Last time I reviewed here I gave a Smiling Face already, but this time since I'm talking about Fresh Chicken - let's review that as a separate item!

FRESH CHICKEN & PORK NECK RICE -

As I mentioned somewhere before, in Hong Kong, there are actually MANY places which still serves fresh chicken (but none supply Fresh Hainanese Chicken AFAIK), this shop is one of them despite being more famous for other Lo Sui items. 鴻哥 was really friendly as usual, unlike the other staff, and explained that his chickens are either sourced from Mainland China or locally at Yuen Long, but mostly the former due to consistent supply problems.

My Chicken in this case was a fresh chicken 滋味雞 version. Unfortunately, the chicken was overcooked. I say this with certainty for once, because both the Chicken Wing as well as Chicken Breast part I received was very 鞋 and dry, lacking juice moisture too, rather than tough 韌, which is usually more related to Rigor Mortis problems when it comes to fresh poultry but Chinese people hardly care about it because we don't have a precision, researched-oriented Food Science mentally when it comes to Chinese food even when most overseas Chefs, Scientists and even Ranch Owners already know its inherited problems.

The Chicken also didn't had a lot of chickeny or fat taste either, not sure if its due to poor cooking technique or from the Chicken itself - it certainly tasted weaker than even some 冰鮮雞 I've had elsewhere before.

The Pork Neck marinated in 鹵水 in comparison, was much better and melts in the mouth.

FOR A RECENTLY CROWNED MICHELIN 1 STAR SHOP, AND DESPITE USING THE MORE EXPENSIVE FRESH CHICKENS, HERE IS A FINE EXAMPLE OF HOW WHEN ITS NOT DONE RIGHT, ITS NOT DONE RIGHT AND FULLSTOP. 新鮮雞都無乜用, 最緊要煮得好先, 才是 BOTTLENECK IN THIS INSTANCE.
