4Oct2007 2000用同一部相機及配件,上3次都唔知點解成日映到曚渣渣,今次總體黎講狀態回勇。黎足4次,基本上沒有嚴重失誤,唯一分別係越來越旺場及師傅增添了幾分成熟。之前食過3次,寫過2篇食評,基本上呢篇我再唔會寫,唯一要寫的是圖文並茂,再加上沒有上境的菜乾煲雞腳湯,已經可以表達到當晚食得有幾多。上篇食評講過下次午飯先會來,睇黎要加上落大雨,咁人流就一定冇咁多。

因為睇食評寫到咁好咁,又好想食鴨舌wor,所以老遠過到黎入到黎就聽到有兩個阿姐,彈的客無禮貌,不過我覺得佢地態度都有問題wor,幾hill張咁。一睇個餐牌,哇~~一碟魯鵝飯,賣$48蚊 (咁貴係邊度搵?超好味既陳勤記魯鵝飯,都只係賣$25一碟)一心黎到食鴨舌,貴的都要食ka啦 (叫左個阿鴻鴨舌,只係麻辣lor~食過一次,唔會心思思想再黎)另外叫左個x酒鴨舌 ($40, 12隻,好似食雞腳咁lor~有好勁酒味)仲有個蔡蘭撈麵 ($35, 無送ka wor,又話個湯底係用上湯..乜鬼金華火腿整,水流流,洗過碗的水都有味過佢,麵質亦好一般)食完之後,好有art鬼食豆腐既應覺。

6-8-08 (三)整天都八號風球,轉回三號風球,又沒有雨了,就出外找阿鴻叔叔去。蔡瀾撈麵:第一次吃,其實沒有什麼特別,最出色的是火腿茸上湯,非常美味。平時吃撈麵從不寄望的上湯,原來可以如此認真製作的。鹵水鵝飯:保持一貫的水準,鵝片如果再入味些就更好。期間外賣的客人絡繹不絕,頗多捧場客呢。

整天都八號風球,轉回三號風球,又沒有雨了,就出外找阿鴻叔叔去。
蔡瀾撈麵:第一次吃,其實沒有什麼特別,最出色的是火腿茸上湯,非常美味。平時吃撈麵從不寄望的上湯,原來可以如此認真製作的。

2008年7月6日下午12:30難得星期六可以嘆lunch, 一諗就諗起佢, 因為佢有好多好食評. 依大家推介:1) 芥未雞腳根 – 好好食, 又香又滑, 推介!2) 鵝片拼xx – 唔記得拼物鬼, 總之成碟d嘢一樣味, 所以我地都無諗住叫第二d嘢試, 心諗又係一個味.當日, 有個紅衫啊姐, 發同事脾氣, 係! 唔關我事 … 但係佢大大力”dup”我地d筷子匙更呢! 之後多粗聲粗氣黑口黑面幫我地落單, 比錢時我地已經同老細反映啦!無下次! 又無咩特別, 又要受氣!

再一次補習後,一行4人來阿鴻食飯....說真的,主因是回想起台灣的鴨舌,太太太懷念....看能否止住想念.....叫了鴨舌,芥末雞腳根及鵝片撈面,還有個什麼面一上就是鴨舌,就是不知道欠了些什麼,可能本人是嗜辣,欠的就是一點點辛辣的feel......芥末雞腳根卻是不錯的,我愛脆脆的東西,鵝片撈面,就普通,但朋友超愛的,還有個什麼面,很油,是個湯面來的....不過他旁邊是有一個什麼菜,不知道是什麼...但真係好好食....是我一餐中最好的.....大家可以一試,,,,PS:我有一個朋友是不能食辣的,但他也可以接受鴨舌,所以是不辣的...去台灣食過老天X,又係叫辣的,是會覺得欠了些東西~~~

PS:我有一個朋友是不能食辣的,
但他也可以接受鴨舌,所以是不辣的...
去台灣食過老天X,又係叫辣的,
是會覺得欠了些東西~~~

A local food columnist wrote in his recent piece about a place for local ChiuChow fare. Authenticity was nowhere to be found in the article, but praises and compliments were all over the place. With a genuine tone in the writing we decided that it may be worth the try. For several days before the visit we think of all the things we can do to prepare for the meal, which is also a celebration to my father's birthday, we did the research -- summarizing all reviews (good and bad) and a greenlight from dad, we thought, the meal is going to be amazing. A casual call for reservation and in return we were turned away because "we're fully booked 2 weeks ago", and so we took a chance to walk-in without a reservation. At the entrance of "Hung's Delicacies" we realized how difficult it must be to make a reservation: the entrance is small and there were only 6 tables seating less than 30. No wonder they were fully booked. The owner turned us down when my mother insisted that we can have our dinner and they can have the table by 6:30pm. We had 1 hour to finish the ideal celebration. Feeling delighted that we were seated, we began to browse the menu in a merry mood, only to realize later that we could've felt otherwise.

