zuma係英國進駐嘅fusion日本料理,係倫敦既時候我已經食過,諗住香港既水準都keep到所以黎試下。呢度裝修佈置好特別,用左好多落地玻璃,樓底好高,但就好嘈,話佢係高級餐廳又唔係,似係比人飲酒談歡多啲,仲要大部份人都係鬼佬多。聽好多人講都話要試佢地嘅刺身,今次我點左兩個都係tartar,刺身牛同幾款唔同既壽司卷物等..先試呢個salmon tartar配上魚子醬,下面有醬油浸住,加d檸檬汁上去撈埋黎食好好味,真係好新鮮..跟住到otoro同salmon既tartar combo,上面都係有魚子醬再加d蔥粒,淨係睇賣相都一流,油脂分佈均勻,放係炸蓮藕片一齊食好正,比上面既更加滑同口感黏啲..到呢個松露片配刺身和牛,包埋d青瓜口感好清新,但醬料好普通,尚待改善。其他壽司卷物好一般,不值一提。感覺呢一間係名過於實,雖然食得出用料上乘,但因為價錢太貴而且唔值所以唔推薦,不過同客食飯都係唔錯既選擇但一定唔會自己黎,想食正宗既日本料理更加唔會揀呢間。值得一讚既係呢度既服務,都算幾專業嘅,每上一道菜都會為我地講解。

跟住到otoro同salmon既tartar combo,上面都係有魚子醬再加d蔥粒,淨係睇賣相都一流,油脂分佈均勻,放係炸蓮藕片一齊食好正,比上面既更加滑同口感黏啲..

到呢個松露片配刺身和牛,包埋d青瓜口感好清新,但醬料好普通,尚待改善。
其他壽司卷物好一般,不值一提。

感覺呢一間係名過於實,雖然食得出用料上乘,但因為價錢太貴而且唔值所以唔推薦,不過同客食飯都係唔錯既選擇但一定唔會自己黎,想食正宗既日本料理更加唔會揀呢間。值得一讚既係呢度既服務,都算幾專業嘅,每上一道菜都會為我地講解。

Icon dish & Festival Exclusive: {天空"鮪魚三味Sustainable Ten-qoo Tuna Omakase 3 types} ($100)
天空まぐろ,鮪魚(blue fin tuna)是產自熊本人工養殖可持續發展的種類,廚師發辦三式即點即製,略為稍等便送到手上.
包括軍艦卷(Gunkan Maki)以紫菜包裹壽司飯,上面放進鮪魚碎肉及飾以酸梅醬碎蔥,及鮪魚刺身(Tuna Tataki Sashimi)捲日本酸子薑,面飾以炸蒜片及芫茜;兩款各有特色,沒有過分調味,保持魚肉鮮味.
而第三款是炙り鮪とろ以火炙過魚肉表面,不需蘸點鼔油芥辣,飾以炸京蔥;魚肉有點薄一燒中間就裂開,不過夠肥美入口即化,日本米粒顆顆細小圓潤,烹調時間掌握恰當,整體很味美.

新地造型漂亮,飾以各色圓形通心糖菓,草莓面撒上大量爆炸糖.本以為是以產自日本德島縣的草莓製雪糕,可是怎也品味不出草莓味來,只是甜甜糖菓味道,後來再上網細閲menu,推敲可能是櫻花味,不過又不能確定,因為完全沒有過往嚐過任何日本櫻花甜點的甜酸味..故此於我而言,是一樁懸案..亮麗造型彌補不了陌生味道的空白,也許是我知識淺薄見得世面少吧.

My husband and I had our Valentine dinner at Zuma. It was a nice experience. We arrived early for our booked time but weren’t in a hurry. We stayed at the bar until our table was ready. We each had 1 drink, wine for my hubby and a cocktail for me. It was a nice calm start before our dinner.We had the restaurant’s Valentines Day Special menu. Resembling the power and status of one of Japan’s governing families in the 1500s – the Hojo clan founded by Hojo Ujitsuna, this novel take on the Old Fashioned comes with a pleasant surprise. Even though we are not a fan for the manly flavours of tonka bean and leather, this drink is very picture-worthy and it goes exceptionally well with the lounge’s Grilled Tofu, Japanese Cherry Wood smoked with spicy Barley Miso, or any meaty dish.

