作為食肉獸，我一向喜歡高品質牛肉，但一講到和牛，我有時會覺得自己缺乏真正欣賞它的能力，不像 New York Stripe 或 Dry-Aged Beef 可以真正品嚐到牛肉的味道。

在座銀發現了一碗限定拉麵，想試試半火炙的A5和牛會是什麼味道。很幸運能夠與廚師交談並了解牛肉的處理方法。確實是長知識了。除了廚師對和牛用上古老的日式處理方法令我嘆為觀止之外。原來享受一塊好的和牛時，不應該將焦點放在牛肉的味道上，而是放在像雪花般的油脂，慢慢融化的口感，以及微妙的甘甜。我還可以品嚐和牛火炙過的香味，味道形成鮮明的對比。輕輕將它浸入牛骨湯裡，更為A5和牛添加一些鹹味和溫度,增强味覺感受。

座銀以雞白湯拉麵而聞名，有清澈的牛骨肉湯和牛拉麵作為新選擇令人耳目一新。但我會認為雞白湯拉麵仍然是我的最愛，因為鮮味是無與倫比的。

Limited Edition Kagoshima A5 Wagyu Beef Ramen
Highly respected piece of beef

As a meat lover I’ve always loved good quality beef, but when it comes to wagyu, I sometimes find myself lack the ability to really appreciate it, unlike New York Stripe or Dry-Aged Beef which I can truly taste the flavour of the beef.

I came across this bowl of limited edition ramen in Zagin, and thought maybe I should give it a try and see how it’d taste in Tataki style. I was lucky enough to talk to the chefs and learned how the beef was handled. I must say I’ve learned something new. Besides the old school Japanese style Tataki treatment that the chefs give to the beef that blown my mind. Seems when enjoying a piece of good wagyu beef, it’s not the taste of the beef that I should focus on, but the snow flake like distribution of fat that gives you the melt in your mouth sensation, and the subtle sweetness that comes through that people should focus on. I could also taste the flavour from the seared sides of the beef which gives a great contrast. Lightly dip it into the beef broth add some saltiness and warmth to the A5 Wagyu as well.

Zagin’s famous for their creamy chicken soup, so it’s refreshing to have a clear broth ramen in the menu as a new option. But I’d say the chicken soup ramen is still my favourite as the umami taste is unbeatable.