The menu was short and did not leave us many choices. Dishes named in the column were exactly the plates we ordered, except the chicken due to the recent findings on Avian Flu (yet again). No go for the chicken but Mustard Chicken Tendons ($35) were amazingly on the menu. The mustard flavor is potent and tendons are crunchy with a soft meaty aftertaste. A surprising concoction of sesame paste and mustard gives an otherwise less-flavored meat a strong impression to our meal. We ordered ChiuChow Platter 1 ($75) made up of Sliced Goose, Pig's Intestines and Pork Belly, all sliced neatly and arranged on a plate lined with Tofu. While the marinade was strong on aromatics like the traditional Star Anise, Cassia Bark and Soy Sauce, we could barely taste it in the tofu. Pig Intestines were tender with a light crunch while goose and pork belly were cooked until tender, perhaps so tender that we could've sworn it's a chewy piece of jelly more than pork belly. The gelatinous texture is putting us off into thinking it could be anything but pork. We weren't satisfied, but would be willing to give it another chance.

A second trial on yet another the Platter 2 ($75) with combinations of Cuttlefish, Goose Kidneys and riblets. The Cuttlefish and kidneys suffered from the previous platter's mistakes. In fact the cuttlefish doesn't even taste like cuttlefish except an occasionally chewiness resembling the seafood item with tentacles. Kidneys were sliced thin, so thin but flavorless that you could've told me it is ox tongue or pig pancreas and I'll believe you. Riblets were honey-sweet and bear a flavor unlike the rest of the platter food. It's been slow cooked to tenderness on its own. Marinated Duck Tongues in Wine ($40) comes in a plate of neatly arranged tongues. The wine flavour did not penetrate into the tongues but the tongues are of the right texture.

Vegetables in sweet fermented tofu sauce, a staple dish in this joint, was a disappointment. A huge one, in fact. The napa cabbage slices are not cooked through while red jujubes were turned to mush. Flavours were too sweet on one bite and too salty on the next. A sloppy presentation was out of expectation here. And let's me frank about this, if you would've made this from scratch at home, you could've made it better too. We rounded off our adventure with a tossed noodle ($40), which was ok, because it did not feature anything strong flavored and we could taste the noodles and the accompanying broth.

While too busy tackling the difficult dishes and wondered why so many have raved about this little joint of delicacies, we looked up and saw what we did not expect to see -- photos of the owner and local celebrities and writeups about how wonderful food here has been. I wondered if the celebs have made a decent meal themselves, a homely meal they spent time and lots of love making for themselves and others. A meal that didn't have to feature expensive ingredients or complex recipes, indeed can be the best kind of reward you get. I disappointedly thinking on my way home that Hung's Delicacies was more than the reputation and rave it has gotten over the years. Maybe they once flourished with the best tasting ChiuChow platter in the whole district, maybe their chicken championed other big names alike. But as I walked in a rather full belly but dissatisfaction, I felt somewhat cheated, and over and over again thinking about all the people who have been turned down for a table by the owner while we were eating there. I wish I could've been the one turned away as well.

3-6-08 (二)以前來過午飯,今次來覺得環境比以前更整潔企理,當然,牆上的剪報陣容更強盛了,張貼得井井有條,又整齊又清潔。要了鹵水鵝片飯和滋味雞拼五香牛展飯。鵝片排了兩行,一貫的好吃,加上少少鹵水汁,大碗飯都 “冇有怕”。滋味雞很滑嫩滋味,只是肉比較少,不及鵝片 “啖啖肉”,要提一提五香牛展,好像很普通,那裏都吃到,但這裏的牛展就是勝一籌,非常入味,好吃。步出店鋪時,近門口的廚師也和我們說多謝。我想多謝一聲呢,多謝貴店在盛名之下,仍保持對客人和食物的熱誠,最難能可貴啊。