相對來說,送酒的佳品當然還是香口的炸物,餐牌中也有幾款可供選擇,分別有炸雞、炸魷魚、炸軟殼蟹及炸豆腐等等,而各款炸物都炸得香脆可口,可是精髓卻在各自的醬汁身上,如配上軟殼蟹的是芥末蛋黃醬,配上炸雞的是高菜蛋黃醬,相當有特式。

未開始吃燒前,來點蔬菜中和一下也不錯。蕃茄絕對成為消膩恩物,而且還配上酸酸溜溜的酸汁,清新解膩,中間更有水菜及茄子。另外,也有日本人非常喜愛的麻醬菠菜,雖然不是清新類,但也起到減輕熱氣的功用。

期待已久的串燒一一送到,不知是不是點得太多,陣容相當鼎盛,大蔥雞肉串及雞翼排成扇狀,燒的火喉真是不錯,雞肉嫩口,雞翼還很juicy。說起串燒,小弟是極度喜歡牛肉的,這串安格斯牛肉醃得很美味,燒得微微焦香,中間還夾著一小塊青椒仔,令人回味。

友人看見有燒帶子即是點上,表面燒得香口微焦,上面放有明太子及梅醬牛油,口感清爽又惹味。然而,燒三文魚卻帶給我另一種難忘的味道,肉質幼嫩,味道帶點點甜,就算飽了,也吃了兩大舊。

這麼多串燒小食,我也吃飽了,可是友人還有點意猶未盡,來多兩盤壽司。其中一盤是手握壽司,分別有甜蝦及油甘魚,估不到手藝不錯,水準不俗。而另一盤則是卷物,有三文魚牛油果卷及加州卷等等幾款可供選擇。

突然想食好些,所以決定黎呢間餐廳。位於中環置地廣場裡面,預左佢一地唔平。我兩個人食左約$1500,但都叫物有所值。食品好新鮮,好好味。服務員又好細心,服務態度極好!環境亦都好舒服。我一定會再來。

Bad bad service......!!!Buffet 服務愈來愈差,你叫服務生,明明聽到都扮聽唔到,d碟疊上疊,可惜都無人收無人理。一張table 六個人,明明額外加哂$加飲品,結果其中一個客人叫加水,服務生真係淨加水俾叫果個客人,旁邊d人無哂水都唔理! 可憐個穿suit似男主管既服務生做到氣咳........仲有buffet食物完全無label, 2種顏色相同既茶一樣無label, buffet部水杯無哂都唔加,職員莫名其妙地黑囗黑面,差d以為自己係廉價food court 食。不過,食物款式選擇多,讚! 可惜味道退步左唔少,沙律個個都話太鹹,天婦羅ok, sushi ok, 但其他如殼湯亦太鹹,串燒還正常.....

Buffet 服務愈來愈差,你叫服務生,明明聽到都扮聽唔到,d碟疊上疊,可惜都無人收無人理。一張table 六個人,明明額外加哂$加飲品,結果其中一個客人叫加水,服務生真係淨加水俾叫果個客人,旁邊d人無哂水都唔理! 可憐個穿suit似男主管既服務生做到氣咳........

仲有buffet食物完全無label, 2種顏色相同既茶一樣無label, buffet部水杯無哂都唔加,職員莫名其妙地黑囗黑面,差d以為自己係廉價food court 食。

不過,食物款式選擇多,讚! 可惜味道退步左唔少,沙律個個都話太鹹,天婦羅ok, sushi ok, 但其他如殼湯亦太鹹,串燒還正常.....

Luckily we got a table despite having booked only the evening before. We had to give a credit number to guarantee the booking. Arriving at 11am and was reminded that we needed to leave before 1 pm. The place was full and most people - waiting staff and patrons were English speaking. Menu was in English only. Civilized environment, no queue and no one piling food onto their plate. Hot and cold appetizers were available buffet style and there was plenty and well replenished. Sashimi and sushi all tasted good. Not too sure about the fried and BBQ dishes tho. They were not as freshly made as I would have liked. The octopus balls were particularly chewy. Clam soup was delicious. Main course was a selection served to the table: salmon, scallops, chicken, beef, mushroom and green peppers. They were fine. Desserts were also served to the table and I think that was the weakest link but we were full by then anyway. The buffet came with ice tea included at $548+10%. Another $140 will get you free flow alcohol including Ruinart champagne which is of excellent value.

All in all, a great brunch option. As good as Armani Aqua, also in Central!

