This is one of the most disappointing ramen joints that I've tried. I love ramen and I love to give new things a try, but my first impression will be the last because I won't be coming back.I ordered the Chef's Choice ($98 + $10 for added egg) which I thought would be a good representation of the standard here as it contained all the key components that this restaurant serves. The noodles are al dente, with a slight chewiness that is typical for this type of straight ramen. The soup is strong with katsuo and you can taste the soy come through the tonkotsu broth. There is a slight gelatinous quality to the soup which allows it to cling to the noodle. The slow cooked pork shoulder loin and aburi pork belly were unremarkable, and sat, cold, on the hot ramen noodles. It was nicely plated up, but sadly, it came in a tiny serving.
I know that it is practice at some fancy Japanese restaurants for the chef to observe the customer and serve them a tailored portion (I'm talking at real high-end sushi restaurants) but I don't think this was the case today. By no means am I a huge person, but this serving was so tiny that I slurped up all the noodles in 3 bites. I was left so hungry and unsatisfied that I had to drink the soup, and was already scrolling open rice for afternoon tea ideas for later today because I was, for sure, going to be hungry again in an hour.
Sorry, but even though the ramen is not bad, it was not enough to offset the tiny serving. I am just not satisfied and that is instant fail for me.
