How coincidental that I had to visit this area for work when I wanted to try 劉森記 again after a few years of absence. From memory, 劉森記麵家's specialties are its 兵乓 sized and slightly 'rough' Wontons and Dumplings.Ordered this time in the 分店, 雲吞蝦籽撈麵:雲吞 - As remembered, very good indeed and super big sized Prawns seemed a bit unnatural in taste and texture, but still good, bit of pork and lard. Ordered this time in the 分店, 雲吞蝦籽撈麵:
雲吞 - As remembered, very good indeed and super big sized Prawns seemed a bit unnatural in taste and texture, but still good, bit of pork and lard. There's also 蝦籽 within the wonton, which gave it that extra dimension. The Wonton Skin was a bit over-cooked though - its the reason why 'sometimes' I also prefer the smaller dumplings with 金魚尾 - as less fillings means less cooking time, and it won't affect the pasta skins texture.
Generally very good taste, but quite different to most other shop's offerings.
蝦籽撈麵 - Wasn't that happy with this part. 蝦籽 as everyone has said, wasn't too strong or aromatic in taste. 麵, despite made from duck eggs, didn't have much noodles taste either, the texture was probably a bit too 'crunchy' for 撈麵. May be it'll fare better as soup noodle.
Soup - Very different to other shop's as well, not traditional. Came with not only Chives, but some Spring Onions. It had very little taste of 大地魚 or prawn roes or prawn shells, it was actually quite boring. Slight sweetness here in the background, kind of like 楊記's Noodle's soup, perhaps there's a touch of Lau Hon Gwo influence. The soup didn't have much character, it was trying to do too much all at once. Overall, the wontons were also trying to do too much at once - big size, lots of prawns and pork/pork lard, prawn roes, etc.
I absolutely enjoyed the Wontons though, just as I remembered it from the past... But these days, you can get frozen 蝦籽雲吞 from supermarket too, haha!
The other bits and pieces like noodles and soup? There's definitely 誠意 but the 味道 is ok la....
