After a major and valid complaint last time, its obvious Rex Caffe has risen from the ashes and tried to improve in quality. This Cappucino was done by a girl Barista who has always been pretty good from what I experienced in other cafes! Despite my photo showing otherwise, this drink striked the perfect balance between an Italian old-style foamy cappucino vs the newer-style, smoother Chiaro Cappucino. The foam was fluffy but not soapy nor too dense, and it wasn't 泡還泡, 奶還奶. It was quite impressive skills wise and not many people can make it in this style! However the espresso base in this cup was still slightly off the mark - it was obvious the Machine temperature was set a bit high for this Coffee Blend/Grind setting, as it was distinguishably burnt. 3.8/5
CAFFE LATTE -
On another day, this drink was made by another older barista lady. This was surprisingly very good, it had that special African and South-American old-world like aroma and taste. Despite the lack of 'unnecessary' Latte Art, this had quite a smooth milk and foam too. I also felt that this particular cup of caffe latte had a good Espresso base, better than the above drink. And on that day this batch of coffee tasted slightly fresher than on other days! 4.5/5
ESPRESSO -
On 2 separate occasions, I re-tried their Espresso's here, which was appalling on my 1st visit to @REX. You can't hide the truth, can you? These 2 times, it was noticeably better. This tasted quite Southern Italian in style too, despite ATT hailing from Trieste in the North-East, and it carried a distinct Robusta bean's burnt bitumen taste in the back palate. Although overall this is a good blend for Milk-based coffee and also punchily aromatic, my personal opinion is that this coffee blend is not as suitable for making Espresso's as it carried a lot of what 3rd Wave Coffee drinkers label as 'Dirty Taste' in the background, as it was very Italian with a big body but ultimately not very smooth tasting. This on its own is not a big issue as many people love this rugged edge to their Italian style espresso, but its not helped by the fact Rex Caffe's Machine settings seemed to be slightly off the mark as it was both extraction burnt as well as robusta burnt. 3/5

The reason why I posted this latest review so hastily tonight, is because of as follows:
1) I have already posted before elsewhere, especially in my Kosmos Cafe review linked below, that I think @Rex Caffe has already improved a fair bit from its beginning:

Sad indeed... I won't stupe low and frame someone that SHE works for The Cafe, despite the OUR BARISTAS comment above as it could be ambiguous. But I completely fail to understand her motivation behind, her hatred and vengeance against me otherwise either. If she really is another customer and not working for @Rex Cafe, then think about how PERHAPS, what I wrote earlier is EXACTLY WHY YOU AND YOUR SISTER IS GETTING OR MAKING A BETTER COFFEE NOWADAYS. THE PICTURES I POSTED BEFORE DO NOT LIE - ASK ANYONE WITH PROPER INTERNATIONAL-GRADE BARISTA TRAINING AND EXPERIENCE, AND THEY CAN AND WILL ALL TELL YOU THE SAME - THAT MY LAST COFFEES HERE WOULD HAVE BEEN TERRIBLE. IN CASE YOU DIDN'T KNOW, COFFEES CAN BE VISUALLY JUDGED WHEN THEY ARE BAD ENOUGH! With this sort of anguish attitude and if anyone cares to check the Page 2 and Page 3 of this cafe's reviews with so many obvious 繕稿's - WOULD YOU AS A CUSTOMER HERE, HAVE THE GUTS TO TRY AND TALK TO THE STAFF HERE AND TELL THEM WHAT YOU REALLY FEEL? SOMEHOW THIS SEEMS LIKE A DE JA VU PROBLEM IN HONG KONG, AKA DELTA CAFE (THEY ALSO IMPROVED AFTER MY LAST REVIEW! ) AND OTHERS, AS THESE SO-CALLED 'CAFES' SOMEHOW THINK THEY ARE BIGGER AND KNOW BETTER THAN THE CUSTOMER. AND WITH THE STONE FACED MANAGER IN HIS BLACK SUIT WALKING ABOUT WITHOUT EVER A SMILE? WOULD YOU, LIKE ME THEN, RATHER TAKE THE SAFEST ROUTE & AVOID CONFLICT (不想當場同佢噪! ), AND RESORT TO USING THE OPENRICE'S OPEN-PLATFORM TO VOICE HOW YOU REALLY FELT? BESIDES - MY PREVIOUS REVIEW BEING AN 'EDITOR'S CHOICE - 食評推介' AS THE ABOVE PERSON CONVENIENTLY PICKED ME ON IS IRRELEVANT. I HAD NO CHOICE OVER WHAT BECOMES AN EDITOR'S CHOICE, ITS NOT LIKE I BRIBED THE OPENRICE EDITORS AND GAVE THEM GOLD COINS DUH!

The Caffe Habitu Group's so-called Coffee Consultant, is supposed to be one of the Judges in the HK Barista's Championship, and the team of baristas here are meant to be trained by another World Barista Championship Judge overseas. She and the whole Group, should know better as to what constitues a bad quality coffee vs a mediocre vs a good one! As a Customer, it is certainly within my scope to speak with free will and express what I think as long as it is fair. I paid for my drinks for each single occurrence I visited here in case you forgot. That is why my last review here was quite negative as the quality was below International Standards and I find it very contradictory - seeing that ATT has been touted as one of the best coffees in New York, yet here in their flagship store in HK, with a so-called Barista Championship Judge over-seeing the operation, it was not even made to minimum standards - Eg. I Paid for a very under-extracted Espresso, as well as virtually no foam in my 1st Caffe Latte.
As for Ms. SCeles, may I suggest that you not to be such a Hypocrite afterall, as equally I saw you criticising your experience of MOS BURGER at the Quarry Bay outlet to be: " As an American Asian who has travelled to the states and Japan I can tell you that this burger SUCKS. Come back and write to me months later, that I cannot complain about my coffee here or rate a Cha Chaan Teng higher, even though I have Full Proof my prior experience here was less than pitiful, which I wrote fair and square, before you 'miraculously' was on the better receiving end of it when it has improved! At least when I ate at the exact same MOS BURGER OUTLET as you did in Quarry Bay, as much as I disliked the Unagi Rice Burger there I did not give a Crying Face and then cry foul and call that it SUCKS in vulgar language and Capital Letters, calling it nothing compared to the American ones... To hell with your Americanism and intolerance then: I'm not allowed to voice my dissastifaction but you are? Fair go indeed.

HOWEVER FOR SOME REASON, ITS NOT AS GOOD AS SOME OTHER CAFFE HABITU'S. PERHAPS ITS THE MACHINE SET UP PROBLEM! HENCE THE '3'!
