sublime: buttery, sweet, with delicate notes of umami, it is the pinnacle of fine dining.

Wagyu Ya Don定食里面有熊本和牛肩肉,鹅肝,海胆,左口鱼裙边,吞拿鱼蓉和三文鱼籽。熊本和牛肩肉烧得恰到好处,美味多汁。两大快鹅肝煎得外酥内嫩,食落柔软细腻甘香。左口鱼裙边系成条鱼最肥美的部份,入口即溶更觉鱼油浓郁甘香。海胆十分新鲜,只能简单用“鲜、嫩、滑”三个字来描述。三文鱼籽粒粒晶莹剔透、颗颗饱满就著吞拿鱼蓉一起食口感脆嫩惹味。
For the Wagyu Ya Don, the Flounder Fin (Engawa) is the best part of a flounder. It melted in my mouth and gives me a rich and delectable taste. Two slides of Foie gras were fried perfectly, tender with a crispy crust, and were tasty. The fresh urchin and the crystal-like salmon roe had a tender texture and a delicate, subtle flavour.

A5和牛三文治是这店的特色必试食品,烘得微焦的面包夹著厚切柔软香滑的吉列和牛,浓郁的肉汁和油花四溢,面包带来牛奶甜味,与粉嫩的和牛可谓绝配。和牛三文治上加入了黑色鱼籽和金箔作为点缀尽显矜贵。
“HJL” A5 Wagyu Sando is the signature dish of the restaurant. The sando is made of aromatic wafts of toasted, buttery bread and a deliciously slice of Wagyu beef. This mouth-watering sando is explosively flavourful and outrageously delicious. The Sando is embellished with Caviar and gold foil to show its luxury.

和牛海胆紫菜Taco以紫菜天妇罗当作底,中间盛载A5免治和牛肉,牛肉上面铺满了新鲜的海胆,最上面有晶莹剔透三文鱼籽。 Taco底脆馅靓,一啖一个,鲜甜十足。
“HJL” A5 Wagyu Sandwich is the signature dish of the restaurant. The sando is made of aromatic wafts of toasted, buttery bread and a thick delicious slice of Wagyu beef. This mouth-watering sando is explosively flavourful and outrageously scrumptious. The Wagyu Uni Seaweed Taco is combined A5 Wagyu mince, urchin, salmon roe, and seaweed tempura. The bite-size Taco is finger-licking and very delicious.

这晚我们十分享受Wagyu Ya居酒屋提供的高质和牛同其它精致的菜式。动笔之时得知政府禁两周的晚市,希望Wagyu Ya居酒屋能安然挺过这一劫,让我们下次想食靓和牛肉时也有落脚之地。

We had a wonderful evening and fine-dining experience. We really appreciated the excellent dished provided by Wagyu Ya.
