I’m more impressed by the Hanwoo, which is now the most expensive meat in the world.
It’s a very special breed because it takes a long time to get quality cattle (15 to 30 years) with consistent marbling, flavour and good structure. It’s more chewy and meaty than the wagyu, which gave me a more layered texture and thorough sensation .
