在上環新開的,就是熊拉麵的第二家分店。雖然我還沒有去過日本亦未嘗試過在香港的所有拉麵店。但作為一個“麵人”,我想看看這裡的拉麵有何不同。湯的味道介乎一風堂與豚王之間,味噌或醬油為稍微重一些。湯頭非常濃郁,你可以吃到一半看到它表面會形成薄膜,必定是魚和豬肉中的膠質。麵條很彈牙,雞蛋是完美的香甜流心。豚王雞蛋一直是我的最愛,但現在有一個競爭者了。叉燒亦很好好,有著淡淡的豬肉甜味;那一小滴蒜蓉辣椒亦令味道昇華。我又很欣賞他們選擇的碗,有助湯汁保持熱度。沒有人喜歡冷而油膩的湯拉麵吧。店內地方當然乾淨又新。店員非常友善,有禮貌又設想周到,無論客人感到凍或覺得雞蛋太生,都回盡量滿足他們的要求。Another new place opened up in Sheung Wan, it is the second store of Kuma Ramen. The soup taste in between Butao Ramen and Ippudo, with a stronger hint of miso or soy sauce. It's very rich and you could see it'd form a layer of skin mid way through while you're eating. It must be the gelatin from the fish and pork. The noodles are nicely al dente and the egg is perfectly runny and sweet. The eggs in Butao Ramen used to be my favourite, but it has a competitor now. The pork was good with a hint of sweetness; the little drop chili garlic paste enhanced the flavours as well. I like their choice of bowls which helped the soup to stay very warm until the end, as no one likes cold oily sticky ramen soup.
The place is clean and new of course. The staff is very friendly polite and thoughtful as well, they would accommodate their needs whether they are feeling too cold or think the egg was too runny.
