 Green bean does not have iced texture. used cirtus vinegar and green bean mousse as the dressing. Mixed it well together and i treated it as salad.
$128 clams with leek red chill - clams was purchase from market everyday in order to maintain the freshness.
daily fresh clams enhanced the soup after taste. added japan sake and miso made the soup taste sweet.

 for hot dish the plate is heated before serving and it could keep the food temperature. the main course - Roast Pork chop with Apple Puree and Artichoke. slow cook keep the pork chop moist and soft. Grilled it before serving and a smoky smell came out.the pork was seasoning by cinnamon, sea salt and Aniseed . better spread the Apple Puree on it as the pork was too salty if eating without the source. the Apple Puree saved it and balanced the taste.

 Monotone is boredom, color enlighten our life. this apply to dessert as well.

 Blackberry mousse is smooth and contain layer the of sponge cake. mixed berry. Decorated by crunchy green tea egg white stick . Dried pinapple slice is colored beetroot red, it bring out a chewy texture and rolled it to a rose. passion fruit ice-cream is a good idea to balance sour taste of various berries . strong passion fruit favor came out to my month and melted slowly.
Presentation of the dishes are colorful and fancy. every dish is a wonderful painting and draw our attention. Enjoy the dish by our eyes and tongue.
