Despite whatever the shop may claim, it is definitely not a authentic New York Pizzeria. It may cheat the locals but definitely not someone that has tried authentic New York Pizza in New York. (1) Dried, flavorless, and doesn't seem like it was fermented right. Seems like dough made by some culinary student for the first time. New York pizza is special by the way it is fermented. A lot of Hong Kongers don't understand the difference between New York Pizza and European Pizza. Pizza in Europe does not require the dough to be fermented which ends up giving you a crispy thin dough. Where as New York Pizza requires fermentation giving you a crispy but yet chewy texture. The fermentation process is similar to a sour dough or french bread process.
2) The sauce. The sauce is the probably one of the most important elements in pizza. Some people think it's cheese but it's not (well at least with New York Pizza. Trust me, with good New York Pizza, the sauce is definitely not just tomato paste out of a can or crushed tomato with oregano. There is definitely more to it than that. Every unique pizza place has it's own recipe and that makes it distinct from others.
For $35 dollars a slice, it better live up to it's name and at the moment, it's not New York Pizza.
