I enjoyed my last Hyatt meal at Sha Tin 18. I enjoyed my last Hyatt meal at Sha Tin 18. The whole dining experience is good overlooking the Saddle Hill with simple yet elegant celadon tableware and good Chinese food.
I was personally disappointed that the Steamed Shrimp Dumpling with Bamboo Shoot (傳統筍尖蝦餃皇) had no bamboo shoot because I really wanted to have this done in the most traditional style as the menu described but for other dishes we ordered, they were more than good.
It was great that when we reserved table, they asked us if we need to reserve their famous Traditional Peking Duck (傳統北京烤填鴨) because we really wanted to try it. For us three, half a duck is enough for lunch.
There are three courses but we opted for two. For the first course, we are definitely impressed by their 3-way tasting menu. The first way is the thinly sliced crispy skin sprinkled with sugar, then the breast meat with celery and leek wrap with sweet soybean sauce, and finally leg meat with skin dipped with garlic sauce. It's really tasty and the last with garlic sauce is effective in dispelling the greasy taste.

We are glad that we had this second course Iceberg Lettuce Wrap with Wok-fried Minced Duck and Beansprouts. That's what Cantonese like to say it has "good wok air" (好有鑊氣) which I say very yummy with hot stuffing and cold lettuce.

We skipped the third choice which is Duck Soup with Chinese Cabbage and Beancurd. (紹菜豆腐鴨骨湯).
And we tried the Donguan Specialties, Pan-fried cow’s milk custard and crispy toast (東莞精選 --大良牛乳煎窩貼) which has an interesting sweet and salty taste with glucose for dipping.

Finally the Chinese wine (Wulingye) chocolate ice cream (自製五糧液朱古力冰淇淋 ) ended my lunch on a high note.

All in all, I like the service and I can overlook the Shrimp Dumping misnomer. It is curious though, the item is billed as 綠茵蝦餃 when I didn't see any green either. It's more like shrimp paste.
