Been eating tsukemen around HK for some time and this time, visiting AYA in Yuen Long. Arriving at 2:30pm, there are still 4-5 people waiting infront of me. After queuing at the line, one of the assistance brought a notice out saying the afternoon serving were all sold and please come back again after 6.Only waited for 15 minutes, and it's time to taste the tsukemen. I like the noodle with slight chewy and firm texture and this is perfect for me.
Although for tsukemen, I like a mix of fish-broth and meat-broth, the Aya broth has its own characteristics! This broth reminded me so much of Sapporo miso ramen!! With the addition of tonkotsu and garlic flavour, it would be a perfect Hokkaido ramen broth. The menma is also very fresh that the taste emerge with the broth very well. Fresh spring onions with a good fat-lean ratio pork blended well together. Broth was also thick enough so that noodles can soak up taste for each dip.
The whole experience just reminded me so much about Sapporo ramen and definitely worth to stop by and try.
