處的前身我還記得是一間串揚店,倒閉後就換成了這間拉麵店,全由食友H提供了相片,即是起行,我都想過,反正過二天會飛往日本,為什麼會前來吃一碗拉麵?自己都答不到大家,由大埔出來尖沙咀大約45分鐘,都算是方便,大約下午四時多,店內空無一人,顯得十分冷清,換角度來說,如果是一間隠世CAFE是否愈少人去愈好呢?自動售票機這裏與本地拉麵店不同之處是有自動售票機,在日本是常見的東西,在香港變得有點特別,這裏是按下自己喜歡的食物所以投下金錢,這次我想吃和牛神拉麵入座後會有一張選項,湯底,香味油,麵的軟硬度等可以給大家去選擇除了麵要硬身外,其剩都選擇標準.一蘭感覺自己見識少沒有光顧過一蘭,不知道味道如何,用木牌隔開人,雖然有自己的私穏但欠缺了人與人之間的互相.有支筆又有添茶的按制,只是沒有什麼調味品,和牛神幾款拉麵中最貴的一款,有二片牛肉以及半熟蛋,望落有點弱不禁風,湯底帶有酸味,不像往時常接觸豬骨湯底,但又飲不出牛骨味道,牛肉倒是半生熟,咬落都不錯,麵條就是最大的問題,要求了硬身,換來的是極度軟身,學食友的話,這是錯了男人大忌,半熟蛋中規中距,不夠入味,蛋不能要求流心,檸檬汁用來清除油膩,不過剛才的拉

和牛神

幾款拉麵中最貴的一款,有二片牛肉以及半熟蛋,望落有點弱不禁風,湯底帶有酸味,不像往時常接觸豬骨湯底,但又飲不出牛骨味道,牛肉倒是半生熟,咬落都不錯,麵條就是最大的問題,要求了硬身,換來的是極度軟身,學食友的話,這是錯了男人大忌,半熟蛋中規中距,不夠入味,蛋不能要求流心,

檸檬汁

用來清除油膩,不過剛才的拉麵一點都不油膩,變得很酸呀,

皆因試業期間一切不能作準,當然我都希望她會改善,用上售票機做法很不錯,不過拉麵水準實在一般,就算是方便,但不好吃的話好難會再食一次,吃完就要往長沙灣.

倉吉拉麵 -香港做牛骨湯底的拉麵店只有兩間, 暫時只有這間又日本師傅從出名賣開 "鳥取 牛骨拉麵" 來港地開的帶一間店. 另一間牛骨拉麵開在佐敦, 但不用提也罷了.. 吃過就知係香港拉麵的味道, 完全是九唔搭八. 對不起, 不是日本人做監察的日本菜我是不會徙 Quota 的. 始終吃不下這麼多呢! . Layout is Separated into Individual Spaces -
Kind of like the famous Ichiran 一蘭 ramen in style. Quite nice ! I can finally concentrate on my ramen by myself.  男の子 Style.

Wagyu Side Dish - $24
This was kind of tiny, but it was smaller than I thought. It had a sweetish soy sauce coating, but I think it was slightly too sweet and salt would have brought out more flavours. ~ 3.5/5

和牛神 - Wagyu God Ramen $92
- They call their own Signature noodles God. Seriously WTF. Oh well, at least the egg was cooked only to medium, as expected even in Japan, that's why it's called 半熟蛋 there. 不是流心蛋或劉心悠. But by Hong Kong's 不講理 standard, they will by default be scorned upon as everyone expects this to be flowing like volcanic lava from a dormant volcanic needing to burst to relieve itself.
1st fail from the shop, since us Hong Kongers obviously know better than the Japanese as usual when it comes to Ramen. Afterall, Japanese Ramen is derived from Chinese 拉麵. But seriously it is all about mentality. Who really cares where it comes from, TASTE presides over anything else in my food world
The Wagyu Beef was too under-salted though, I needed to dish out my own Murray River Salt - it did finally extract more propery Wagyu flavour. ~ 3/5

- The Soup Broth unfortunately, ordered at normal strength, was way too weak. It had no Depth (コク) so to speak, and even if you believe in the recent fad in 淡麗 or あっさり style lighter ramens, this still seemed fairly weak.

- The noodles were more of the thicker type, but despite ordering hard, came out super soft like over-cooked 伊麵. 很不濟.

Overcooked Noodles -
I actually find this ironic on a serious note for once. You can actually order RAMEN NOODLES to be served as RAW and all floury in Japan in some shops if you request, it is well known within the ramen cycle. But here I already ordered HARD, and still they came out soft limpy and lifeless. I know it is New Openings, yee ha! They might not be able to cook up everything to perfection at the beginning stage, but at least, can't they boil a noodle cake properly and do some QC Tasting? Seriously this repetitive issue is starting to bug me. DOES ANYONE WANT TO HIRE OR PAY ME FOR QUALITY CONTROL TASTING FOR FREE, INSTEAD OF ME PAYING FOR MYSELF TO BE AN ADVENTUROUS GUINEA PIG EVERYTIME, ONLY TO COME AWAY DISAPPOINTED ON 80% OF OCCASIONS?

Lemon Juice - To Cleanse your Palate afterwards
I appreciate this lemon juice. They didn't want you to leave with a foul mouthed smell after eating ramen, but this was obviously unnecessary in the end because the soup base was rather weak, and the noodles were super limpy soft. I think they should really concentrate on the taste side of things in the mean while. This reminds me of 龍也拉麵 somehow. Over there all they have are excuses...

My warning to here and them, is that not everybody are idiots. We know exactly what we are critizing, and perhaps to your own benefits in the long run.
