I enjoyed my last Hyatt meal at Sha Tin 18. I was personally disappointed that the Steamed Shrimp Dumpling with Bamboo Shoot (傳統筍尖蝦餃皇) had no bamboo shoot because I really wanted to have this done in the most traditional style as the menu described but for other dishes we ordered, they were more than good.
It was great that when we reserved table, they asked us if we need to reserve their famous Traditional Peking Duck (傳統北京烤填鴨) because we really wanted to try it. For us three, half a duck is enough for lunch.
There are three courses but we opted for two. For the first course, we are definitely impressed by their 3-way tasting menu. The first way is the thinly sliced crispy skin sprinkled with sugar, then the breast meat with celery and leek wrap with sweet soybean sauce, and finally leg meat with skin dipped with garlic sauce. It's really tasty and the last with garlic sauce is effective in dispelling the greasy taste.