Went to Zuma for my husband's birthday. We started with whisky sour and absolutely loved it. They serve it rather beautifully too (the huge round piece of ice is amusing). For the food, we had some sushi and salmon rolls. One of us being a vegetarian, we ordered the Veg sushi plate (with 9 pieces) and loved it. The crispy avocado cheese rolls were brilliant, they had this spicy sauce in between. Obnoxious restaurant manager with a chip on her shoulder refused to seat us in the main restaurant despite promising us this if it rained when we booked a table on their balcony for Father's Day. When we escalated and contacted their 'Operations Director ', he was defensive and unable to address (other than scripted talk). And for what it's worth, have eaten here and the food is no better than any other standard Japanese dining option in HK - even Sen-ryo is better and Nobu ofcourse is an entire

This restaurant is spacious with high ceiling. Food quality is exceptional and service is good. We ordered tempura and some sushi.They are extremely fresh. And each sushi melts in our mouths. We all agree that these are the best sushi we have had.  The tempura is well prepared with fresh shrimps. 是日天空有點厚雲,不過算是風和日麗,清爽天氣更適合戶外進餐,相較週末下雨天,我們真是不知那𥚃來的運氣喔.

相信是閒日關係,出席者不多,工作人員相對很充足,塲地亦更見寛敞舒服.今年有十五間知名食府參與,我未能悉數試盡,淺嚐了半數餐廳,各有特色的美食初階版.

以下説詞可能有點不公,只是純粹個人當下感受,在云云美食當中,最令我印象深刻而想跟大家分享的是Zuma.無錯,是來自英國的過江龍,進註Landmark十年之久,走moderne chic日菜,網上毀譽參本的Zuma.

先說手卷,紫菜先後鋪上日本醋米飯,牛油果,辣醬,脆米花,綠豆芽,柚子珍珠,然後包裹成形,再於頂端添上軟芝士;造型不單亮麗,每咬一口,品味到各種滋味層層叠叠的拼奏一起,脆軟乾潤,酸甜香辣咸,構成一幅味覺藝術圖像.其中尤以份子法將柚子精華造成淡黃色珍珠狀態,菓膠包裹微酸汁液在口腔中爆裂,香氣四溢,配合米飯點子很好是蔪新嘗試,近年市面已有林林種種不同顏色和味道的製成品,果汁成份可達70%之多,方便大家增色添香.

盛產於日本海的松葉蟹Zuwaigani(snow/queen crab)是冬季美食,每年十一月至一月下旬是當造不過也是禁捕,以防母蟹過渡消耗;而碩大的皇帝蟹(Alsakan King crab)由十月至一月為捕漁期.Zuma這個季節料理採用兩種時令材料,伴入冷麵,甘橘油醋和辣椒絲,放於蟹蓋上飾以食用花,再配上小匙魚子醬,食材運用配搭盡顯心理,而構圖擺碟毫不馬虎.松葉蟹清甜皇帝蟹肥美,小小蟹蓋滿載海洋奇珍味道,品嚐間味蕾彷彿茌跳躍,踏着節奏如Zumba!

Zuma行政總廚Sam Wilkes在Tatler Table分享創作意念和工作心得,其中説到"customers,taste & quality"至為重要!大家乍聽下也許覺得他講完好像沒講,任何從事飲食業的廚子都會這樣想吧,至少在起初的時候.香港Zuma看似花了頗長時間才悟出這三個字來,畢竟是正面,如此受到重視,是一衆食客之福,

一個下午,嚐遍佳餚美釀,醉人心脾的live music,舒服閒適的bean bed.熱情好客的工作人員..忽然間有點觸動,超現實的幻海奇情..這𥚃是香港嗎?Taste of Hong Kong可否不是一年一次,而是生活每天都是Taste of Hong Kong或者Tate of Hong kong...!

過年食餐好d~行過landmark諗起zuma d野食唔錯,咁啱walk in有位。好好彩~叫左個sushi and sashimi拼盤,好新鮮,賣相一流!刺身拼盤有幾種唔同嘅魚,我都分唔到邊隻打邊隻, 有隻係連埋皮的,但食落竟然唔腥~肉質幾鮮美~但係服務就普普通通,可能過年多人,waiter waitress都好似好忙咁,叫人都要叫幾次先應。呢個價錢,我expect服務可以好d.最後叫多左個龍蝦沙律同個非常fusion的豆腐,龍蝦超好味。個豆腐好特別,creamy, 同埋有3碟配料俾你撈,好似豆腐花咁~
