Only negative bit about eating at Ichiran is the wait time, which typically spans from 20 minutes to up to an hour. I've been to a few Ichiran joints in Japan and similar to those joints, the branches in Hong Kong have the digital display panels, shelves of ramen and broth products, and rows of individually partitioned counter seats. Once you sit down, you will see that each counter has its own cold-water tap, a buzzer to summon waitstaff, ordering sheets and instruction guides in Chinese, English and Japanese.
Ichiran only serves one kind of ramen with ordering sheets available for customers to customise their own bowl of noodles. I opted for medium in broth flavor, medium richness, full clove of garlic, thick green onion, sliced pork, more on the red sauce, high on the firmess of the noodles and a half boiled salted egg.
Once your noodles are ready, the wall in front of you opens up and the noodles are delivered. The broth is extremely rich and the spices add that extra kick to the noodles. The ramen noodles were perfectly cooked, al dente. The pork was definitley tender and flavor but in my opinion, were on the thin side and could be a bit more generous. The boiled salted egg was perfect, with the runny egg yolk oozing out into the noodles.
All in all, this is the place if you're craving any kind of noodles in the middle of the night. Will definitley come again and again.