鹵水鵝片--鵝片肥油少,比起一般潮州食店做得更嫩滑,而底下的滷水豆腐濕潤嫩滑,可惜鹵水醃得不夠入味
蒜香雞--蒜蓉味濃且新鮮嫩滑之如帶有雞味,
老火湯---南北杏菜乾湯味道清
醉鴿-花雕酒味香濃,鴿肉夠嫩滑之如還充滿肉汁,另外特別有幾片鵝肉用刀切成了花邊更份外嫩滑
(滷水雙拼)豬頸肉拼豬大腸- 切得薄薄的豬頸肉肉嫩爽滑,有嚼勁。豬大腸看似肥膩,實情是師傅已經將豬腸去肥,吃過後又倒沒有肥膩感,但雙拼鹵水汁稀仍是醃得不夠入味
凍立魚---在這裡吃魚只有凍食,雖然如此,難得凍食竟然沒有腥的感覺,立魚有鮮味並且散發一股麻油香,加上薑蔥同吃,味道不錯。可惜的是吃到最後,魚肉仍未熟透,黏住魚骨之如亦帶點血,請看圖一
潮州粥---我沒有吃所以不知道
金蒜腿蓉娃娃菜---娃娃菜爽口香甜,面頭灑上了炒香過的腿蓉、蒜、蝦乾亦頗稔
遺憾的是埋單後當家父家母行出門外,望向左方玻璃窗時,家父突然問我為何不吃鴨下巴呢?這刻才知道 家父原來是愛吃鴨下巴的,其實當天很想嚐一味叫醉酒珍肝的餸菜,可惜已售清,唯有等待下次。本來想要山葵凍飲,見今回叫的餸菜全都是不辣的,也一樣! 唯有等待下次吧! 我太多太多東西想吃,可惜實在太飽吃不下了。
吃過阿鴻小吃後,要說我最欣賞的地方是此店在處理各種畜肉及內臟很有他們的一套法寶,老板非常注重肉質的處理,在此處,你不會吃到韌的東西,五個人埋單也11味餸菜計飲料只不過大約$650,相當超值。

I had already had lunch that day, but accidently walked past this place which I was going to try someday.Anyway I went in, and tried the "lo Shui" tofu, something light that I could eat, wanted to try the mustard chicken feet too, but was too full.The tofu was drenched in lots of sauce, and the tofu was quite well soaked up with the sauce, so the tofu did have some lo shui flavour in it.In places where they are not done properly, you can taste a strong tofu aftertaste and not much of the sauce.

男朋友仔知我鍾意食鴨舌介紹左我黎呢間阿鴻小吃因為近來QUIT左好FREE所以手多多上左OR睇完食評後忍唔住唔等男朋友仔就同左個FD黎啦叫左阿鴻鴨舌,涼拌黃瓜,芥末雞腳筋,滷水豆腐...外加醉香鴨舌同海哲拼麻香腳筋俾男朋友外賣因為我同我FD都幾食得辣,所以我地一致都覺得佢既麻同辣再多D就更好...因為食落好似有D到喉唔到肺涼拌黃瓜個汁都幾OK,因為小妹超愛芥末所以芥末腳筋係我最BUY既~不過我FD就話如果D芥末既TASTE係同肥媽果D一樣就更PERFECT....外賣俾男朋友果D醉香鴨舌因為太香酒味....所以都忍唔住食左幾條食完覺得香味係比味道膀一籌既.....總括黎講都尚算幾好既~都值得一試

最近好似多左野食, 我地3/4晚幫襯, 約八時全場爆滿, 我地坐最入果張檯, 都幾迫, 伙記阿姐攝來攝去擰野斟茶. 好耐以前有墨魚餅, 而家又有返, 不過咬落去係lum的, 不用o趙已經可以吞, 我以為好似以前咁會好多墨魚肉有咬口添.另外叫左麻香雞腳跟, 無骨鴨舌, 齋, 兩碗例湯, 一碗鵝片蒜香雞飯, etc...果個紮馬尾o既阿姐本身已經黑口黑面, 佢張單寫左個鵝片蒜香雞雙併98蚊, 我地糾正佢係飯, 佢竟然:"妖, 頭先又唔講?!" 我地O晒咀, 從來冇諗過服務性行業會咁講野, 我地明明有講, 就算佢聽唔清楚而以為我地講錯, 都唔係咁O既態度呀, 於是我地話頭先講左O家喎! 而且佢又唔覆單...之後發覺叫第一碗例湯時跟飯係會平D, 佢都冇幫我地改埋湯價, 要叫第二碗時就改左啦. 最慘係LI個阿姐見到鴻哥熟果D食客或者見到鴻哥本人先好招呼好笑容, 大佬我地一個月最少都幫襯一次O家!LI個阿姐係長頭髮化妝隻眼冇禁大果個, 希望老闆睇到會話下佢啦....另外見到佢個芥末仙掌好似好貴, 成六十蚊...加左價.服務一分係比果位姐姐o既, 其他伙記加老闆娘當然滿分啦.

