Madai and ShimaAji are both my favourite
It’s cut to the point
allowing the fat and oil to release in your mouth
It’s treated at minimal so you can taste the most original flavours
-Surf clams
Where you can enjoy the more crunchy body and the more creamy tail cut
Charcoal salt is provided to elevate the flavours
If you want something stronger
You can dip into the normal sashimi soy sauce as well
-aburi fish platter
Starting from the lighter Hairtail
It’s slightly torched to give you a more refreshing texture
Fish roe are sprinkled on top to give you an extra layer
Cod is also half torched to contain the fatness
It’s relatively lighter than those you can have elsewhere
For the heaviest taiwanippon
Lemon sauce is added to balance the flavours
Same as the previous two
It’s also partly raw

It’s the local hairy crab season And everyone’s craving for crab
The chef thus prepared the Japanese king crab leg in crab vinegar to satisfy your crab craving
It’s so sweet and delicate that can instantly elevate the meal

They had definitely handled the Chawanmushi with care
It’s covered in plenty of caviar and fish roe
Deep down it’s filled with scallop and crab meat
Super fulfilling !

its firm, oil-rich flesh and rich, with a slightly creamy flavor, it is a superb species of fish for seasonal Sashimi
-fish liver and sirako

The fish sperms actually tasted a bit like the pig brain