因為見食評好多人都話ok, 所以同男朋友專誠放工過黎試下, 我地果日叫左芥末雞腳筋併海蜇, 麻辣鴨下巴, 滷水鵝翼併鵝掌本來想叫無骨酒香鴨舌, 但係無喎, 原本想叫一隻鵝翼同一隻鵝掌試下味, 佢話堂食只可以叫例牌喎, 例牌要成六十幾蚊的, 外賣價係每樣十七蚊囉鴨下巴其實真係好一般, 又吾夠辣, 麻麻地芥末雞腳筋併海蜇,d 芥末味吾夠, 但係口感不錯的, 但似乎只有一個爽字囉鵝翼併鵝掌, 真係吾錯, 其實佢d 滷味野有別於一般潮式滷味, 佢又有d 混合左泰式滷味既原素, 因為佢有加到一d 香芧落去, 類似泰式滷味甘, d 掌翼好入味, 真係吾錯但係埋單要成百三蚊囉, 其實小食黎講, 真係幾貴, 我同我男朋友都覺得食完之後, 都吾覺食左野, 好似陣風甘囉我諗我試過之後, 都吾會再去了, 或者會外賣佢地既滷水鵝啦, 因為我果日都見有吾少日買佢地既滷味Anyway其實呢間野試下都無妨既

芥末雞腳筋併海蜇,d 芥末味吾夠, 但係口感不錯的, 但似乎只有一個爽字囉
鵝翼併鵝掌, 真係吾錯, 其實佢d 滷味野有別於一般潮式滷味, 佢又有d 混合左泰式滷味既原素, 因為佢有加到一d 香芧落去, 類似泰式滷味甘, d 掌翼好入味, 真係吾錯

但係埋單要成百三蚊囉, 其實小食黎講, 真係幾貴, 我同我男朋友都覺得食完之後, 都吾覺食左野, 好似陣風甘囉

我諗我試過之後, 都吾會再去了, 或者會外賣佢地既滷水鵝啦, 因為我果日都見有吾少日買佢地既滷味

Anyway其實呢間野試下都無妨既

某日同一大眾食友去到北角搵食,去到呢家街知巷聞小店. 雖然大部份都係滷水小食,不過食食都幾飽!麻辣鴨舌- 小店招牌菜,經常賣清. 不過我略嫌唔夠麻辣,但已經算十分入味,唔錯!!滷水豬- 夠哂入味,豬亦好腍!滷水鵝片- 鵝片嫩滑,唔錯.芥辣雞腳筋- 呢個係我最愛. 少少芥辣味,又有咬口,好正呀!素鵝- 呢個都唔錯,味道帶甜,份量又夠多得黎係素食,食都唔怕肥,哈哈!滷水豬腸- 豬腸就真係肥喇,不過肥膏好甘香,正!豬耳拼海哲- 佐酒小食,豬耳又夠爽脆,唔錯.滷水墨魚- 墨魚入味又軟熟,容易咬開,唔似一般潮州店滷得太耐好!薯絲炸蝦- 店員推介. 見有五隻剛好每人一隻就試試. 其實唔係太特別好食,只不過唔係滷水食物而已!!麻辣鴨下巴- 我又鍾意呢個,因為我鍾意食骨頭,咬咬幾得意!!!南乳粗齋- 食友介紹,好味又份量多!! 媽咪一定會最鍾意呢味!蔡欄撈麵- 有蔥絲同豬油撈麵,由蔡san起名,好唔好食就見仁見智啦! 我本身對豬油冇特別愛好,所以對呢味撈麵亦冇特別好感!

豬耳拼海哲- 佐酒小食,豬耳又夠爽脆,唔錯.

滷水墨魚- 墨魚入味又軟熟,容易咬開,唔似一般潮州店滷得太耐好!

薯絲炸蝦- 店員推介. 見有五隻剛好每人一隻就試試. 其實唔係太特別好食,只不過唔係滷水食物而已!!

麻辣鴨下巴- 我又鍾意呢個,因為我鍾意食骨頭,咬咬幾得意!!!

南乳粗齋- 食友介紹,好味又份量多!! 媽咪一定會最鍾意呢味!

蔡欄撈麵- 有蔥絲同豬油撈麵,由蔡san起名,好唔好食就見仁見智啦! 我本身對豬油冇特別愛好,所以對呢味撈麵亦冇特別好感!

从一开张就来吃了,水準一直保持,难得。费工夫的小吃如鸡脚筋,味道一直如一,也不贵。鸭舌因为新鲜,也较为爽口。我最喜爱的是卤水排骨饭,非常入味。小如免费的凉菜和辣椒油,也可以看出他佷有心机去做,每次都吃不停口。还好,没有因为加租而关门,希望它可以继续做下去。

上星期在阿鴻小吃買了一隻鹵水鵝回家做,很好食味道也很好.所以今晚只得倆老食飯,時間尚早就去了阿鴻小吃,果然有位,但兩人位很少空間,因為想試其他的食物便叫了一客排骨湯麵,一碗鹵水鵝雞飯和是日例湯,例湯最好味道很濃,但排骨很差,雞也一般,價錢不值,我覺得只有鹵水鵝是最好的.
